6 whole large eggs
2 large egg whites
1/2 cup finely grated parmesan (2 ounces)
1/3 cup thinly sliced fresh basil
3/4 teaspoon salt
1/2 teaspoon black pepper
4 garlic cloves, thinly sliced
3 tablespoons olive oil
1/2 pound boiling potatoes, peeled and cut into 1/4-inch dice
2 cups grape tomatoes or halved cherry tomatoes (6 oz)

Steps:

  • Whisk together whole eggs, whites, 1/4 cup parmesan, basil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in large bowl.
  • Preheat broiler.
  • Cook garlic in 1 tablespoon oil in a 10-inch heavy skillet (preferably nonstick and ovenproof) over moderate heat, stirring, until golden, about 1 minute. Transfer garlic with a slotted spoon to a bowl.
  • Add potatoes to skillet and sautéover moderately high heat, stirring, until just tender, about 6 minutes. Transfer with a slotted spoon to bowl with garlic.
  • Add 1 tablespoon oil and tomatoes to skillet and cook over moderately high heat, stirring, until tomatoes brown and skins split, about 4 minutes.
  • Add remaining tablespoon oil and potatoes with garlic to skillet, spreading evenly, and sprinkle with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Pour egg over vegetables and cook over moderately high heat, lifting up cooked egg around edges to let uncooked egg flow underneath, 3 minutes. Reduce heat to moderate and cook, covered, 5 minutes more (center will be moist).
  • Remove lid and broil frittata 5 to 7 inches from heat until set, about 5 minutes. Sprinkle top evenly with remaining 1/4 cup parmesan, then broil until cheese melts and frittata is golden brown, 2 to 3 minutes more.
  • Slide onto a platter and cut into 4 wedges.

1 pound Yukon Gold potatoes, cut into 1-inch pieces
4 garlic cloves
2 tablespoons extra-virgin olive oil

1/2 pound green beans, trimmed and cut into 1 1/2-inch pieces
Reserved roasted broccoli

Steps:

  • Preheat oven to 425 degrees, with racks in upper and middle thirds. On a rimmed baking sheet, toss potatoes and garlic with 1 tablespoon oil; season with salt and pepper. Arrange in a single layer on sheet and roast on middle rack until potatoes are golden and crisp, about 25 minutes, stirring halfway through.
  • Meanwhile, in a medium bowl, whisk together eggs and sour cream and season with salt and pepper. In a 10-inch cast-iron skillet, heat 1 tablespoon oil over medium. Add onion and green beans and cook, stirring occasionally, until beans are tender, about 10 minutes. Add broccoli and tomato, and season with salt and pepper. Add egg mixture and stir to combine. Sprinkle with Parmesan and cook, undisturbed, until edge is set, about 2 minutes.
  • Transfer skillet to upper rack in oven and bake until slightly puffed and almost set, about 8 minutes. Heat broiler and broil until cheese is browned and bubbling, about 1 minute. Run a rubber spatula around edge of frittata and transfer to a plate. Cut into wedges and serve with potatoes and garlic.

1 medium zucchini, shredded

Steps:

  • In a 10-in. ovenproof skillet, melt butter over medium-high heat. Add the onion and garlic; saute for 1 minute. Add the zucchini; cook for 3 minutes or until tender. , In a large bowl, beat eggs and mustard. Pour into skillet. Sprinkle with the bacon, salt and pepper. As eggs set, lift edges, letting uncooked portion flow underneath. Chop the greens super-fine to achieve the prettiest color. Use whatever looks best in the market (spinach and chard are brightest when it comes to color), or you can use bagged baby spinach. You only need 1/2 cup of chopped greens, but you could use twice that amount.

