CEDAR PLANK-GRILLED SALMON WITH GARLIC, LEMON AND DILL
Steps:
- Soak an untreated cedar plank (or planks) large enough to hold a side of salmon (5 to 7 inches wide and 16 to 20 inches long) in water, weighting it with something heavy, like a brick, so it stays submerged 30 minutes to 24 hours.
- When ready to grill, either build a charcoal fire in half the grill or turn grill burners on high for 10 minutes. Meanwhile, mix oil, garlic, dill, salt, pepper and lemon zest; rub over salmon and into scored areas to coat.
- Place soaked cedar on hot grill grate, close lid, and watch until wood starts to smoke, about 5 minutes. Transfer salmon to hot plank, move salmon off direct charcoal heat or turn burners to low, and cook covered until salmon is just opaque throughout (130 on a meat thermometer inserted in the thickest section) 20 to 25 minutes or longer, depending on thickness and grill temperature. Let sit 5 minutes; serve with lemon wedges.

LEMON DILL SALMON WITH GARLIC, WHITE WINE, AND BUTTER SAUCE
I had a craving for fresh fish and dill, so I played around and came up with this. Its been rated one of my greatest hits! Great with rice or potatoes and steamed green beans.

- Preheat oven to 375 degrees F (190 degrees C). Mix butter, white wine, lemon juice, and garlic together in a small bowl.
- Pour a small amount of the butter mixture into an 8x8-inch baking pan until bottom is evenly coated; cover with a thin layer of dill. Place salmon, skin side down, into the baking pan. Sprinkle with remaining dill; pour remaining butter mixture over salmon. Cover tightly with aluminum foil.
- Bake in preheated oven until fish flakes easily with a fork, 25 to 35 minutes. Sprinkle generously with almonds before serving.

- In a food processor, process garlic to a rough mince, add dill and olive oil and pulse a few times to combine.
- Lay fish fillets in a baking dish, skin side down. Rub garlic mixture over fish. Refrigerate for 2 hours.

- Bake in preheated oven for 15 minutes. Do not overcook.

GARLIC BUTTER AND DILL BAKED SALMON
Steps:
- Start by chopping the dill, I LOVE dill and can use it in almost everything so use according to your taste. Also, a little fresh rosemary tastes good with the dill, or basil. Pre-heat oven to 350 Combine butter, 1/2 garlic, and a few pinches of salt and microwave until melted; I also add a little dill to the mix. Slice Lemon into ~8 circular slices (about 5mm thick) Line pan with Foil and use nonstick spray. Place a few slices of lemon on the foil; I used 4 and my fillet was half of a long fillet, totaled about 8-9". Spoon a few spoonfuls of the butter-mix on top of lemon, try to minimize run-off. Sprinkle a small pinch of salt on top of that. On the bottom of the fillet sprinkle some more fresh dill and then lay the fillet over the lemon slices; I added a small amount of chopped rosemary to the underside as well. To the top of the salmon, spoon more butter trying to coat the fillet entirely (may need more butter). Use the rest of the garlic and rub on top of the fillet, also sprinkle a little more salt over it; I like garlic and probably used >tbsp here. Grind pepper over the fillet, use however much you like. Use remaining dill over the top of the fillet, evenly. Add more lemon slices, the lemon flavor may be strong if you use too much, i used 2 and saved the remainder for decoration and lemon juice on the plates. Use any remaining butter here and spoon it over the filet and lemons. Bake at 350 for ~23-24min dep. on thickness. Can save some butter for serving/dipping if you like.
BAKED DILL GARLIC SALMON

- Marinate the salmon in lemon juice for one hour to remove smell. Don't marinate overnight since lemon cooks fish. Stuff the center of the fish with fresh dill, tarragon, crushed garlic and round lemon slices. Bake in clay or glass dish for 45 minutes at 350 degrees F.

Start soaking the untreated plank (or planks)you'll use early in the day- about an 8 hour soak is usually good, but you can let it soak longer if you wish.I set a brick on top of the plank to keep it submerged.The recipe calls for a whole salmon fillet, but I usually do two meal-sized fillets for just DH and myself and cut the marinade/rub ingredients in half.

- Halve each salmon fillet lengthways to form eight 'fingers'. Stir the scallions, black pepper and dill together on a plate, then press the salmon pieces into the mixture until lightly coated on all sides.
- Melt the garlic butter in a shallow pan over a medium heat, then carefully lower in the fish. Cook for 1min, then flip over and cook the other side for 1-2min until the flesh has just turned opaque.
- When the fish is cooked, remove the pan from the heat and spoon in crème fraîche. Leave it melting in the heat of the pan while you put the salmon on to plates, then spoon the sauce over to serve.
