4 tablespoons olive oil
½ cup parmesan cheese
salt, to taste
2 teaspoons italian seasoning
2 teaspoons garlic powder
2 teaspoons paprika

Steps:

  • Slice the potatoes into wedges.
  • Place potato wedges in a large bowl. Drizzle olive oil and toss to coat. Sprinkle potato wedges with shredded cheese and toss again.
  • In a small bowl, mix salt, Italian seasoning, garlic powder, and paprika. Sprinkle seasoning onto potato wedges and toss to coat.
  • Place potato wedges on a baking sheet with skin-sides-down.
  • Bake for 40 minutes at 400˚F (200˚C ) until potatoes are fork-tender and golden.

4 medium baking potatoes, scrubbed
2 tablespoons olive oil
2 teaspoons garlic salt, or to taste
salt and pepper to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Pour olive oil into a plastic bag. Measure the garlic salt and pepper onto a plate, and stir around a little. Coat each potato with olive oil by placing in the bag, and moving it around. Remove from the bag, and dip into the seasoning. Rub seasoning into the potato to coat. Place the potatoes directly on the oven rack.
  • Bake for 1 hour in the preheated oven, or until the potatoes feel soft when you squeeze them.

2 -4 sweet potatoes or 2 -4 yams
1 -2 tablespoon olive oil
1 -2 tablespoon garlic granules (to taste)
1/4 cup parmesan cheese (to taste)
2 pinches sea salt (to taste)

Steps:

  • Preheat oven to 450
  • Cut up sweet potatoes into wedges,rounds or thin strips.
  • In a large bowl add the fries. Coat them with oil. You may substitute just water if desired. Then add the garlic granules,parmesan and sea salt.
  • Spay a cookie sheet with pam or oil and lay fries out on top.
  • Bake for 10 mins then turn them over. Put back in the oven for 10 more minutes. If you have thicker fries you may need an additional 5-10 minutes baking time.

4 sweet potatoes (peeled and cut into thin fires)
1 teaspoon ground cumin
1 teaspoon dried oregano

  • Potatoes -- Two important things to note when making these. First. Cut all the fries approximately the same size. Second, make sure to cook directly on the cookie sheet. No foil or parchment paper. After cutting the sweet potatoes fries add to a medium size bowl with the olive oil and seasoning and toss well to combine. Add to the cookie sheet and make sure then are not laying on top of one another. They need some space so they can brown up.
  • Bake -- In a 425 degree oven bake them for 15 minutes and then flip. Guys, they will be soft, they aren't done but be careful flipping them. Bake another 20 minutes until crispy.
  • Dip -- As the fries bake, make the dip. Just mix it all in a small bowl and refrigerate. Nothing more. Grating the onion is important as it gives you a lot more flavor. Just enjoy, these are a great change from the average french fries.

1 medium russet potato
1 small sweet potato

  • In a small saucepan, heat oil, garlic, thyme, and oregano over medium-low heat for 15 minutes. If garlic starts to bubble, turn heat to low. Remove from heat. Let stand at room temperature until cool. Remove garlic and herb sprigs from the oil. Set aside 2 tablespoons of the oil. (Store the remaining oil in an airtight container in the refrigerator for up to 1 week and use in place of olive oil in recipes.) 2. Preheat oven to 425 degrees F. 1 Tbsp vegan mayonnaise
1 sprig(s) scallions
3 clove garlic
dash cayenne pepper & paprika

  • 1. Wash large potato then set aside to dry
  • 2. Preheat oven 400 degrees 15 minutes
  • 3. wrap each potato in aluminum foil
  • 4. Place potato in oven-Bake at 375 degrees for 2 hrs.
  • 5. Remove from oven when soft
  • 6. Cool 10 minutes then scoop out softened potato leaving 1/8 skin for baking crisp
  • 7. Place on pan with sides touching to insure baking into the shape of a bowl

1 pound russet potatoes, scrubbed (about 2 large potatoes)
3/4 cup whole blanched almonds
1/2 cup extra-virgin olive oil, plus extra for drizzling
8 garlic cloves, finely chopped
1/3 cup freshly squeezed lemon juice, from 2 large lemons
2 tablespoons white wine vinegar
Kosher salt and freshly ground black pepper
Chopped fresh chives, for garnish (optional)

Steps:

  • Preheat oven to 400 degrees F. Bake the potatoes until fork tender, about 1 hour. Cool, peel, discarding the skins, and break the potatoes into pieces.
  • Process the almonds, olive oil and garlic in a food processor into a paste. 6 medium sized baking potaoes
1 whole garlic bulb
1t EVOO
2T unsalted butter softened
1/2 cup skim milk
1/2 cup low fat buttermilk
1 1/2t fresh rosemary, minced
1/2t salt
1/2t ground black pepper
dash of paprika

Steps:

  • Palce the potatoes in a baking sheet and bake at 400 for 45-55 minutes or until tender. Meanwhile, remove the outer papery skin from the garlic, drizzle with oil and wrap in 2 sheets heavy duty foil. Add the garlic to the oven for 30-35 minutes or until softened. Let garlic and tatoes cool for about 10 minutes. Once cool enough to handle, cut a thin slice off the top of each potato and discard. Scoop out the pulp until just a thin shell remains. Place the pulp in a large mixing bowl, add the softened butter and mash. Cut the top off the garlic head, leaving the root intact, and squeeze the softened garlic into the bowl with the tatoes, add the milk, buttermilk, rosemary, salt, and pepper and mix well. Spoon the potato mix back into the shells and place back on the baking sheet. Bake at 425 for 20-25 minutes or until heated through. Remove from oven and add a dash of paprika to each top.