1 tablespoon milk
Salt and freshly ground pepper to taste
1/2 to 3/4 cup finely chopped blanched spinach, chard, kale or beet greens (to taste)
1 garlic clove, minced or pureed
1 tablespoon, tightly packed, freshly grated Parmesan
2 teaspoons extra virgin olive oil

Steps:

  • Beat the eggs and milk in a bowl with salt and pepper to taste. Beat in the greens, garlic and the Parmesan.
  • Heat the olive oil over medium-high heat in a heavy, 8-inch nonstick omelet pan. Drop a bit of egg into the pan and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture, scraping in every last bit with a heat-proof rubber spatula. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. Once a few layers of egg have cooked during the first couple of minutes of cooking, turn the heat down to low, cover and cook 7 to 10 minutes, until the frittata is puffed and just about set. From time to time remove the lid and loosen the bottom of the omelet with a wooden or heat-proof rubber spatula, tilting the pan, so that the bottom doesn't burn. It will however turn golden.
  • If the frittata is still runny on the top, wearing oven mitts, slide the frittata out onto a plate or even better, a saucepan lid that has a handle, reverse the pan over the plate or lid, and holding the two together, flip the plate or lid so that the frittata goes back into the pan on its not-quite-cooked side. Finish for no longer than a minute, then reverse onto a platter. Allow to cool to room temperature, and serve, or chill. Cut into 4 wedges to serve. The wedges pack well and are very portable.

GREEN GARLIC, CHIVE AND RED PEPPER FRITTATA



Green Garlic, Chive and Red Pepper Frittata image

Green garlic has a small window. At the beginning of the season the bulbs look more like leeks or spring onions than garlic, as they have not yet set cloves. To prepare them just cut away the stalks as you would a spring onion, cut them in half and remove any tough stalk that might be running down the middle, remove the papery outer layers and chop like a scallion or leek. Some farmers sell garlic scapes, the curly, green flowering end of the garlic plant. If you can't find them at a farmers market, you can find recipes at several Web sites. They can be used in the same way you might use the green parts of scallions.

1 large red bell pepper, seeded and cut in small dice
2 bulbs green garlic, trimmed of stalks and papery layers, sliced

1 cup whole-milk ricotta
1/4 cup minced or snipped chives
Freshly ground pepper

Steps:

  • Heat 1 tablespoon of the olive oil over medium heat in a heavy 10-inch nonstick skillet and add the bell pepper. Cook, stirring often, until it is tender, 5 to 8 minutes. Add the garlic and salt to taste and cook, stirring often, until tender, 2 to 3 minutes. Remove from the heat and set aside.
  • Beat the eggs in a large bowl. Whisk in the ricotta, salt (about 1/2 teaspoon) and freshly ground pepper to taste. Stir in the chives and red pepper and garlic mixture. Clean and dry the pan and return to the burner, set on medium-high. Heat the remaining tablespoon of olive oil in the skillet. Hold your hand above it; it should feel hot. Drop a bit of egg into the pan, and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with a spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking.
  • Turn the heat down to low, cover and cook 10 minutes, shaking the pan gently every once in a while. From time to time remove the lid and loosen the bottom of the frittata with a wooden or heatproof spatula, tilting the pan, so that the bottom doesn't burn. The eggs should be just about set on the bottom; cook a few minutes longer if they're not.
  • Meanwhile, heat the broiler. Uncover the pan and place under the broiler, not too close to the heat, for 1 to 3 minutes, watching very carefully to make sure the top doesn't burn (at most, it should brown very slightly and puff under the broiler). Remove from the heat, shake the pan to make sure the frittata isn't sticking and allow it to cool for at least 5 minutes and for up to 15. Loosen the edges with a wooden or plastic spatula. Carefully slide from the pan onto a large round platter. Cut into wedges or into smaller bite-size diamonds. Serve hot, warm, at room temperature or cold

I love spinach and I love garlic scapes. This is one of my favorite spring time recipes and it is so simple to make. I got this recipe with my CSA veggie box from Vermont Valley Community Farms in south-central Wisconsin.

ONION, GARLIC AND BASIL FRITTATA

Onions and garlic are slowly pan-cooked until caramelised and then used as the base of a delicious frittata. Adapted from a recipe on the Simply Great Recipes website. Obviously you can use your own pesto recipe or a pesto from your favourite deli in place of the commercially available one. I left the Leggo's pesto named in the original recipe in this recipe, as that makes for a quicker version when time is limited. For the best results from this simple dish, use free range eggs.

