I found this years ago in a recipe book made by a local church auxiliary. I make it and use it as a dressing for pasta salad or tomato and cucumber Greek salad. I usually mix a day ahead and the flavors taste 100 times better!

½ cup vegetable oil
2 tablespoons vinegar
2 teaspoons white sugar
½ teaspoon salt
¼ teaspoon dried parsley
4 cloves garlic, minced
¼ teaspoon dried basil

¼ teaspoon ground black pepper

Steps:

  • Whisk vegetable oil, vinegar, sugar, salt, parsley, garlic, basil, celery seed, marjoram, and black pepper together in a bowl.

GRILLED CHICKEN WITH GARLIC-HERB DRESSING AND GRILLED LEMON



Grilled Chicken with Garlic-Herb Dressing and Grilled Lemon image

Number Of Ingredients 10

2 heads garlic, cut in 1/2 horizontally
Kosher salt
Freshly ground black pepper
Extra-virgin olive oil
2 whole fresh thyme sprigs, plus leaves from 6 sprigs
2 lemons, juiced, plus 2 lemons, halved
About 1 bunch flat-leaf parsley, leaves chopped
1 (4 to 4 1/2-pound) chicken, cut into 10 pieces
2 heads radicchio, preferably Treviso, cut into quarters
1 tablespoon balsamic vinegar

Steps:

  • Preheat the oven to 400 degrees F. Cut a piece of aluminium foil about 12 inches long.
  • Put the garlic on 1/2 of the foil, sprinkle with salt and pepper, drizzle in some olive oil, and add 2 sprigs of thyme. Fold the foil enclosing the garlic, making a pouch, and add a couple teaspoons of water. Fold the foil over the garlic to enclose and fold in the edges 2 or 3 times to seal. Put the package in the oven and roast for 30 minutes, or longer, until the garlic is soft. Open the package and let the garlic cool a bit, then squeeze out the cloves into a food processor or blender. Add 1/2 cup olive oil, the lemon juice, parsley, and thyme leaves and puree to make a thick vinaigrette.
  • Preheat an outdoor gas or charcoal grill to medium heat.
  • Rinse the chicken and pat dry with paper towels. Put the pieces in a bowl, sprinkle with salt and pepper, and drizzle with olive oil; toss to coat with the seasonings and then refrigerate while you get everything else together.
  • Put the radicchio in another bowl, drizzle with olive oil, balsamic vinegar. Sprinkle with salt and pepper and toss; set aside.
  • When you're ready to cook, take a few paper towels and fold them several times to make a thick square. Blot a small amount of oil on the paper towel and carefully and quickly wipe the hot grates of the grill to make a nonstick surface.
  • Season with salt and pepper and place the radicchio quarters on the preheated grill. Cook the radicchio for about 2 minutes per side until it has a nice char; pull it off the grill, place into a bowl, cover with plastic wrap, and set aside to steam and finish cooking.
  • Then put the chicken on the grill, skin side down, and grill. Grill the chicken for about 20 minutes, turning once, then baste with about half of the vinaigrette and keep cooking until an instant-read thermometer stuck into the thickest part of the thigh reads 160 degrees F and the chicken is nice and caramelised all over, 15 to 20 more minutes. During the last few minutes, throw the lemon halves on the grill, cut sides down, and cook until just marked and smoky.
  • To serve, separate the radicchio into individual leaves in a big bowl. Add the chicken and the rest of the dressing and toss well. Serve with grilled lemon halves, squeeze the lemon over the chicken, and top with reserved dressing.

