1 pound medium fresh mushrooms, halved
1 pound sliced baby portobello mushrooms
1/2 pound sliced fresh shiitake mushrooms
7 tablespoons butter
12 garlic cloves, minced
2 green onions, chopped
1/2 cup all-purpose flour
2 cans (14-1/2 ounces each) chicken broth
3-1/3 cups 2% milk
1-2/3 cups heavy whipping cream
4 teaspoons minced fresh thyme or 1-1/2 teaspoons dried thyme
2 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1 teaspoon salt
1 teaspoon pepper
Minced fresh parsley

Steps:

  • In a Dutch oven, saute mushrooms in butter in batches until tender. Return all to the pan; add garlic and onions. Cook and stir for 2 minutes. Sprinkle with flour; stir until blended., Gradually stir in broth and milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the cream, thyme, basil, salt and pepper; heat through. Sprinkle each serving with parsley.

Roasted Mushroom, Onion, and Garlic Soup image

A tasty mushroom soup made with no milk or cream. White beans are used to thicken, and roasting mushrooms, onions, and garlic in the oven add great flavor. It's a flexible recipe. You can use any combination of mushrooms that you'd like, and any kind of broth that you'd like. This recipe calls for pureeing the onions, garlic and a small amount of the mushrooms, leaving most of the mushroom quarters for the soup, but you can puree as many of the mushrooms as you'd like. I've tried it as written, and also with all of it pureed. I actually like it best all pureed - it's like a more traditional mushroom soup. Adapted from a recipe found online - the original also called for 3 cans of beans, half of which were pureed, and half were left whole for the soup.

16 ounces button mushrooms, cleaned and quartered
8 ounces cremini mushrooms, cleaned and quartered
2 sweet onions, peeled and cut into wedges
3 garlic cloves, peeled and slightly smashed
2 1/2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
10 stems fresh thyme, divided
8 -10 fresh sage leaves
48 ounces low sodium chicken broth (or vegetable broth)
1 (15 ounce) can white beans

Steps:

  • Preheat oven to 450 degrees.
  • In a large bowl, toss the onions and garlic with 1 TBS olive oil, half the salt, and half the pepper.
  • Spread onto a baking sheet.
  • Then toss the mushrooms with the remaining olive oil, salt, pepper, 8 of the thyme stems, and the sage leaves.
  • Spread onto another baking sheet.
  • Roast the vegetables for 20-30 minutes - stirring every 8 minutes and remove and set aside any pieces that are browning nicely (before they burn).
  • In a blender, add 1 cup of broth, 1 can of beans, the onions, garlic, sage leaves, about 1/2 cup mushrooms. Blend until pureed.
  • Pour into a pot on the stove, and add the remaining chicken broth, mushroom pieces, and leaves from two remaining thyme stems.
  • Heat and simmer 15 minutes.

This is a creamy, rich, dinner party type soup. Yet it's so easy to make and so delicious that I make it often. Don't be put off by the amount of garlic, as it cooks so long it becomes mellow and smooth tasting. I got the original recipe for this from the Epicurious website, but have made several changes and additions.

3 tablespoons olive oil
2 cups mushrooms, coarsely chopped (I prefer portobellos)
3 tablespoons butter
2 cups onions, chopped
1 cup peeled garlic, cloves
2 tablespoons all-purpose flour
6 cups chicken broth
1 cup half-and-half
1/2 cup sherry wine (I use sweet)
1 teaspoon dried thyme
1 bay leaf
3 cups dense white bread, in small pieces (I use ciabatta)
salt
pepper

Steps:

  • Saute chopped mushrooms in olive oil over high heat for 2-3 minutes.
  • Stir as little as possible so that they brown, not steam.
  • Remove from pan and set aside.
  • Melt butter over medium-low heat.
  • Add onions and garlic.
  • Cover and cook for about 10 minutes, stirring occasionally.
  • Add the flour and cook, stirring, for 3 minutes.
  • Add the broth, half and half, sherry, thyme, and bay leaf.
  • Stir well and bring to a boil.
  • Lower heat and cook uncovered for 15 minutes.
  • Add the bread pieces, stir well, and simmer for another 5 minutes.
  • Discard the bay leaf.
  • Using an immersion blender, puree the soup until the bread has dissolved and the soup is smooth.
  • (You can also do this in batches in a blender or food processor, but use caution to avoid burns.) Add the reserved mushrooms to the pureed soup and heat through.
  • Add salt and pepper to taste.

This is a buttery, hearty, warming soup. Has leeks, red onions, scallions, lots of garlic, and dried Porcini mushrooms. You can top it with cheese if you like.

