RUSTIC GARDEN HERB BISCUITS

Yield 12 biscuits (1/4 cup rosemary butter).

Number Of Ingredients 20

3-3/4 cups all-purpose flour
6 tablespoons sugar
3 teaspoons baking powder
2 teaspoons dried minced onion
2 teaspoons minced fresh basil
2 teaspoons minced fresh parsley
1 teaspoon salt
1 teaspoon snipped fresh dill
1 garlic clove, minced
3/4 teaspoon baking soda
1/2 teaspoon minced fresh rosemary
1 cup cold butter, cubed
3/4 cup shredded Monterey Jack cheese
1-1/2 cups buttermilk
1/4 cup chopped roasted sweet red peppers
ROSEMARY BUTTER:
1/4 cup butter, softened
1 teaspoon honey
1/2 garlic clove, minced
Dash minced fresh rosemary

Steps:

  • Preheat oven to 350°. In a large bowl, whisk the first 11 ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in cheese. Add buttermilk and peppers; stir just until moistened., Drop mixture by 1/3 cupfuls into greased muffin cups. Bake 25-30 minutes or until golden brown. Cool 5 minutes before removing from pan to a wire rack., In a small bowl, mix remaining ingredients until blended. Serve warm biscuits with rosemary butter.

Number Of Ingredients 12

2-1/2 cups all-purpose flour
1 tablespoon sugar
1 package (1/4 ounce) active dry yeast
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup shortening
1 cup buttermilk
2 tablespoons water
1/4 cup finely shredded carrot
2 tablespoons minced fresh parsley
2 tablespoons finely chopped green onion

Steps:

  • In a large bowl, combine the flour, sugar, yeast, baking powder, baking soda and salt. Cut in shortening until mixture resembles coarse crumbs. , In a small saucepan, heat buttermilk and water to 120°-130°. Add buttermilk mixture, carrot, parsley and onion to yeast mixture; stir just until moistened., Turn onto a lightly floured surface; knead until a soft dough forms, about 6-8 minutes. Pat or roll out to 1/2-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 1 in. apart on ungreased baking sheets. , Bake at 450° for 8-10 minutes or until golden brown. Serve warm.

I came across this recipe in my Taste Of Home in the "Good Food That's Good For You" article, submitted by Kerry Dority. I think they sound so good and would be an excellent side to a big hot pot of chicken noodle soup.

Number Of Ingredients 12

2 1/2 cups all-purpose flour
1 tablespoon sugar
1 (1/4 ounce) packet active dry yeast
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup shortening
1 cup buttermilk
2 tablespoons water
1/4 cup finely shredded carrot
2 teaspoons dried parsley, minced or 2 tablespoons fresh parsley
2 tablespoons finely chopped green onions

Steps:

  • In a large bowl, combine the flour, sugar, yeast, baking powder, baking soda, and salt. Cut in the shortening until mixture resembles coarse crumbs.
  • In a small saucepan, heat the buttermilk and water to 110 degrees. Add the buttermilk mixture, carrot, parsley, and onion to the yeast mixture. Stir until just moistened.
  • Turn onto a lightly floured surface; knead until a soft dough forms, about 6-8 minutes.
  • Pat or roll out into a 1/2-inch thickness; cut with a floured biscuit cutter.
  • Place one inch apart on an ungreased baking sheet.
  • Bake at 450 degrees for 8-10 minutes or until golden brown. Serve warm.

Number Of Ingredients 12

2-1/4 cups biscuit/baking mix
1 cup shredded cheddar cheese
2 green onions, finely chopped
1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes
1 tablespoon minced fresh basil or 1 teaspoon dried basil
2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
1/2 teaspoon sugar
1/4 teaspoon garlic powder
2/3 cup plus 1 tablespoon 2% milk, divided
1/3 cup sour cream
2 teaspoons spicy brown mustard
1 large egg

Steps:

  • Preheat oven to 425°. In a large bowl, mix the first 8 ingredients. In a small bowl, whisk 2/3 cup milk, sour cream and mustard until blended. Add to baking mix mixture; stir just until moistened., Drop by 1/4 cupfuls 2 in. apart onto a greased baking sheet. In a small bowl, whisk egg with remaining milk; brush over tops. Bake 12-14 minutes or until golden brown. Serve warm.
