GARLIC AND HERB PULL APART BREAD

Garlic and Herb Pull Apart Bread image

This was fantastic with spaghetti, my family loved it... in fact my husband tried to eat the whole thing. Keep in mind though, we love garlic at our house. If you are not a fan of strong garlic, streamline the amount until you are comfortable with it.

GARLIC-AND-HERB STAR BREAD

Garlic-and-Herb Star Bread image

This pillowy soft bread comes together quickly without any special equipment. It would work well with a variety of fillings, but the soft garlic cheese punched up with smoky chiles, fresh herbs and lemon is a bright combo against the buttery bread.

Provided by Food Network Kitchen

Categories     side-dish

Time 3h

Yield 8 to 10 servings

Number Of Ingredients 15

1/2 cup warm water (about 110˚ F)
2 teaspoons sugar
1 1/4-ounce packet active dry yeast (2 1/4 teaspoons)
3 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon baking powder
1 teaspoon fine salt
1 1/2 sticks (12 tablespoons) cold unsalted butter, cut into small pieces, plus more for the pan
1/2 cup milk
1 5.2-ounce package soft garlic-and- herb cheese (such as Boursin)
1 tablespoon finely chopped jarred Calabrian chile peppers
1 tablespoon chopped fresh parsley
1 teaspoon fresh thyme, finely chopped
1/2 teaspoon finely grated lemon zest
1 large egg, beaten
Flaky sea salt, for topping

Steps:

  • Stir the warm water and sugar together until dissolved, then stir in the yeast; set aside until foamy, about 5 minutes. Meanwhile, whisk the flour, baking powder and fine salt in a large bowl.
  • Add the butter to the flour mixture and work it in with your fingertips until the butter is in pea-size pieces. Make a well in the center of the flour mixture and add the yeast mixture and milk. Stir with a wooden spoon until the flour is completely moistened and the dough looks like a shaggy ball, switching to your hands and gently kneading to bring the dough together, if necessary. Cover the bowl and let the dough rise at room temperature until doubled in size, 1 to 1 1/2 hours.
  • When the dough is almost ready, make the filling: Combine the cheese, chiles, parsley, thyme and lemon zest in a small bowl. Mash and stir together with a small rubber spatula until smooth and spreadable. Set aside.
  • Turn out the dough onto a lightly floured surface and briefly knead until smooth, three or four times. Pat until about 1 inch thick, then fold into thirds like a letter and pat until 1 inch thick again. Rotate the dough 90 degrees and repeat folding and patting two more times. Divide into 2 equal pieces.
  • Lightly butter an upside-down rimmed baking sheet (or a rimless baking sheet). Roll out 1 piece of dough into an 11-inch round on a floured surface and transfer to the pan. Spread with the filling, stopping about 3/4 inch from the edge. Roll out the second piece of dough into an 11-inch round and place on top of the first. Pinch and press the edges of the dough together to seal.
  • Center the rim of a drinking glass (about 3 inches in diameter) in the middle of the dough; gently press to mark the center. At the 12 o'clock mark, cut through the dough with a very sharp knife from the glass to the edge, leaving the center circle uncut. Repeat at the 3 o'clock, 6 o'clock and 9 o'clock points on the circle to make 4 quarters. Halve each quarter to make 8 equal wedges; halve those to make 16 wedges.
  • Lift the edges of 2 wedges that are next to each other and twist them away from each other twice. Pinch the ends together to make a pointed tip. Repeat with the remaining pairs of wedges. Remove the glass and cover the dough with plastic wrap. Refrigerate until the filling is firm and the dough has puffed and risen slightly, 45 minutes to 1 hour.
  • Meanwhile, preheat the oven to 400˚ F. Uncover the dough and re-pinch any ends that came apart. Brush all over with the beaten egg and sprinkle with flaky salt. Bake until golden brown all over, especially around the center circle, 25 to 30 minutes. Let cool a few minutes on the baking sheet, then carefully slide onto a rack to cool completely. Serve at room temperature.

ITALIAN GARLIC AND HERB SEASONED PANINI - FOCACCIA BREAD (ABM)

Italian Garlic and Herb Seasoned Panini - Focaccia Bread (abm) image

This is an adaptation from a recipe posted on hungrybrowser.com in the Uncle Phaedrus section. I used my breadmaker to put the dough together and then hand shaped the loaves for baking. To use for a panini sandwich, slice each loaf in eighths (rendering 4 sandwiches per loaf), fill with your favorite ingredients and use your panini maker or grill with press to prepare a delicious sandwich. Mangia!

Provided by CobraLimes

Categories     Yeast Breads

Time 40m

Yield 2 loaves

Number Of Ingredients 13

2 1/2 teaspoons active dry yeast
2 cups warm water
5 cups all-purpose flour or 5 cups bread flour
1 teaspoon salt
1 tablespoon olive oil
4 cloves garlic, peeled and chopped
1 teaspoon dried oregano
1/2 teaspoon dried rosemary or 2 teaspoons chopped fresh rosemary
1/8 teaspoon dried marjoram (optional)
2 teaspoons chopped fresh Italian parsley (optional)
1/2 teaspoon coarse salt
1/4 teaspoon black pepper
1/4 teaspoon lemon pepper

Steps:

