Fresh green beans and baby red potatoes are lightly seasoned and roasted into an easy side dish you can put together in a snap.

olive oil cooking spray
1 pound baby red potatoes
1 pound fresh green beans, trimmed
1 teaspoon salt
1 teaspoon garlic powder
½ teaspoon ground black pepper
½ teaspoon dried parsley

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a rimmed baking sheet with cooking spray.
  • Cut potatoes in half if they are golf-ball-sized or larger. Lay potatoes and green beans in a single layer on the prepared baking sheet and spray with cooking spray. Sprinkle salt, garlic powder, pepper, and parsley on top.
  • Bake in the preheated oven until potatoes are tender, 25 to 30 minutes.

Garlic and Bay Leaf Infused Red Patatoes and Green Beans image

This is a great side dish! It is sauteed in Olive Oil with Bay Leaf and Garlic. It is very light and a healthy alternative to potatoes and butter.

Number Of Ingredients 6

10 -15 red potatoes (cut in halves or quarters if larger)
14 1/2 ounces one can French style green beans
1 -2 tablespoon minced garlic
5 bay leaves
olive oil
cracked black pepper

Steps:

  • Boil your cut potatoes in water for about 10 minutes or until cooked through.
  • Add Oilve Oil to large sautee pan (enough to coat).
  • Add garlic and bay leaves to infuse the olive oil. Constantly swirl bay leaf to get the flavor through out the oil.
  • Add the drained can of green beans and sautee (these will not brown, just want to coat the green beans in the garlic and bay leaf oil for taste) and warm them.
  • After potatoes are cooked and drained add to oil/green bean mixture.
  • Add cracked black pepper throughout dish.
  • Toss and add to seperate serving bowl.
  • Delicious!
  • In my personal use, I add A LOT more garlic and bay leaf. Depending on how much you like the flavor, you should do the same. I have also added other herbs but the garlic and bay leaf are my favorite.
  • If you're not counting calories, you can always drizzle more olive oil to make the dish tastier, either during the sautee or after!

1 medium head garlic - peeled and sliced
2 (14.5 ounce) cans green beans, drained
salt and pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • In a large skillet over medium heat, melt butter with olive oil; add garlic, and cook until lightly browned, stirring frequently. Stir in green beans, and season with salt and pepper. Cook until beans are tender, about 10 minutes. Remove from heat, and sprinkle with Parmesan cheese.

1 1/2 pounds Yukon Gold potatoes, peeled and cut into 1-inch pieces
3 garlic cloves, peeled
1/3 cup extra-virgin olive oil plus additional for drizzling
1 1/2 pounds green beans, trimmed

Steps:

  • Cook potatoes and garlic in a large pot of boiling salted water (3 tablespoons salt for 6 quarts water), uncovered, until tender, 12 to 15 minutes. Transfer to a large bowl with a slotted spoon and coarsely mash with oil and 1/4 teaspoon salt. Keep warm, covered.
  • Cook green beans in boiling water, uncovered, until tender, 6 to 10 minutes (beans may not be bright green). Drain, then stir into mashed potatoes in bowl. Drizzle with oil.

1 garlic clove, crushed
2 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar, regular flavor

  • Cook green beans in boiling water that has been salted, for 6 minutes. Drain. Plunge beans in cold water and drain again.
  • Saute garlic in oil for 30 seconds over medium heat. Add green beans and saute an additional 3-4 minutes. Add balsamic vinegar, salt, and pepper. Saute 1 minute longer.
