I found this gem in a cookbook called Festive Recipes for the Holidays. Gave it some personal tweaks. Like more garlic. Can one have too much garlic? I don't think so! (Unless you're a vampire!)

2 1/2 lbs yukon gold potatoes
10 -12 cloves garlic
3 tablespoons butter, softened (or vegan margarine)
1/2 cup milk
1/4 cup chopped fresh basil
1/4 cup snipped fresh chives
1 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Peel potatoes and chop into 2-inch pieces.
  • Peel garlic cloves, and halve them if they are very large.
  • Fill a large pot 3/4 full with water, salt lightly and bring to a boil.
  • Add potatoes and garlic to the water and cook, until potatoes are fork-tender, about 20-25 minutes, then drain.
  • Place potatoes in a bowl, and add butter.
  • Mash potatoes and garlic, and add basil, chives, and enough milk to achieve a creamy but not runny texture.
  • Season the potatoes with salt and pepper.
  • Serve.

2 pounds thin-skin potatoes (Yukon Gold, if possible), sliced 1/4 inch thick
3 large cloves garlic, peeled
1/2 cup chopped fresh basil leaves
1 cup low-fat or nonfat buttermilk
Salt and freshly ground black pepper to taste

Steps:

  • Scrub potatoes, but do not peel them. Cook in water to cover, with garlic, until tender, about 10 minutes. Mash potatoes, still unpeeled, in a food mill or with a mashing tool; pick out and discard large pieces of skin. Stir in the basil and buttermilk; season with salt and pepper, and serve. (Potatoes can be made in advance and refrigerated. Before serving, put potatoes in glass dish, cover with plastic wrap and reheat in microwave oven for 4 to 6 minutes on high setting. Stir once or twice while reheating. If potatoes become too dry, stir in a little buttermilk.)

6 to 8 medium Washington, Idaho or Yellow Gold potatoes
6 whole garlic cloves, peeled
Salt to taste
2 tablespoons virgin olive oil
1 1/4 cups warm milk
2 tablespoons finely chopped fresh basil
Freshly ground white pepper

Steps:

  • Peel the potatoes and cut them into 3/4-inch cubes. Place the pieces in saucepan and cover with water. Add the garlic and salt.
  • Bring to a boil and simmer for 15 minutes or until the potatoes are tender. Do not overcook.
  • Drain. Discard garlic. Put the potatoes through a food mill or ricer, or mash them well with a potato masher.
  • Add the olive oil, and beat to blend. Add the warm milk, basil and pepper. Blend well. Serve piping hot.

2 tablespoons snipped sun-dried tomatoes
1/4-1/2 cup butter
1/4 cup fresh basil, minced
1 tablespoon mashed roasted garlic
4 -6 tablespoons half-and-half

1/2 teaspoon black pepper

Steps:

  • Boil the potatoes in lightly salted water until they are tender.

10 cloves garlic, unpeeled
3 tablespoons olive oil
9 medium potatoes (about 3 pounds) 1 8 oz sour cream
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/4 cup milk
1/4 cup packed fresh basil leaves, snipped
3 tablespoons grated Parmesan cheese
1/4 cup butter

Steps:

  • Place garlic in souffle dish, drizzle with oil. Bake in 350 oven for 20 minutes or until garlic is very soft; cool. Peel the garlic, discarding skins and reserving oil. Peel and cut up potatoes. Cook, covered, in boiling salted water for 20-25 min or until tender; drain. Transfer potatoes to a large mixing bowl. Beat potatoes with an electric mixer on low speed. Add sour cream, the 1/4 cup cheese, baked garlic, reserved oil, and salt. Gradually beat in enough milk to make the mixture fluffy. Fold in basil. 3 sweet potatoes, about 2 lbs (1 kg)
1 tbsp (15 mL) butter or olive oil
1 clove garlic, minced
1/4 tsp (1 mL) salt
Paprika and cayenne pepper
2 tbsp (30 mL) fi nely chopped fresh basil leaves

Steps:

  • 1 Preheat oven to 350°F (180°C). 2 Prick unpeeled potatoes in several places and place on a rimmed baking sheet. Bake until very tender, from 1 to 1¼ hours. Set aside until cool enough to handle. Then peel or scoop flesh out of skins and cut into chunks. 3 Pulse potatoes in a food processor along with butter, garlic, salt and pinches of paprika and cayenne until as smooth as you like. Or put potatoes through a food mill or mash; then mix in butter, garlic, salt and seasonings. Stir in basil. Taste and add more butter, salt or basil if needed. 1/4 cup packed fresh basil leaves, snipped

Steps:

  • Place garlic in an individual soufflé dish or ramekin. Drizzle oil over garlic. Bake in a 350° F. oven about 20 minutes or till garlic is very soft; cool. Peel the garlic, discarding skins and reserving oil. Meanwhile, peel and cut up the potatoes. Cook, covered, in boiling salted water for 20 to 25 minutes or till tender; drain.
