This is a recipe I came up with myself. It is great with most Italian dishes. It can be doubled as needed.

½ cup butter, melted
1 teaspoon garlic salt
¼ teaspoon dried rosemary
⅛ teaspoon dried basil
⅛ teaspoon dried thyme
⅛ teaspoon garlic powder
1 tablespoon grated Parmesan cheese
1 (1 pound) loaf French bread, halved lengthwise

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a small bowl, mix butter, garlic salt, rosemary, basil, thyme, garlic powder and Parmesan cheese.
  • Spread each half of the French bread with equal portions of the butter mixture. Sprinkle with additional Parmesan cheese, if desired.
  • Place bread halves, crusts down, on a medium baking sheet. Bake in the preheated oven 10 to 12 minutes, or until the edges are very lightly browned.

This is one of those recipes that you can taste with your imagination! I haven't made it yet, but I will soon. I just know it is going to be really yummy with my next Italian dinner!

Number Of Ingredients 10

1 1/2 cups sourdough starter
1/2 cup milk
2 tablespoons cooking oil
1 tablespoon honey
4 cups bread flour
2/3 cup grated parmesan cheese
3 cloves garlic, minced or pressed
1 teaspoon salt
1 egg white (optional)
1 tablespoon water (optional)

Steps:

  • Starter must be proofed overnight or up to 12 hours before making bread.
  • Add ingredients to bread machine in the order recommended by your machine's manufacturer.
  • Select Dough cycle and start.
  • When dough has finished kneading, but before it goes into the rise, remove from machine and shape into loaf or loaves.
  • You could do standard loaves, or a free-form round or oval, or elongate.
  • Let bread rise until double in bulk, covered.
  • For a nice touch, lightly beat 1 egg white with 1 Tbsp water and brush top of loaf with this egg wash, and then sprinkle with fresh Parmesan, finely shredded.
  • Bake at 375 degrees F for 30 to 45 minutes, depending on the size of loaves.
  • NOTE: Roasted garlic could be used, in which case I would increase the amount because it is milder in flavor.

This sourdough garlic bread is a delicious twist on traditional garlic bread. It's made with sourdough bread, butter, and plenty of garlic flavor. It makes an easy side to so many dishes!

1 (16 oz.) loaf white sourdough bread
1/2 cup (1 stick) unsalted butter, softened at room temperature
2 cloves fresh garlic, grated with Microplane or pressed
1/4 tsp. garlic powder
1/4 tsp. Italian seasoning
1/4 tsp. kosher salt
2 Tbsp. fresh minced parsley
1/4 cup freshly grated Parmesan cheese
Fresh black pepper, to taste

Steps:

  • Preheat oven to 400 F.
  • Cut the loaf in half lengthwise. In a small bowl, mix butter, fresh garlic, garlic powder, Italian seasoning, salt, parsley, and Parmesan. Add fresh black pepper, to taste. Spread butter over the two bread halves.
  • Lightly wrap each bread halve in aluminum foil and place on a baking sheet cut side up. Bake for 10 minutes. Unwrap the bread, and bake for an additional 5-8 minutes or until toasty and golden around the edges. The middle of the bread should be slightly dried out but soft and not wet. For extra crispy top, broil the bread for 30-45 seconds or until desired crispness. Keep an eye as it burns easily!
  • Slightly cool and slice into 1-inch thick slices with a bread knife. Serve immediately.

ROSEMARY-PARMESAN SOURDOUGH BREAD

While visiting my local Quiznos decided to try to make my own. Used a couple of my favorite Zaar recipes as the starting point. Made two loaves yesterday . . . friends stopped in and we devoured one loaf with cheese. It was deemed ready for the public! Next time may try adding a couple tablespoons of sun dried tomatoes.

Yield 2 1 pound loaves

Number Of Ingredients 11

1 1/2 cups sourdough starter
1/2 cup milk
2 tablespoons oil
1 tablespoon honey
3 cups bread flour (depending on the consistency of the starter more may be needed)
2/3 cup grated parmesan cheese
1 tablespoon fresh rosemary
1 teaspoon salt
1 egg white
1 tablespoon water
3 tablespoons parmesan cheese, finely grated

Steps:

  • Proof starter over night before making bread.
  • To Kitchen Aid mixing bowl add all the ingredients (except toppings).
  • Using dough hook mix until a satin ball is formed (approximately 12-15 minutes); adding additional flour as needed.
  • Remove dough to greased bowl, turning once to coat.
  • Cover and allow to rise until doubled (approximately 1 hour).
  • Form into 1 large or 2 smaller free-form loaves and place on parchment paper or pizza peel dusted with corn meal.
  • Cover and allow bread to rise until double in size.
  • Preheat oven to 375 dgrees.
  • Lightly beat 1 egg white with 1 tablespoon water.
  • Brush top of loaves with egg wash and then sprinkle with fresh parmesan.
  • Bake a 375 deghrees for 30-45 minutes, depending on the size of the loaves.

GARLIC BREAD



Garlic Bread image

You may have once struggled with dry or greasy breads reeking of burned or raw garlic, but it's time to put that behind you. This is a versatile recipe, as readily made with thin baguettes, as it is with rustic sourdoughs and airy Italian loaves. Cutting the bread like a Hasselback potato keeps the butter from seeping out and allows the garlic to infuse the bread with its flavor without scorching. But, if it's an extra cheesy garlic bread you're looking for, slip a little mozzarella into each slit.

1/2 cup/8 tablespoons unsalted butter (1 stick), melted
4 fat garlic cloves, grated
1/2 cup Parmesan, grated
1/4 cup firmly packed chopped flat-leaf parsley
1/4 teaspoon kosher salt
Black pepper
1 baguette or rustic crusty loaf
1/2 pound fresh mozzarella, thinly sliced (optional)

Steps:

  • Heat the oven to 400 degrees. In a small bowl, stir together the butter, garlic, Parmesan and parsley. Add the salt and generously season with pepper. Set aside while you cut the baguette.
  • Cut deep slits into the baguette, 1-inch apart - don't cut all the way through the loaf - and place the baguette on a large piece of foil. Using a teaspoon or an offset spatula, generously spread the seasoned butter inside each slit. Make sure to reach the bottom of the slit; don't be shy here.
  • Wrap the baguette in the foil, place on a baking sheet and bake for 15 minutes. Remove the baguette from the oven and unwrap the top (leave the bread on the foil). If you're adding mozzarella, use the offset spatula or spoon to gently open each slit and tuck a piece of mozzarella in (it's O.K. if the cheese pops out from the top a little). Return bread to the oven and bake until crisp and golden on top, another 5 minutes. Slice with a serrated knife (or tear with your hands) and serve at once.
