SWEET POTATOES
This should be a dessert. It is so good! The crunchiness of walnuts and the fruity taste of raisins complement this traditional holiday dish.

Steps:
- Preheat oven to 350 degrees F (175 degrees C)
- In a large soup pot, boil potatoes until soft. Add sliced apples just 5 minutes before potatoes are done. Remove from heat. Drain.
- In a large casserole dish, mix potatoes and apples. Dot with butter. Sprinkle brown sugar, walnuts, and raisins on top of potato mixture. Pour apricots over top.
- Bake uncovered for 30 minutes.

CREAMY SWEET POTATOES
I took my mother's delicious sweet potato casserole recipe and gave it a new twist by adding the tempting taste of orange-a fruit very abundant in our state. The flavors are wonderful together and make this dish a family favorite. -Norma Poole, Auburndale, Florida

- In a large bowl, mash sweet potatoes. Add eggs, orange juice, butter, sugar, vanilla, nutmeg and salt; mix well. Transfer to a greased 3-qt. baking dish. , Bake at 350° until set, 35-40 minutes. Top with marshmallows; return to oven until they just begin to puff and melt, 5-10 minutes.

FRUITY SWEET POTATOES
I have a favorite way to make sweet potatoes. They are the type swimming in a concoction of butter, brown sugar and marshmallows until the syrup is thick and sticky. Loaded with fat and calories, they are reserved for the holidays (when we tend to throw caution to the wind regarding our waistlines!). I found this recipe in a Slow Cooker cookbook and decided to give it a try. These are rich and sweet, with far less fat and sugar than I would normally add which equates to being able to eat more of them. :-) They smell and taste SO good! NOTE: I used my smaller 4 quart cooker

- Peel sweet potatoes if you wish (I did!). Cut into cubes. In the photo, mine are about 1 inch.
- In a bowl, mix together applesauce, brown sugar, butter and cinnamon. Spoon over potatoes.
- Cover and cook on low for 6-8 hours, or until potatoes are tender. (see note!)
- Serve with sauce poured over potatoes. You may also top with chopped nuts. I didn't do this, but if I were going to I'd probably used toasted pecans.
