- In a large nonstick skillet, heat oil over medium-high heat; saute onion and mushrooms until tender. Stir in ham, pepper, broth and water; bring to a boil. Stir in rice. Reduce heat; simmer, covered, until rice is tender, about 5 minutes., Fluff with a fork. Top with green onions and cheese.

Steps:
- Heat water in a pot to a simmer, then add the potatoes, 1 teaspoon salt, and stir.
- Cover and simmer for about 10-15 minutes, until a fork can easily pierce the potatoes.
- Dry the potatoes on a towel, allowing them to steam to remove excess moisture, then transfer to a large bowl.
- Mash the potatoes until no large chunks remain.
- Add the ham, cheese, onions, the other teaspoon of salt, pepper, and milk.
- Mix until evenly incorporated.
- Shape the potato mixture into 2-inch (3cm) discs.
- Separate the flour, eggs, and bread crumbs into separate bowls.
- Dredge the croquettes into the flour, shaking off any excess, then dip them into the eggs, and then coat them evenly in the bread crumbs.
- Heat oil in a pot to 350°F (180°C).
- Fry 2-3 croquettes at a time until golden brown, then drain on a rack or paper towels with a sprinkle of salt.
- Cool, then serve with the cabbage and sauce!

This easy Yakimeshi (a.k.a. Chahan) recipe is a delicious Japanese fried rice that comes together in minutes from just a handful of simple ingredients.

- Use your hands to crumble the rice.
- Heat a frying pan over medium-high heat until hot and then add the vegetable oil, swirling to coat the pan.
- Add the egg and let it bloom for a few seconds before quickly scrambling them.
- Add the crumbled rice to the egg before it's fully cooked and use a spatula or wooden paddle to break up any clumps of rice or egg.
- Add the ham, and toss to distribute evenly.
- Sprinkle the salt and pepper evenly over the rice and continue tossing until the rice doesn't stick together.
- Drizzle the soy sauce along the rim of the pan and then quickly toss the rice to coat it evenly.
- Finish by adding the sesame oil and scallions and toss to combine.
- To serve the Yakimeshi, you can press the rice into a bowl to mold it into a perfect dome.

- In a large skillet over medium-high heat, heat 1 tablespoon of oil. Pour eggs into skillet. Add eggs set, lift edges, letting uncooked portion flow underneath. Remove eggs to a plate; set aside. In the same skillet, saute onion and celery in remaining oil until crisp-tender. Reduce heat. Add rice and ham; heat through. Stir in peas and corn; heat through.