1 tablespoon oil
6 medium onions, sliced
1 teaspoon brown sugar
4 garlic cloves, roughly chopped
8 eggs, beaten
3/4 cup milk
1/4 cup leggo's pesto sauce, Traditional Basil
3/4 cup grated tasty cheese or 1/4 cup feta and 1/2 cup grated tasty cheese
salt, to taste
fresh ground black pepper, to taste

Steps:

  • In a medium bowl beat together the eggs, milk and Leggo's Pesto - Traditional Basil.
  • Heat the oil in a large (preferably non-stick) pan, over a medium-high heat, add the onions, sprinkle with sugar, and cook for 15 minutes, stirring occasionally or until the onion slices are golden brown. Add the garlic in the last 4-5 minutes.
  • Pour the egg mixture onto the onions in the pan and cook over a medium heat for 4-5 minutes.
  • Sprinkle the egg mixture with the grated cheese (and feta, if you are using part feta) and add salt and freshly ground pepper to taste; and finish cooking the frittata under a preheated grill for 3-4 minutes or until the frittata has set.

This is a quick meal that is sure to become a regularly requested favorite. The beautiful arrangement of ingredients topped with the garlic confit will not only change the way you prepare eggs, but makes the perfect meal for weeknights or weekend mornings.

1 bulb garlic, peeled
1 dried chile de árbol
1/2 cup extra-virgin olive oil, or enough to completely submerge the garlic
1 scallion
3 large eggs
kosher salt
4 slices cooked bacon
2 tablespoons unsalted butter
6 roasted cherry tomatoes, Toss 2 C cherry tomatoes with 3 Tbsp olive oil, 1 tsp sugar, and salt to taste. Broil 10 minutes, until caramelized.
5 cloves garlic "confit"
1/2 teaspoon fresh thyme leaves
1 ounce fresh goat cheese
Freshly ground black pepper
Grated Parmigiano-Reggiano, for serving

Steps:

  • Garlic confit: Put the garlic, chile, and olive oil in a small saucepan and heat over low until it just starts to bubble. Simmer until the garlic cloves are buttery and spreadable, about 20 minutes. Remove from the heat and allow to cool. You can store, refrigerated in an airtight container, for several days.
  • Thinly slice the scallion on a bias. Whisk the eggs in a small bowl with 1/4 teaspoon kosher salt and about 1 teaspoon water. Add the sliced scallion and whisk to combine.
  • Thinly slice the bacon on a bias, like the scallion. Arrange the sliced bacon, cooked tomatoes, crumbled cheese, garlic cloves from the confit, and thyme leaves ready in front of you. Set an 8-inch nonstick skillet over low heat, and melt the butter in it until the foam has risen and fallen, about 3 to 5 minutes.
  • Pour the eggs into the pan. As they cook, use a heatproof rubber spatula to draw the edges inward, away from the sides, tilting the pan so the raw egg fills the empty space created. Continue gently cooking and pulling the eggs until no egg runs off when you tilt the pan. Remove from the heat. Scatter the garlic, thyme, tomatoes, cheese, and bacon over the frittata. Sprinkle with black pepper and grated cheese. Gently slide the frittata from the skillet onto a plate, and serve.

1 bunch garlic scape
1 bunch swiss chard or 1 bunch kale
1 small summer squash
1 small onion
4 eggs (or 3 egg whites with one egg)
1/2 cup mozzarella cheese
salt and pepper
cooking spray

Steps:

  • Chop scapes and chard into 2 inch pieces. Chop squash and onion.
  • Spray cooking oil in a large frying pan over medium high heat. Add scapes and chard and cook for about 20-25 minutes over medium heat. Stir frequently to avoid sticking or burning. Add cooking spray when necessary.
  • Add onions and squash cook for another 5 minutes.
  • Crack eggs and blend. Add more cooking spray, add eggs lower the heat add cheese and cook until the eggs set and cheese melts. Remove from pan and enjoy.

