CHICKEN PRIMAVERA

PRIMAVERA
3 to 4 skinless boneless chicken breasts
olive oil
salt and pepper
1/2 onion
1/2 green pepper
1/2 yellow pepper
6 oz favorite pasta, cooked
1 c Italian blend cheese or mozzarella
garlic cream sauce (see below)
GARLIC CREAM SAUCE
olive oil
1 Tbsp flour
1/2 tsp garlic, minced
1/2 c white wine (less if yours is strong flavored)
1/3 c frozen chopped spinach
2 c half and half
1 to 1-1/2 c shredded Parmesan (not the stuff in the shaker)

Steps:

  • 1. Garlic Cream Sauce: Drizzle a little olive oil in pan, add garlic and saute for just a moment or two so as not to burn the garlic. Add the flour, cooking for a moment. Then add the half and half, wine, and spinach to the flour mixture. Bring to a boil. Add Parmesan and stir until blended. Set aside.
  • 2. Primavera: Cut chicken breast so they are even thickness and take the tips off. Save the extra bits for another dish.
  • 3. Add to a bowl with a little bit of olive oil, salt, and pepper. Coat evenly and then grill. Cut into chunks.
  • 4. Dice or chop your veggies and saute in a little bit of olive oil, salt, and pepper until they are soft. You can use other favorite veggies like zucchini and yellow squash, broccoli. Ideas are unlimited. If your kids don't like those then dice them finer. I am not a fan of zucchini or the squash but I can tolerate them cut small. :)
  • 5. Mix together your cooked pasta, cooked chicken chunks and veggies and the sauce. Spread into a baking dish and cover with cheese.
  • 6. Bake for 25 minutes at 350 degrees or until cheese is brown and dish is bubbly hot.

½ cup all-purpose flour
1 tablespoon dried parsley
1 teaspoon dried basil
1 ½ pounds skinless, boneless chicken breasts, cut into strips
¼ cup extra-virgin olive oil
1 tablespoon minced garlic
2 ¼ cups low-sodium chicken stock
1 cup frozen mixed vegetables
1 pint grape tomatoes, halved
1 bunch green onions, diagonally sliced
1 medium zucchini, quartered and sliced
2 tablespoons sun-dried tomato pesto
salt and ground black pepper to taste

Steps:

  • Whisk together flour, parsley, and basil in a medium bowl. Add chicken strips and toss until well coated.
  • Heat olive oil in a large skillet over medium heat. Add chicken and cook, turning occasionally, until lightly browned on the outside and no longer pink, about 10 minutes. Add garlic and cook for 1 minute.
  • Add chicken stock, mixed vegetables, grape tomatoes, green onions, zucchini, and pesto. Cook, stirring occasionally, until heated through, about 10 minutes.

This creamy Chicken Primavera recipe is a fresh combination of vegetables, pasta, chicken and herbs in a light garlic Parmesan sauce!

½ lb. dry penne pasta
1 cup broccoli florets
1 tablespoon olive oil
1 boneless, skinless chicken breast (about 8 ounces)
Kosher salt and ground black pepper, to taste
3 tablespoons salted butter
2 cloves garlic, minced
4 asparagus spears, chopped
½ cup diced zucchini
¼ cup diced sweet bell pepper
8 cherry tomatoes, halved
¼ cup chicken broth, or more as needed
½ cup heavy cream, at room temperature
½ cup finely-grated Parmesan cheese
½ cup frozen peas, thawed
¼ cup minced fresh chives (or sub with thinly-sliced green onions)
2 tablespoons chopped fresh basil leaves (or sub with 1 teaspoon dried basil)

Steps:

  • Cook pasta in a large pot of salted boiling water for 1 minute less than al dente, according to package instructions (that was about 9 minutes total for my box of penne). During the final 3 minutes of cooking time, add the broccoli florets to the boiling water with the pasta. Drain.
  • Meanwhile, heat olive oil in a large skillet or Dutch oven over medium-high heat. Season the chicken with salt and pepper on both sides. Cook the chicken in the oil until browned on both sides and juices run clear, about 5-7 minutes per side. Remove the chicken to a cutting board, let rest for 5 minutes, and then slice into thin strips.
  • In the same pan, melt the butter over medium heat. Add the garlic and stir until fragrant, about 30 seconds. Stir in asparagus, increase the heat to medium-high, and cook for 1 minute. Add the zucchini and bell pepper, cook for 1 minute. Stir in the tomatoes and cook for 1 more minute.
  • Add the chicken broth, increase the heat and bring the mixture to a boil.
  • Reduce heat to low so that the liquid is at a gentle simmer. Stir in the cream and Parmesan until smooth.
  • Add the cooked pasta, broccoli, peas, chives and basil to the sauce. Let it bubble and thicken slightly, stirring frequently, until all of the ingredients are warmed through, about 2 more minutes. Taste and season with salt and pepper, if necessary. Stir in the chicken and serve immediately.

2 tablespoons olive oil
3 garlic cloves, chopped
1/2 lb boneless chicken breast, diced
1/4 teaspoon pepper
1 (16 ounce) package frozen vegetables (I like the asparagus stir fry blend vegetables in this)
1/2 cup chicken broth
1 teaspoon basil
1/2 cup parmesan cheese, shredded

Steps:

  • In a large skillet, over medium high heat, heat the olive oil; sauté chicken and garlic in olive oil seasoned with pepper, until chicken is no longer pink (5 minutes).

2 cups asparagus, chopped
1 cup cherry tomatoes, halved
1 cup carrots, sliced
1 tsp pepper

Steps:

  • Heat oil in a large pot over high heat. Cook garlic and chicken until no pink is showing. Add asparagus, tomatoes, carrots, salt, and pepper, cooking for about 2 minutes. Add pasta and Parmesan, stirring until cheese is melted and evenly distributed. Serve!