PAN-ROASTED GARLIC AND HERB CHICKEN BREASTS WITH CHOPPED SALAD AND CREAMY CAPER DRESSING



Pan-Roasted Garlic and Herb Chicken Breasts with Chopped Salad and Creamy Caper Dressing image

4 garlic cloves, finely chopped
1 cup fresh flat-leaf parsley leaves (a few large handfuls), chopped
1 teaspoon hot sauce, such as Tabasco (eyeball it)
6 tablespoons extra-virgin olive oil (EVOO)
Salt and freshly ground black pepper
4 6-to 8-ounce boneless, skinless chicken breast halves
4 tablespoons mayonnaise, plain yogurt, or sour cream
3 tablespoons capers, drained, coarsely chopped
2 tablespoons red wine vinegar (eyeball it)
3 tablespoons fresh dill, chopped
1 tablespoon Dijon mustard
1 pint yellow cherry or grape tomatoes, halved
1 large head of radicchio, thinly sliced
6 scallions, thinly sliced
1 seedless cucumber, cut in quarters lengthwise, then sliced into bite-size pieces
Crusty bread, sliced and toasted

Steps:

  • Preheat the oven to 400°F.
  • In a shallow dish, combine the garlic, parsley, hot sauce, 3 tablespoons of the EVOO, salt, and pepper. Add the chicken breasts and coat in the mixture; marinate for 5 minutes.
  • While the chicken is marinating, in a bowl combine the mayonnaise with the capers, red wine vinegar, dill, mustard, and some pepper. In a slow, steady stream, whisk in the remaining 3 tablespoons of the EVOO.
  • Preheat a large nonstick oven-safe skillet over medium-high heat. Add the chicken to the hot pan and brown on each side for 2 to 3 minutes. Transfer the skillet to the oven and roast the chicken for about 15 minutes, or until it is cooked through.
  • While the chicken is roasting, in a salad bowl combine the cherry tomatoes, radicchio, scallions, and cucumbers. Pour the creamy caper dressing over the chopped veggies and toss to combine.
  • Serve the chicken breasts whole or sliced with some of the dressed chopped salad and the toasted bread.

AUBERGINES WITH GARLIC & HERB DRESSING

1kg aubergine , sliced into rounds
100ml olive oil
5 tbsp red wine vinegar
1 tbsp sugar
4 garlic cloves , thinly sliced
bunches mint and parsley, roughly chopped

Steps:

  • Brush the aubergine on both sides with a little olive oil; you will need about 5 tbsp. Griddle, barbecue or grill the aubergine slices until lightly browned on both sides. Remove and arrange, overlapping, on a platter. This can be done on the previous day and chilled.
  • Heat the red wine vinegar with the sugar in a small pan until it has dissolved, then brush over the aubergine slices. Heat the remaining oil in a frying pan, add the garlic and fry quickly until lightly toasted, then pour the garlic and oil into a small bowl. Just before serving, scatter the garlicky oil and herbs over the aubergines.

1 teaspoon mustard powder

1 cup buttermilk
1 1/2 cups real mayonnaise
2 Tbsp fresh chives, finely chopped and divided
2-3 cloves garlic, minced
1 Tbsp flat leaf parsley, chopped
2 tsp sea salt or kosher salt
1 1/2 tsp sugar
1-2 tsp fresh lemon juice
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1/8 tsp dried dill weed or 1/2 tsp fresh

Steps:

  • Whisk together the buttermilk and mayonnaise, then add the rest of the ingredients and seasonings. Whisk the mixture until the ingredients are fully incorporated and no lumps remain. When chopping the fresh chives and parsley, I recommend that you finely chop them so they'll incorporate evenly and the flavors will be released into the dressing. Reserve 1 tsp of the chopped chives for garnishing the top. Chill well for at least 4 hours before serving. Yield: Approx. 2 1/2 cups

9 garlic cloves, peeled
3/4 teaspoon extra virgin olive oil
3/4 cup loosely packed basil leaves
3/4 cup loosely packed italian parsley leaves
3/4 cup plain yogurt
1/2 cup light mayonnaise
1 1/2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 375 degrees. Toss garlic with oil and wrap loosely in foil. Roast in oven for about 45 minutes, or until cloves have softened. Let cool 5-10 minutes. Place cooled garlic in work bowl of food processor with basil and parsley; pulse on Grind 10 times. Scape work bowl. Add yogurt, mayonnaise and vinegar. Process on Grind until smooth and blended, about 30 seconds. Scrape the work bolw; process 15 additional seconds. Transfer to an airtight container. Dressing keeps for one week in refrigerator.
