Pasta dish with a great garlic-lemon flavor and Florida MicroGreens' Arugula!

1 lbs spaghetti, dry or zucchini noodles (zoodles)
1/2 cup olive oil (extra virgin)
2 tbsp butter
1 tbsp minced garlic
1 tbsp grated lemon peel
1/4 cup fresh lemon juice
1/4 cup chicken broth
2 tsp dried basil
1/4 tsp salt
1/8 tsp freshly ground pepper
1 cup arugula microgreens
1/2 cup chopped fresh parsley
Accompaniments: freshly grated Parmigiano-reggiano, sea salt, freshly ground pepper, squeeze of lemon

Steps:

  • Cook spaghetti in a large pot of salted boiling water until al dente. Or prepare your zucchini noodles.
  • Meanwhile, in small saucepan, heat oil and butter over medium-low heat.
  • Stir in garlic, lemon peel, lemon juice, broth, basil, salt and pepper and raise heat to medium-high.
  • Bring to a gentle simmer, reduce heat and simmer 3 minutes.
  • Drain pasta, return it to its cooking pot and immediately pour the heated sauce over it, along with the arugula and parsley.
  • Use tongs to gently toss the pasta and sauce together.
  • Transfer pasta to heated serving bowl.
  • Top with grated Parmigiano-reggiano, a light sprinkling of sea salt and freshly ground pepper and a squeeze of lemon juice.

1 lb spaghetti or long noodles (if using bucatini, go for a 12 oz package)
1 garlic clove, lightly smashed and halved (don't chop it!)
Zest of two large lemons
Freshly squeezed lemon juice from two large lemons
5 TBSP extra virgin olive oil
Kosher or sea salt, to taste
A generous amount of cracked black pepper
1 cup finely grated parmagiano or pecorino romano, plus more for garnish
1 handful arugula

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook according to the package's instructions.
  • While the pasta boils, choose a large bowl for serving. You'll be using this bowl to toss the pasta as well. Take the halves of your lightly smashed garlic and rub the garlic over the bottom and sides of the plate to coat it with flavor. Once the bowl is nicely coated with garlicky goodness, discard the garlic.
  • Add the freshly squeezed lemon juice; gradually drizzle the extra virgin olive oil into the lemon juice with a slow and steady stream while whisking. Continue to whisk until the the oil and juice have emulsified. Whisk in a pinch of salt and half of the lemon zest.
  • Drain the pasta when it's done and set aside. Add the cheese to the serving bowl with the oil and lemon, crack a generous amount of black pepper over the cheese, and place the hot noodles over the cheese. Carefully but thoroughly toss the pasta around the cheese and sauce with tongs until evenly coated. Add the arugula, and give the pasta one more toss.
  • Grate some extra cheese over the pasta before serving, as well as the remainder of the lemon zest, and some more cracked black pepper. Serve immediately.

½ lb. of spaghetti
½ cup, fresh lemon juice
2 tablespoons, lemon zest
½ cup, heavy cream
1 cup of freshly grated Parmigiano Reggiano
1 handful of baby arugula
1 large garlic clove, crushed
2 tablespoons butter
olive oil
fresh ground pepper

Steps:

  • Bring a large pot of salted water to a boil, add the pasta and cooke al'dente.
  • Drizzle the bottom of a skillet with olive oil, add the butter and when it melts throw in the garlic, don't let it burn or get dark.
  • Add the heavy cream letting it simmer a bit.
  • Add the juice and half of the zest, simmer until it reduces a bit.
  • Scoop the pasta right into the skillet, reserving some pasta water.
  • Toss in the Parmesan and the arugula, tossing and coating, adding some of the pasta water to loosen the sauce.
  • Place into a serving dish, adding grated black pepper, the rest of the zest and additional shards of parmesan for garnish.
  • Enjoy!

4 tablespoons olive oil
2 cloves garlic, minced
1 pint cherry tomatoes, halved
salt and freshly ground black pepper to taste
1 (5 ounce) package arugula, torn
2 tablespoons shaved Parmesan cheese, or more to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Meanwhile, heat olive oil in a skillet over medium-low heat and cook garlic until translucent and fragrant, about 2 minutes. Add cherry tomatoes. Increase heat, cook, and stir until lightly browned, 5 to 7 minutes. Season with salt and pepper.
  • Remove skillet from heat and mix in arugula. Mix in cooked spaghetti and drizzle with olive oil. Serve immediately with Parmesan cheese.