MUSHROOM AND GREEN GARLIC FRITTATA

I spend a bundle on mushrooms from a bountiful display at the Dupont Circle FreshFarm Market just about every Sunday-but not in the summer. That's because mushrooms are available practically year-round (many of them are cultivated), while tomatoes, corn, broccoli, and the like have a shorter season. So I reserve my mushroom purchases for when the bulk of the other seasonal produce has faded or hasn't quite arrived. In the spring, I love to combine them with one of the items I spend all winter looking forward to: green garlic, basically an immature form of the plant, picked before it has fully formed its bulbous collection of cloves. You can use the whole thing like a leek or green onion (both of them in the same family), but it has the addictive taste of fresh, pungent garlic throughout. Since I also associate spring with eggs, I like to pair them with mushrooms and green garlic in a simple frittata. If you can't find green garlic or want to make this in another season, feel free to substitute a small leek. Eat this frittata with a side dish, such as salad, bread, and/or hash browns, for a filling meal.

2 eggs
1 tablespoon Greek-style yogurt
Kosher or sea salt
Freshly ground black pepper
1 teaspoon extra-virgin olive oil
2 ounces cremini, button, or other mushroom of your choice, chopped (about 1/2 cup)
1 green garlic bulb and stalk, white and light green parts, thinly sliced
1 teaspoon unsalted butter
1 tablespoon freshly grated Parmigiano-Reggiano cheese
4 large mint leaves, stacked, rolled, and thinly sliced

Steps:

  • Preheat the broiler with the rack about 4 to 5 inches from the flame or element.
  • In a small bowl, whisk together the eggs and yogurt; season with salt and pepper.
  • In a small ovenproof skillet, such as cast iron, heat the olive oil over medium heat. When it shimmers, add the mushrooms and green garlic. Cook, stirring occasionally, until the mushrooms exude their juices and the green garlic is tender and starts to brown, 4 to 5 minutes. Transfer the mushrooms and green garlic to a plate.
  • Plop the butter into the skillet and let it melt and foam up. As soon as the foam starts to subside, pour in the eggs and swirl the pan so the eggs reach the edges. Let the eggs cook, undisturbed, until they are set on the bottom, about 2 minutes. Scatter the mushrooms, green garlic, and Parmigiano-Reggiano on top and transfer to the broiler.
  • Broil for just a minute or two, until the surface of the frittata is set. Remove, transfer to a plate, sprinkle with the mint, and eat.

BAKED FRITTATA WITH YOGURT, CHARD AND GREEN GARLIC



Baked Frittata With Yogurt, Chard and Green Garlic image

Inspired by the signature Provençal chard omelet called truccha, this beautiful baked frittata incorporates thick Greek yogurt and lots of green garlic. It will puff up in the oven, but then it settles back down. Use a generous bunch of chard for this - green, red or rainbow - and save the stalks to use in the chard stalk and chickpea purée that I'm also posting this week. I like to serve the frittata at room temperature, or I grab a cold slice for lunch. It's a wonderfully portable dish. The filling can be prepared through Step 4 up to 3 days ahead. The frittata keeps well for 2 or 3 days in the refrigerator.

1 generous bunch Swiss chard (1 to 1 1/4 pounds with stems), either green, rainbow or red
Salt to taste
2 tablespoons extra-virgin olive oil
1 bulb green garlic, papery shells removed, chopped
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
6 eggs
2/3 cup plain Greek yogurt or drained yogurt (2 percent or whole milk)
Freshly ground pepper

