10 garlic cloves
1-1/2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce
4 boneless beef strip steaks or ribeye steaks (1 inch thick and 8 ounces each)

Steps:

  • With a mortar and pestle, crush garlic cloves with salt and pepper. Stir in oil, lemon juice and Worcestershire sauce., Grill steaks, covered, over medium heat 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Brush generously with garlic mixture during the last 4 minutes of cooking.

2 tablespoons butter, softened, divided
1 teaspoon minced fresh parsley
1/2 teaspoon minced garlic
1/4 teaspoon reduced-sodium soy sauce
1 beef flat iron steak or boneless top sirloin steak (3/4 pound)
1/8 teaspoon salt
1/8 teaspoon pepper

Steps:

Here's what you need: ribeye steak, salt, pepper, canola oil, butter, garlic, fresh rosemary, fresh thyme

1 ribeye steak, 2 inch (5 cm) thick, preferably USDA Prime
salt, to taste
pepper, to taste
3 tablespoons canola oil
3 tablespoons butter
3 cloves garlic, peeled and smashed
2 sprigs fresh rosemary
3 sprigs fresh thyme

Steps:

  • Preheat oven to 200°F (95°C).
  • Generously season all sides of the steak with salt and pepper.
  • Transfer to a wire rack on top of a baking sheet, then bake for about 45 minutes to an hour until the internal temperature reads about 125°F (51° C) for medium-rare. Adjust the bake time based on if you like your steak more rare or more well-done (you monster).
  • Heat the canola oil in a pan over high heat until smoking. Do not use olive oil, as its smoke point is significantly lower than that of canola oil and will smoke before reaching the desired cooking temperature.
  • Sear the steak for 30 seconds on the first side, then flip.
  • Add the butter, garlic, rosemary, and thyme and swirl around the pan.
  • Transfer the garlic and herbs on top of the steak and baste the steak with the butter using a large spoon.
  • Baste for about 30 seconds, then flip and baste the other side for about 15 seconds.
  • Turn the steak on its side and cook to render off any excess fat.
  • Rest the steak on a cutting board or wire rack for about 10 minutes. Slicing the steak before the resting period has finished will result in a lot of the juices leaking out, which may not be desirable.
  • Slice the steak into ½ -inch (1 cm) strips, then fan out the slices and serve.

The hubby and I were getting tired of plain old steak, and after thinking this up we have never gone back! This is VERY garlic-y, just so you know, and this is the toned down version!! Total fat looks like a LOT but a portion of the butter melts off so it's not really as much as it seems. NOTE: I use a Magic Bullet to make this, it can be done by hand but doesn't turn out as well. I HIGHLY recommend a processor of some kind. 35 minute prep is for chilling.

6 tablespoons melted butter or 6 tablespoons margarine
6 large garlic cloves, crushed (about 6 teaspoons)
1 teaspoon paprika
1/2 teaspoon garlic salt
1/4 teaspoon onion powder
1/2 teaspoon Accent seasoning
1 teaspoon Worcestershire sauce
1 tablespoon red wine
1 teaspoon black pepper
1 lb steak, about 1 inch thick
1/8 teaspoon cayenne pepper (optional)

Steps:

  • Melt butter in a small bowl.
  • If using a processor, (again, HIGHLY recommended), transfer butter to mixing cup. If not, then proceed.
  • Crush garlic into the butter with a garlic press.
  • Add all ingredients and blend until smooth, about 10 seconds.
  • **If not using processor, stir well until combined.
  • Place in freezer approx 30 minutes or until mixtures becomes like a thick paste.
  • After trimming fat from meat, gently slice several long cuts in a cross hatch pattern on both sides, no more than 1/4 inch deep.
  • Spread garlic mixture with the back of a spoon on one side of meat, make sure you work it into the slices.
  • For Medium steak cook in the broiler, garlic side up for 7 minutes, then flip and spread garlic mixture on the other side, cooking an additional 8 minutes. It will run a little on the flip-side, so be gentle.
  • Let rest for 5 minutes before slicing.

3 sprigs rosemary, leaves picked and finely chopped
3 cloves garlic, smashed and finely chopped
Pinch crushed red pepper flakes
Extra-virgin olive oil, plus high quality finishing oil, for garnish
2 (20-ounce) porterhouse steaks or other large steaks with a bone
Kosher salt, plus coarse sea salt, for garnish

Steps:

  • In a small bowl, combine the rosemary leaves, garlic, crushed red pepper and enough olive oil to make a loose paste. Slather the steaks with the mixture and sprinkle them generously with salt. Let the steaks hang out outside the fridge to come to room temperature.
  • Preheat the grill to medium-high. Use a wire grill brush to loosen any crud and soot. Wipe the grill down with an oiled side towel to pick up any bits of loosened crud.
  • Put the steaks on a hot spot on the grill to get a great sear and really create BROWN FOOD! Once both sides of the steak are really nice and brown, move the steak to a cooler part of the grill to allow the steaks to cook to desired temperature. About 5 to 6 minutes on each side for medium-rare.
  • Remove the steaks from the grill and let rest for 5 to 10 minutes.
  • Cut the steak off the bone, slice across the grain and divide among 4 serving plates. Drizzle the steak with a little big fat finishing oil and a sprinkling of sea salt.

1/4 cup soy sauce
2 tablespoons white vinegar
1 green onion, sliced
1-1/2 teaspoons garlic powder

1 pound fresh mushrooms, sliced

2 teaspoons garlic powder
4 cloves garlic, minced
4 pounds beef top sirloin steaks
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for high heat.
  • In a small saucepan, melt butter over medium-low heat with garlic powder and minced garlic. Set aside.
  • Sprinkle both sides of each steak with salt and pepper.
  • Grill steaks 4 to 5 minutes per side, or to desired doneness. When done, transfer to warmed plates. Brush tops liberally with garlic butter, and allow to rest for 2 to 3 minutes before serving.
