Steps:
- Preheat oven to 350°F.
- In a medium stove-to-oven pot melt butter over medium heat.
- Add chopped onions, garlic and garam masala and cook 3 to 5 minutes, stirring until onions are softened.
- Add rice and stir until well coated.
- Add vegetable stock, salt and pepper to taste.
- Bring to a boil.
- Cover and bake in the oven until the rice is tender and the stock is absorbed, about 20 to 25 minutes.
- Let stand, covered for 5 minutes before serving.

This is the recipe for my grandma's rice. Being Hispanic, this is about as Mexican as you can get. Good as a side dish, or in a taco with ground beef.

- In a a skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink. Drain grease. Stir in rice, tomatoes, corn, olives, bacon, chili powder, garlic powder and salt. Bring to a boil, then remove from heat. Add 1 cup of the cheese, stir until melted.
- Transfer to a greased 11x7x2 inch baking dish. Sprinkle with remaining cheese. Toss bread crumbs with butter, sprinkle over cheese. Bake, uncovered, at 350 for 15-20 minutes or until cheese is melted.