  • Prior to placing ingredients in breadmaker, fill the container with water.
  • It needs to accomodate at least 11 cups of water.
  • If it has that capacity, you can dump the water out and proceed.
  • The dough makes a large amount and does rise to the top of the container.
  • Place all ingredients in bread machine in order suggested by the manufacturer.
  • If desired, you can hold off placing the herbs into the machine and wait until forming the loaves to place on top of bread.
  • Set machine to dough cycle.
  • When cycle is complete, punch dough down and knead a few times on a lightly floured surface (the dough should remain somewhat sticky).
  • Place dough in oiled bowl, turn to coat with the oil, cover, and allow to rise again until doubled, about 1 hour.
  • Ten minutes prior to rising is finished preheat oven to 400°F Lightly grease two baking sheets (I line them with Silpat sheets).
  • After dough has risen the second time, press air out and divide dough in half (dough will still be sticky, do not use more flour).
  • Press (using your hands) each half with a light touch into approximately an 8 x 11-inch rectangle on the individual prepared pans (rustic looking is okay, but don't press too flat).
  • Brush with olive oil.
  • If you haven't already added the herbs into the dough, scatter garlic, oregano, rosemary, marjoram, peppers, and parsley over surface of each and press lightly.
  • Sprinkle with salt.
  • Bake about 20-30 minutes or until a light golden.
  • Serve warm or slice to use for a panini sandwich and grill.
  • *Notethat preparation time doesn't include about 3 hours of rising time.

MOZZARELLA-STUFFED GARLIC-AND-HERB BREAD

Mozzarella-Stuffed Garlic-and-Herb Bread image

For this surefire crowd-pleaser, we singled out the best part of a stuffed-crust pizza: the crust, of course. Load an easy dough up with thinly sliced low-moisture mozzarella, then give it a generous flurry of garlic, Italian seasoning, fresh parsley, sesame seeds, and grated Parmigiano. After baking, seal the deal with a side of marinara sauce.

Provided by Greg Lofts

Time 1h40m

Number Of Ingredients 13

2 2/3 cups unbleached bread flour, plus more for dusting
1 1/2 teaspoons active dry yeast (not rapid-rise)
2 teaspoons kosher salt (we use Diamond Crystal)
1 cup warm water
6 tablespoons extra-virgin olive oil, divided, plus more for drizzling
12 ounces whole or part-skim low-moisture mozzarella, such as Polly-O, thinly sliced
1/2 ounce Parmigiano-Reggiano, finely grated (1/3 cup)
2 tablespoons minced garlic (from 5 to 6 cloves)
1 1/2 teaspoons dried Italian seasoning
3 tablespoons finely chopped fresh parsley
1/4 to 1/2 teaspoon red-pepper flakes
2 tablespoons sesame seeds
Warm marinara sauce, for serving (optional)

Steps:

  • In a bowl, whisk together flour, yeast, and salt. Make a well in center of mixture; add warm water and 2 tablespoons oil to well. Gradually stir flour mixture into wet mixture to form a ragged dough. Transfer to a floured work surface.
  • Knead with floured hands until dough is tacky but no longer sticky and springs back when pressed with a finger, about 5 minutes. Transfer to a bowl drizzled with oil, turning dough to evenly coat. Cover and let proof at room temperature until doubled in volume, 1 to 1 1/2 hours.
  • Preheat oven to 450°F with a rack in lowest position. Punch down dough, transfer to a lightly floured work surface, and cut in half. Stretch one piece of dough, working outward from center, into an oval, approximately 9 by 13 inches. Brush 2 tablespoons oil onto a rimmed baking sheet. Place dough on sheet; top evenly with mozzarella, leaving a 1-inch border of dough around edges.
  • Stretch second piece of dough on floured work surface to roughly same oval shape. Place over mozzarella, gently pressing to remove excess air from between doughs. Fold edge of bottom dough up and over edge of top dough, pinching to seal edges together. Sprinkle top evenly with Parmigiano; drizzle with remaining 2 tablespoons oil.
  • Stir together garlic, Italian seasoning, parsley, red-pepper flakes, and sesame seeds; sprinkle evenly over dough. Cut several steam vents in top of dough at 2-inch intervals.
  • Bake until dough is golden brown in places and just cooked through, 18 to 20 minutes. (If dough puffs in places while baking, pierce with the tip of a knife to release steam.) Transfer bread from baking sheet to a wire rack and let cool a few minutes. Slice and serve hot, with marinara alongside for dipping.

NIF'S CHEESY FRESH HERB AND GARLIC BREAD

Nif's Cheesy Fresh Herb and Garlic Bread image

I came up with this because I had some fresh herbs on hand and wanted to make garlic bread. This is what I got! You can also use a teaspoon of each kind of dried herbs if you don't have fresh, but it won't be quite the same. Also, use whatever cheese you have on hand - this is just what I had. I hope you like it. Enjoy!

Time 30m

Yield 8 serving(s)

Number Of Ingredients 12

1 large loaf crusty bread
1/2 cup mayonnaise (I use half fat Hellmann's)
1/4 cup butter, room temperature
2 fresh garlic cloves, minced
1 tablespoon fresh rosemary, finely chopped
1 tablespoon fresh basil, finely chopped
1 tablespoon fresh parsley, finely chopped
1 tablespoon green onion, thinly sliced
salt and pepper
1 cup low-fat cheddar cheese, grated
1/2 cup part-skim mozzarella cheese, grated
1/2 cup fresh parmesan cheese, grated

Steps:

  • Cut bread in half horizontally. Open loaf.
  • Mix mayo, butter, garlic, rosemary, basil, parsley, green onion, salt and pepper.
  • Mix cheeses together in a bowl. Put half of the cheese mixture in the mayo mixture and stir.
  • Spread half of the mayo mixture on each half of the loaf. Sprinkle remaining cheese on top.
  • I placed this over indirect heat in my BBQ for about 20 minutes, until heated through and the cheese was melted. I was cooking the steak on the other half of the BBQ so it was easy to keep an eye on it.
  • You could bake this in the oven at 350F, but I didn't want to list how long you would bake it for because I didn't make it that way. I would guess 15 minutes.