3 leeks, sliced, white part only, rinsed very good
3 large red onions, sliced
6 -10 garlic cloves, sliced
4 tablespoons butter
1/4 cup olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon sugar
1 cup dried porcini mushrooms, soaked and rough chopped (reserve liquid for soup)
8 cups water
2 tablespoons beef base or 2 tablespoons vegetable stock base
1 teaspoon dried parsley
scallion, thinly sliced, for garnish

Steps:

  • Melt butter and olive oil in a large pot.
  • Sauté leeks, onions, salt, pepper, sugar, 8-10 minutes adding garlic and cook 3 more minutes.
  • Add strained chopped mushrooms, water, beef base, strained liquid from mushrooms and parsley.
  • Bring to a boil lower heat to a simmer and cook for 20 more minutes.
  • If desired, toast bread in over and top with your favorite cheese and place on top of soup and serve topped with a garnish of scallions and pepper.
  • For vegetarian use only the vegetable base.

2 tsp grapeseed oil
1 cup chopped onions
1 pound cremini or other mushrooms, sliced
4 cups vegetable, chicken or beef stock
2 cups water
1/2 cup quinoa
1 tbsp (or more) roasted garlic
2 tsp chopped fresh thyme
3/4 tsp salt
1/4 tsp pepper
1 cup chopped fresh spinach
Parmesan cheese

Steps:

  • Heat oil in large auscepan over medium low heat. Add onions and cook, covered for 8 minutes or until the onion is soft and translucent. Add the mushrooms and cook, covered for another 7 minutes or until they soften. Remove 1 1/2 cups of the mushroom mixture and set aside. Add the stock, water, quinoa, roasted garlic, thyme, salt and pepper to the saucepan. Bring to a boil, reduce to a simmer, cover and cook for 15 minutes or until the quinoa is tender. Puree soup with a hand blander or in a blender. Return soup to the saucepan. Stir in the spinach and reserved mushrooms, Cook gently until heated through. Sprinkle with parmesan.

6 tablespoons butter
1/2 cup all-purpose flour
4 tablespoons dry onion flakes (or 1 small fresh onion, chopped finely)

1 tablespoon dried parsley

2 teaspoons dried thyme
8 cremini mushrooms (medium sized)
9 white mushrooms (medium sized)
1 1/2 cups chicken broth
8 ounces half-and-half or 8 ounces whole milk

  • Prep:.
  • Chop 4 Crimini mushrooms and 4 White mushrooms finely and set aside.
  • Slice remaining White and Crimini mushrooms and reserve in separate bowl.
  • Directions:.
  • In a 5-quart pot, melt butter on med-high heat until slightly browned, 1-2 minutes - this will happen fairly quickly so be careful to watch it; turn heat down to medium.
  • Gradually whisk in all-purpose flour - mixture will be bubbly.
  • Stir in dried onion, granulated garlic, parsley and white pepper to rue and stir constantly for 2 minutes until onion and garlic are fragrant and slightly browned; mixture will seem on the dry side.
  • Slightly lower your heat to Medium-Low and add contents of chopped mushrooms and mix thoroughly for 1 minute.
  • Add your chicken stock to the mushroom mixture and bring heat up to Medium, stirring occasionally so your mixture doesn't stick to the bottom.
  • Cook for 5 minutes to thicken.
  • Add in the dried Thyme and mix thoroughly.
  • Add your whipping cream, half-and-half or whole milk and whisk together. This will thin out your mixture a bit and make for a smooth consistency.
  • Heat your mixture for 2 minutes.
  • Add your sliced mushrooms and stir, until bubbly.
  • Turn heat to Medium-Low and simmer for an additional 5 minutes, stirring occasionally.
  • Remove from heat. You soup will thicken as it stands.

MUSHROOM BARLEY GARLIC SOUP

I got this out of Parade magazine ten years ago( '99). It is very garlicky, with an earthy flavor. Easy to make, too. I usually add seasoning as I go along. Thyme, Oregano, and even Rosemary is good in this. I have included the minimal spices. Add what you like!

In this recipe, I use approximately 20-25 cloves of garlic. I use the cloves whole, but you can mince or slice them to your preference. Don't be afraid to try garlic soup if you've never had it. It isn't nearly as intense as you'd think. The soup can be served many ways: I served mine over tri-flavored pasta, butter beans and topped it with cheese while my boyfriend ate his with sesame seeds, lemon juice, soy sauce, and Thai basil.

1 gallon water
8 ounces marsala wine
4 ounces low sodium soy sauce
1/4 cup butter
2 heads garlic, separated and skinned
12 ounces portabella mushrooms, sliced
12 ounces shiitake mushrooms
3 carrots, sliced
4 stalks celery, chopped
1 bunch green onion, diced
1/2 sweet onion, diced
4 bay leaves
2 teaspoons pepper
1 teaspoon garlic powder
1 teaspoon onion powder
4 teaspoons Bell's seasoning

Steps:

  • Bring the water and garlic to boil. In the mean time, add 1 tablespoon of butter to a skill and sauté mushrooms until soft.
  • Add all of the remaining ingredients and boil over medium-high heat for 30 minutes.
  • If your Shiitake Mushrooms don't come with a Rosemary Garlic Sauce, add an additional 1/8 cup of butter, 2 cloves of garlic, and 1 tsp rosemary.
  • Add salt to taste. And serve to your preference.