SPAGHETTI WITH LEMON, GARLIC AND PECORINO

Two 8-ounce pieces Pecorino-Romano, such as Locatelli
1 head garlic, broken down into cloves and peeled
Kosher salt
1 pound spaghetti
1/2 stick unsalted butter
1/4 teaspoon red chile flakes
3 tablespoons lemon juice
2 tablespoons chopped fresh Italian parsley
2 cups baby arugula
Extra-virgin olive oil, for finishing
One 4-ounce piece burrata

Steps:

  • Add the Pecorino-Romano pieces to a medium saucepan and cover with water (about 2 cups). Bring the water to a boil, then reduce the heat to medium-low and simmer for 30 minutes.
  • Meanwhile, add the garlic cloves to a small saucepan and add just enough water to cover. Bring the mixture to a boil, then turn off the heat and strain. Add the garlic cloves back to the same saucepan and repeat the process 2 more times. (This will bring out the natural sweetness of the garlic.) Allow to cool to the touch, then carefully shave very thinly on a mandoline.
  • Bring a large pot of salted water to a boil. Add the pasta and cook to very al dente according to the package directions.
  • Meanwhile, add the butter to a large saute pan and turn the heat on medium-high. Once the butter begins to melt, add the garlic and chile flakes. Let the butter melt and the garlic to fully bloom in the butter, about 1 minute. Strain the cheese stock directly into the saute pan, then stir and allow to come to a simmer. Add the cooked pasta and lemon juice to the sauce and finish cooking the pasta in the sauce. Add the chopped parsley and toss to combine.
  • Pour the pasta into a serving bowl and top with the arugula, then drizzle with olive oil and salt to taste. Top with the burrata. Gently open the burrata just a touch, then serve immediately.

ANGEL HAIR PASTA WITH FRIED CHILI FLAKES, LEMON AND ARUGULA

1/2 cup extra-virgin olive oil, plus 2 tablespoons
2 cups panko bread crumbs
Kosher salt and freshly ground black pepper
3 cloves garlic, slivered
1 teaspoon dried red pepper chili flakes
1 lemon, zested and juiced
1 pound angel hair pasta
6 cups lightly packed wild arugula (Israeli if possible)
1/2 cup grated Parmigiano-Reggiano

Steps:

  • In a dry skillet over low heat, add 2 tablespoons of olive oil and the panko bread crumbs and toast until golden brown. Season with salt and pepper, to taste. Put into a bowl and set aside.
  • Set the skillet pan back over medium heat and add the remaining 1/2 cup of olive oil, the garlic and the red pepper flakes. Saute for 2 to 3 minutes to infuse the oil and cook the garlic. Season with salt and pepper, to taste. Add the lemon zest and remove from the heat.
  • In a large pot of well-salted boiling water, over medium heat, add the angel hair pasta and cook for 3 to 4 minutes. Drain and add to a large mixing bowl. While still warm, toss in the arugula, the infused oil, the bread crumbs and the cheese. Using tongs gently fold everything together and transfer to a large serving bowl or platter to serve. If desired, serve with braised braciole.

PASTA WITH ROASTED GARLIC, PANCETTA AND ARUGULA



Pasta With Roasted Garlic, Pancetta and Arugula image

For this pasta, garlic is roasted in the oven to bring out its sweetness, then sautéed with bold flavors: salty pancetta, fiery chile flakes and a squeeze of lemon. Chopped peppery arugula and a pound of penne round out the dish. It takes 40 minutes to an hour to roast the garlic, but you can do it a day in advance, and it is worth it for the final, honeyed results.

6 fat bulbs green garlic or 4 heads regular garlic
3 tablespoons extra-virgin olive oil, more for drizzling
Kosher salt
Freshly ground black pepper
1 pound penne rigate
1/2 pound pancetta, chopped
1 large pinch crushed red pepper flakes
1 teaspoon freshly squeezed lemon juice, or to taste
2 large bunches arugula, roughly chopped (about 5 cups)
Grated Parmesan cheese, for serving

Steps:

  • Heat oven to 375 degrees. Trim hairy root and green stem from green garlic, or trim 1/4-inch off top of regular garlic, making sure to expose all cloves.
  • Place garlic in a small, shallow baking dish, root side down, and drizzle each with a little olive oil. Cover dish with foil. Roast until cloves or bulbs are golden brown, about 40 minutes to 1 hour (green garlic will cook faster than regular garlic). If bottom of dish starts to burn before garlic is roasted, add one tablespoon water. Transfer to a rack to cool. Garlic can be roasted up to one day ahead; wrap well and store in refrigerator.
  • Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente.
  • While pasta cooks, heat 3 tablespoons olive oil in a large skillet on medium-high heat. Add pancetta and red pepper flakes. Sauté until pancetta is golden and crisp around edges, about 5 minutes.
  • Peel outside layer of green garlic, or if using regular garlic, squeeze cloves from their papery skins. Chop roasted garlic, and add to skillet with lemon juice and a large pinch of salt and pepper. Sauté for 2 minutes.
  • Drain pasta, reserving 1/2 cup cooking water. Add drained pasta and arugula to skillet, place over low heat, and toss until arugula wilts. Add just enough cooking water to scrape up brown bits in pan (do this 1 tablespoon at a time). Taste and adjust seasoning, then serve with Parmesan.
