These potatoes are loaded with creamy goodness like sour cream and cheddar cheese and make a perfect side dish!

3 pounds diced potatoes (or 30 ounces country style hash browns)
¼ cup butter (melted)
1 cup sour cream
1 cup cream of chicken soup (or cream of cheddar)
¼ cup green onion (chopped)
2 cup cheddar cheese (divided)

Steps:

  • Preheat oven to 375˚F and grease a 9x13 inch baking dish.
  • If using fresh potatoes, place in a saucepan with cold water. Simmer 12-14 minutes or until fork tender. Drain and allow to cool slightly.
  • Melt butter, add sour cream, soup, onion and 1 ½ cups cheese.
  • Toss in the potatoes (or frozen hash brown potatoes) and combine. Spread into a prepared baking dish.
  • Top with remaining cheese and bake for 28-30 minutes or until browned and bubbly.

6 russet potatoes
olive oil
salt, to taste
pepper, to taste
10 slices bacon, cooked and crumbled
3 cups sour cream
4 cups shredded cheddar cheese
fresh chive, for garnish

Steps:

  • Place potatoes on a baking sheet and poke holes in two sides with a fork.
  • Coat potatoes with olive oil, and sprinkle with salt and pepper.
  • Bake for at 425°F (220°C) for 45 minutes.
  • Remove potatoes from oven, and let cool. Chop into 1-inch (2 ½ cm) pieces.
  • Lay half of the potatoes on the bottom of a greased 9x13 inch (23x33 cm) baking dish.
  • Sprinkle on half of the bacon, spread half of the sour cream, and sprinkle on half of the cheese.
  • Repeat for a second layer.
  • Bake for 20 minutes at reduced temp of 350°F (180°C), or until cheese is golden brown and the edges start crisping up.
  • Sprinkle with chives.

Cheesy potato casserole is a gooey, creamy, potato side dish made with diced hash brown potatoes slathered with cheesy, cream sauce, bacon, and green onions.

32 oz diced hash browns (thawed)
1/2 lb raw bacon (diced)
1 yellow onion
4 garlic cloves
1/4 cup flour
1 cup chicken stock
2 cups whole milk (can use 2%)
4 oz cream cheese
1/2 cup sour cream
1/3 cup diced green onion
8 oz shredded sharp cheddar cheese
salt
cracked black pepper
1/2 lb raw bacon (diced)
6 oz shredded sharp cheddar cheese
2-3 tbsp diced green onion

Steps:

  • Preheat oven to 350° and grease a 9x13 casserole dish.
  • Preheat a large sauce pot over medium heat and saute 1/2 lb of diced bacon until most of the fat is rendered and it starts to crisp.
  • Add diced onion and saute until softened. Press garlic and stir it into the bacon and onion mixture.
  • Sprinkle flour all over bacon and onions and stir until completely incorporated throughout.
  • Slowly pour in chicken stock while stirring and mix until flour is incorporated.
  • Pour in milk and let it cook until sauce starts to thicken. Season with salt and pepper and add cream cheese and sour cream.
  • Stir until cream cheese is incorporated and add shredded cheese. Keep stirring slowly until cheese is melted and take off heat.
  • Stir in diced green onions.
  • In a separate cooking pan, saute remaining diced bacon for the topping. (Don't make it too crispy because it will continue to cook on top of the casserole.)
  • Pour diced hash browns into a large mixing bowl and add the cheesy sauce. Mix it together until evenly incorporated throughout.
  • Pour potato mixture into a greased 9×13 baking dish.
  • Spread more cheese over the top and cooked bacon pieces over cheese. Bake for about 40 minutes.
