GROUND TURKEY CHILI STEW

1 Tbsp coconut oil
2 large onions cut into 1/4 inch cubes
1 lb ground turkey
1 tsp course salt
1 tsp chili powder
5 clove garlic, minced or pressed
2 c diced potatoes, i used yukon gold
3 ribs celery, chopped
1 13 oz. container roasted mild green chilies
8 chopped pepperoncini chilies, seeds removed
1/2 bunch asparagus, fresh, chopped
6 slice sliced white button mushrooms
1 large can diced tomatoes
16 oz tomato juice or v-8 juice
3/4 c green chili wine or bottle lite beer
2 can(s) kidney beans (keep the liquid)

Steps:

  • 1. Note: If you want you can use lager beer instead of the lite beer to give it a deeper flavour. Also you can also use hotter chilies if you like more of a kick in you chili.
  • 2. Put the coconut oil in a large sauce and heat it until its hot. Add the onions and saute until tender and transparent.
  • 3. Add the ground turkey and cook until it's no longer pink. Add the salt, chili powder and garlic. Cook for a few more minutes to incorporate the flavours.
  • 4. Add the potatoes, celery, chilies, pepperoncinis, asparagus, mushrooms, tomatoes, tomato juice, chili wine or beer. Cook about 15 minutes to make sure the potatoes are tender.
  • 5. Add the kidney beans and cook for another 15 minutes. You can also leave this to simmer longer if you like, it can only get better tasting! You can make this a day ahead and it tastes even better the next day.

I remember having a delicious lentil stew at an ethnic night hosted by my preschool when I was four. I loved it but my mom, while an accomplished cook, didn't like lentils and wouldn't make them. Thirty years later I decided to experiment with them and this was the result of my first try. It is very flavorful and makes a hearty supper for a cold night!

4 cups reduced-sodium chicken broth, divided
1 medium onion, finely chopped
2 stalks celery, finely chopped
½ pound hot Italian turkey sausage links
2 cups dry lentils
1 (14.5 ounce) can tomato sauce
¼ teaspoon ground black pepper
¼ cup hot water, or as needed

Steps:

  • Combine 2 cups broth, onion, and celery in a large saucepan over medium heat. Bring to a simmer and cook until softened, about 10 minutes.
  • At the same time, heat a large skillet over medium-high heat. Fry sausage links in the hot skillet. Pierce casings with a fork to allow juices to run out and cook in the bottom of the pan. Cook until browned, 5 to 7 minutes. Remove to a plate to cool. Slice into thin slices.
  • Deglaze the skillet with about 1/4 cup chicken broth. Add the pan drippings to the saucepan, along with any remaining chicken broth, lentils, tomato sauce, and pepper. Bring to a simmer.
  • Reduce heat to medium, cover, and simmer, stirring occasionally, until lentils are tender, 25 to 30 minutes. If more liquid is needed, add water in small increments.
  • Add sliced sausage, heat through, and serve.

1 (2 liter) bottle lemon-lime flavored carbonated beverage
2 tablespoons sugar
2 tablespoons hot sauce
1 tablespoon crushed red pepper flakes
1 tablespoon black pepper
1 large sweet onion, sliced
4 turkey legs
2 tablespoons honey
1 tablespoon steak seasoning

Steps:

  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • In a large pot, mix the lemon-lime flavored carbonated beverage, sugar, hot sauce, red pepper, pepper, and onion. Place the turkey legs in the mixture, and bring to a boil. Cook 30 to 45 minutes, until the turkey has reached an internal temperature of 180 degrees F (80 degrees C).
  • Remove onion slices from the mixture, and arrange on the prepared grill. Place turkey legs over the onions. Drizzle with honey, and season with steak seasoning. Cook, tuning once, 20 minutes, or until a crisp browned crust has formed on the turkey legs.

2 teaspoons canola oil
1 ¼ pounds ground turkey
1 cup chopped onion
1 cup roughly chopped red bell pepper
6 cups water
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 cup lentils
1 cup sliced carrots
¾ cup pearl barley
6 cubes chicken bouillon
1 teaspoon salt
1 teaspoon Italian seasoning
½ teaspoon ground black pepper
⅛ teaspoon cayenne pepper

Steps:

  • Heat oil in a skillet over medium-high heat. Add turkey, onion, and red bell pepper. Saute until pepper is soft and turkey is no long pink, 6 to 8 minutes.
  • Combine water, diced tomatoes, tomato sauce, lentils, carrots, barley, bouillon, salt, Italian seasoning, black pepper, and cayenne pepper in a large pot over medium-high heat. 2 cups dry lentils
2 quarts vegetable broth
2 tablespoons extra-virgin olive oil
4 cloves garlic, minced
1 large onion, chopped
2 stalks celery, chopped
1 pound turkey sausage
2 tomatoes, peeled, seeded, and chopped
1 teaspoon ground turmeric
1 teaspoon ground cumin
½ teaspoon dried thyme leaves
1 pinch crushed red pepper flakes
sea salt to taste
1 (8 ounce) container plain lowfat yogurt
¼ cup chopped fresh parsley for garnish

Steps:

  • Bring lentils and vegetable broth to a boil in a large pot over high heat. Reduce heat to medium, and simmer for 10 minutes.
  • Meanwhile, heat the olive oil in a large skillet over medium-high heat. Stir in the garlic, onion, celery, and sausage; cook and stir until the sausage is crumbly and no longer pink, about 10 minutes. Stir in tomatoes, turmeric, cumin, thyme, and red pepper flakes; cook 5 minutes more.

1 tablespoon sun-dried tomato oil
1 medium red onion, sliced
1 medium bell pepper (any color), sliced

1 teaspoon dried basil
1 teaspoon dried oregano
salt and freshly ground black pepper to taste
4 (6 inch) hoagie rolls, split lengthwise

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
