CRISPY GARBANZO BEANS

Two 15-ounce cans garbanzo beans, drained and rinsed
4 strips bacon
Salt
1 sprig fresh rosemary

Steps:

  • Spread out the garbanzos on a baking sheet and let them dry, uncovered, in the refrigerator overnight. (If you forget to let them dry overnight, it's okay; you'll just need to cook them longer.)
  • Place the bacon in a large skillet over medium-low heat and cook until browned and crispy, 4 to 5 minutes per side. Drain on a paper-towel-lined plate; reserve the fat in the pan. Eat the bacon as snack while you cook.
  • Preheat the oven to 400 degrees F.
  • Add the dried garbanzos to the pan with the rendered bacon fat. Season with a generous pinch of salt and add the rosemary. Cook over medium-low heat for about 2 minutes, then remove the rosemary sprig. Transfer the garbanzos to a baking sheet and bake until crispy, 35 to 40 minutes, stirring every 10 minutes. (If you did not dry the garbanzos overnight, bake them for 45 to 50 minutes.)
  • Let cool to room temp before serving.

This is a great fix for the period right before grocery day; if you've got a can of chickpeas on hand, you've got a quick and easy snack!

1 (15.5 ounce) can garbanzo beans, drained and rinsed
¼ onion, grated
½ lemon, juiced
1 clove garlic, crushed
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
¼ teaspoon ground cayenne pepper
5 tablespoons olive oil
¼ cup frozen green peas, thawed

Steps:

  • In a bowl, mix the garbanzo beans, onion, lemon juice, garlic, oregano, salt, black pepper, and cayenne pepper. Stir in the olive oil, and adjust seasonings to taste. Mix in the peas. Cover, and marinate in the refrigerator at least 1 hour.

this is a breakfast that my mom has made for us since we were young. hope you guys enjoy it like i do.

5 medium eggs
1 large tomato diced
1 can(s) organic garbanzo beans
1/2 medium diced onion
1 large chopped jalapeno
1/4 cup(s) cotija cheese
2 tablespoon(s) cooking oil
- salt and pepper to taste
- cilantro for decoration

Steps:

  • In a non stick pan add oil to medium-hi heat. Drain the juice out of the garbanzo beans can, rinse them off and add them to the pan and let cook for about 5 min.
  • add the tomato, onion, jalapeno, and salt and pepper to the pan and saute for 2 min or so.
  • in a plate whisk eggs together and then add to the pan.
  • once eggs are cooked turn off the flame and add the cheese on top of garbanzos and put a lid on it until cheese is melted.
  • once cheese is melted sprinkle cilantro for garnish.
  • we usually serve it with a side re-fried beans,corn tortilla, and salsa. Hope you guys enjoy it.
