DISNEY WORLD FUNNEL CAKE

One of my favorite Walt Disney World snacks, is funnel cake!! You can find them just about anywhere on property, but my usual stop is Sleepy Hollow & the American Pavilion in Epcot! It is a must do treat for me every trip, and I've got a great way to recreate it at home!

Number Of Ingredients 10

1.5 tablespoons baking powder
2 cups all-purpose flour
2 cups milk
1/2 teaspoon salt
2 eggs
3.5 tablespoons sugar
1 teaspoon vanilla extract
Vegetable/Canola oil
Powdered sugar
Vanilla Ice Cream (optional)

Steps:

  • In a skillet, heat about 1 inch of oil. While it's heating, get your funnel cake batter ready!
  • Mix milk, eggs, sugar & vanilla until blended thoroughly.
  • Add in the baking powder, flour & salt. Continue to whisk until all lumps are gone. You don't need to use a hand mixer or kitchenaid for this. Just a simple whisk will do!
  • Using a funnel, slowly pour the mixture into the oil. Start in a spiral shape, from the outside in. If you don't have a funnel, you can use a large ziplock or piping bag & cut the corner. As a last resort, you can use a ladle. Just be careful to not form a "pancake". I did use a ladle, just because it was easiest. It worked fine for the first one or two!
  • Fry until golden brown on each side - just a few seconds each side.
  • Serve on a paper towelled plate & dab off the excess oil.
  • Put funnel cake on a new plate, and cover in powdered sugar. You can put as much or as little as you'd like! For an added treat, you can also toss on some vanilla ice cream.

Bring the carnival home with this classic fair dessert. Fried dough is crisp and golden brown on the outside and soft and cakey on the inside. Covered in a shower of confectioners' sugar and sprinkle of cinnamon, it's the perfect fun dessert for a casual get-together.

Canola oil, for deep-frying
2 1/4 cups milk
1 teaspoon pure vanilla extract
3 large eggs
4 cups all-purpose flour (see Cook's Note)
1 cup packed light brown sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
1/2 cup confectioners' sugar
1/2 teaspoon ground cinnamon
Sweetened whipped cream, for serving

Steps:

  • For the funnel cakes: Add enough oil to a large Dutch oven or heavy-bottomed pot to come 2 inches up the sides of the pot. Heat the oil over medium-high heat until it registers 360 degrees F on a deep-frying thermometer. Line a baking sheet with a metal cooling rack or a few layers of paper towels.
  • Meanwhile, whisk together the milk, vanilla and eggs in a large measuring cup.
  • Sift together the flour, brown sugar, baking powder and salt into a medium bowl using a mesh strainer (to break up any lumps in the brown sugar). Stir the egg mixture into the flour mixture just until smooth and combined.
  • When the oil is up to temperature, use your finger to cover the hole in the bottom of a 1- to 2-cup funnel (with at least a 1/2-inch hole) and fill it to the top with about 3/4 cup of the batter. Position the funnel over the pot of hot oil and remove your finger to release the batter. Let the batter flow into the oil in thick squiggles, moving the funnel within a contained circular shape about 8 inches in diameter. Fry on the first side until golden brown, 1 1/2 to 2 minutes, then use a spider or tongs to carefully flip to the second side and fry for an additional 1 1/2 to 2 minutes. Remove to the wire rack or paper towels and let drain and cool slightly. Repeat with the remaining batter.
  • For topping: Dust the funnel cakes generously with the confectioners' sugar, sprinkle with cinnamon and dollop with whipped cream before serving warm.

Steps:

  • Heat 1-inch of vegetable oil on medium-high in a deep pan. While vegetable oil is heating, mix eggs, sugar, vanilla and milk until well blended. Slowly add the flour, salt and baking powder, stirring well. Test the temperature by dropping a pinch of flour into the hot oil. If it sizzles right away without smoking, it's perfect. Using a funnel or even a ladle, drop mixture into hot oil working from center outwards in a web pattern. (You can use a gallon sized freezer bag instead of a funnel by pouring the batter into the bag, snipping off a small corner of it, and squeezing the batter into the oil.) Using a pair of kitchen tongs, quickly turn the funnel cake over as soon as one side is golden brown. After the other side has cooked, remove it from the oil and place it on top of a paper towel-lined plate. Sprinkle with powdered sugar.

1 ⅓ cups sifted all-purpose flour
¾ teaspoon baking powder
1 quart vegetable oil for frying
¼ cup confectioners' sugar for dusting

Steps:

  • Beat egg. Mix in milk. Sift flour, salt, sugar, and baking powder; beat into egg mixture until smooth.
  • Pour oil into a heavy pan until it is 1 inch deep. Heat to 375 degrees F (190 degrees C).
  • Pour batter through funnel into oil with a circular motion to form a spiral. Fry until lightly brown; turn over to brown the other side. Cook to golden brown, and remove to drain on paper towels. Sprinkle with confectioner's sugar while still warm.
