- Preheat oven to 350. Combine sugar, melted butter, cocoa powder, eggs, vanilla, and evaporated milk in a large mixing bowl. Beat this chocolate mixture with an electric mixer at medium speed until well combined, or about 1 to 2 minutes.
- Pour chocolate mixture into the unbaked pie shell and bake until set in the center, or about 35 to 40 minutes. Allow to cool completely. Dust with confectioner's sugar, if desired.
- Excellent served at room temperature or chilled. Store covered in the refrigerator.

- Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
- Bake for 45-50 minutes, or until mostly set - there will still be a little bit of jiggle in the center when you shake the pie. Allow the pie to cool completely before slicing (it will continue to set as it cools). If the pie is still a bit too soft after cooling, chill it in the refrigerator for a few hours to firm it up.

This is a traditional way of making chess pie. Every good southern cook knows you have to add some cornmeal. To be honest, I don't really know why but that's how my mother did it so I will too.

- Preheat oven to 350°F
- Combine sugar, cornmeal, cocoa, flour and salt in a large mixing bowl.
- Stir to mix.
- Add eggs, milk, vanilla, and butter.
- Stir until smooth.
- Blend in pecans.
- Pour filling into unbaked crust.
- Place in oven and bake for l hour or until filling is set and crust is golden.
- If crust begins to brown too fast, lower oven to 325F and place a ring of foil over the crust.