  • Preheat oven to 350 degrees. Bring a large pot of water to a boil.
  • Strip chard leaves from stems. Wash both leaves and stems thoroughly. Set aside stems for another purpose. You should have about 6 cups leaves, tightly packed.
  • Add a generous amount of salt and the greens to the boiling water. Blanch greens for about 1 minute, until tender, and transfer to a bowl of cold water. Drain and take up chard by the handful to squeeze out excess water. Chop medium-fine. You should have about 1 1/2 cups chopped chard.
  • Heat 1 tablespoon of the olive oil over medium heat in a heavy skillet and add green garlic, thyme and rosemary. Add a generous pinch of salt and cook, stirring often, until the garlic is fragrant, 2 to 3 minutes. Add chopped chard and cook, stirring, until ingredients are combined and greens are nicely coated with oil. Remove from heat.
  • Place remaining tablespoon of olive oil in a 2-quart gratin or baking dish, or in a 9-inch ovenproof skillet, and place in oven for 5 minutes. Meanwhile, whisk eggs in a large bowl. Season with salt (about 1/2 teaspoon) and freshly ground pepper to taste. Whisk in yogurt. Stir in greens mixture.
  • Remove baking dish from the oven, brush sides with hot oil, and scrape in the egg mixture. Place in oven and bake 30 minutes, or until set and slightly puffed. Remove from oven and allow to cool for at least 10 minutes before serving. Serve hot, warm, room temperature or cold.

2 tablespoons milk
2 eggs
1 tablespoon fresh parsley, chopped
1 garlic clove, crushed
1 pinch dried chili pepper flakes
1 slice white bread, torn into small pieces
salt & pepper, to taste
1 tablespoon olive oil
1 tablespoon fresh parmesan cheese, grated

Steps:

  • Beat together milk, eggs, parsley, garlic & chilli flakes.
  • Add the torn bread and season with salt & pepper; set aside for 5 mins so that the bread completely softens into the mixture.
  • Heat the oil in a fry-pan & pour in the egg mixture. Cook for 3 mins or until golden & almost set.
  • Flip the frittata & scatter with parmesan, cook until the underside is golden and the cheese has melted.

1 tablespoon milk
Salt and freshly ground pepper to taste
1/2 to 3/4 cup finely chopped blanched spinach, chard, kale or beet greens (to taste)
1 garlic clove, minced or pureed
1 tablespoon, tightly packed, freshly grated Parmesan
2 teaspoons extra virgin olive oil

Steps:

  • . Beat the eggs in a bowl with salt and pepper to taste. Beat in the greens, garlic and the Parmesan. 2. Heat the olive oil over medium-high heat in a heavy, 8-inch nonstick omelet pan. Drop a bit of egg into the pan and if it sizzles and cooks at once, the pan is ready. Pour in the egg mixture, scraping in every last bit with a heat-proof rubber spatula. Swirl the pan to distribute the eggs and filling evenly over the surface. Shake the pan gently, tilting it slightly with one hand while lifting up the edges of the frittata with the spatula in your other hand, to let the eggs run underneath during the first few minutes of cooking. Once a few layers of egg have cooked during the first couple of minutes of cooking, turn the heat down to low, cover and cook 7 to 10 minutes, until the frittata is puffed and just about set. From time to time remove the lid and loosen the bottom of the omelet with a wooden or heat-proof rubber spatula, tilting the pan, so that the bottom doesn't burn. It will however turn golden. 3. If the frittata is still runny on the top, wearing oven mitts, slide the frittata out onto a plate or even better, a saucepan lid that has a handle, reverse the pan over the plate or lid, and holding the two together, flip the plate or lid so that the frittata goes back into the pan on its not-quite-cooked side. Finish for no longer than a minute, then reverse onto a platter. Allow to cool to room temperature, and serve, or chill. Cut into 4 wedges to serve. The wedges pack well and are very portable.

1/2 cup milk
1/2 cup parmesan cheese, grated
2 tablespoons butter
4 garlic cloves, minced
1/2 cup onion, chopped
1 -4 ounce Polish sausage, chopped or 1 -4 ounce garlic sausage
4 large potatoes, shredded
4 ounces cheddar cheese, shredded

Steps:

  • Beat together the eggs, milk and parmesan cheese; set aside.
  • In large skillet, over medium heat melt butter and saute garlic, onion, sausage, and potatoes for about 5 minutes or until tender.
  • Reduce heat to medium.
  • Pour egg mixture into pan and cook, without stirring until eggs are almost set.
  • Sprinkle cheddar cheese over top of frittata.
  • Let cook on top of stove for about 1 minute more.
  • Place pan under broiler and broil 6 inches from heat until the top is bubbly and slightly browned.
  • Cut in wedgse to serve.
