- Put the potatoes in a pot of cold water, add 2 tablespoons of salt and bring to a simmer over medium heat. Cook the potatoes until tender, but still firm, about 40 minutes. - Preheat an air fryer to 425 degrees F (220 degrees C) according to manufacturer's instructions. Line the basket with nonstick foil.
- Pierce the potato several times with a paring knife. Microwave on high power until very soft, 8 to 10 minutes. Turn the potato over after about 4 minutes to ensure even cooking. Remove and let cool enough to handle.

- MAKE THE ROASTED GARLIC DIP:
- Preheat the oven to 400°. Place the garlic cloves in an ovenproof dish, then pour in the olive oil and toss to coat. Spread out in a single layer and roast in the preheated oven of 25 min or until tender. Remove from the oven and let stand until cool enough to handle.

GARLIC POTATO WEDGES
This was a last-minute-what-can-I-do-with-some-potatoes recipe I threw together for a 4th of July picnic. I used Indiana Nurse's Baked Potato Wedges (#38183) as a starting point. I had no idea how they were going to turn out. However, there were no leftovers. LOL One change I'll make in the future is to add granulated garlic to the melted butter before coating the wedges. Note - "garlic granules," was inserted in place of granulated garlic/granulated garlic powder by Recipezaar in the list of ingredients. They are NOT the same thing. GRANULATED GARLIC is what to use.

- 1. Line a large baking sheet with parchment paper. This way potatoes won't stick while roasting.
- 2. Preheat oven to 450 degree's. Wash potatoes and dry them. Cut each potato in to 8 wedges. Rinse potatoes under cold water and dry them.
- 3. Combine olive oil with the Truffle olive oil. Toss potatoes in the oil,and coat well. Mix the seasoning together and sprinkle on top of oiled potatoes to coat.
- 4. place skin side down on lined pan and bake for about 40-45 minutes until nicely browned and soft. Remove from oven. Sprinkle the chopped garlic on fries and pan. Return to oven for about 5 minutes. You just want to roast the garlic a bit.Remove from oven again.
- 5. Remove from oven. Empty potatoes in to a bowl. Toss with the 2 tablespoons of White truffle oil. Sprinkle and coat with 2 tablespoons of white truffle oil. Sprinkle 1/2 the Parmesan cheese on the potatoes to coat. Return to lined sheet pan and place under broiler for a few minutes until crisp. about 3-5 minutes.
- 6. Remove from oven. Sprinkle with salt and pepper to taste. Top with remaining Parmesan and chopped parsley. Ready to serve!

- Preheat oven to 450 degrees F. Place 2 teaspoons of olive oil on a baking pan or roasting pan and place in oven until hot and oil begins to shimmer, about 3-5 minutes. In a large plastic ziploc bag, add potatoes, 3 tablespoons of olive oil, garlic, rosemary, parsley, and a generous amount of salt and pepper. Close bag and shake to evenly coat the potatoes. Dump the potatoes on the hot pan, and evenly distribute them in 1 single layer and place in oven. After 20 minutes, loosen the potatoes gently with a spatula and flip over.
