This recipe is very EASY and DELICIOUS and loved by all in my town! It is a sugar cookie crust with a milky layer of white chocolate and cream cheese, topped with your favorite fruit choices and a glaze! Substitute any fruit you like for the strawberries, and any fruit juice or juice from any canned fruits you use for the pineapple juice.

½ cup butter
½ cup shortening
1 ½ cups white sugar
2 eggs
2 ¾ cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
¼ teaspoon salt
2 cups vanilla baking chips
¼ cup heavy cream
1 (8 ounce) package cream cheese
1 pint fresh strawberries, sliced
½ cup white sugar
2 tablespoons cornstarch
1 cup pineapple juice
1 teaspoon lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a cookie sheet.
  • For the crust: Cream together butter, shortening and 1 1/2 cups sugar with electric mixer. Beat in eggs. In a separate bowl, stir together flour, cream of tartar, baking soda and salt. Beat flour mixture into butter mixture to form a stiff dough. Press dough into a rectangle as large as the baking sheet.
  • Bake for 10 minutes in the preheated oven, or until light brown.
  • For the filling: In medium microwave safe bowl, microwave vanilla chips and cream on high 60 to 90 seconds, or until chips are melted and smooth after stirring. Beat in cream cheese with electric mixer until creamy. Spread on cooled cookie crust.
  • For the topping: Arrange sliced fruit decoratively over filling. In a medium saucepan over medium heat, combine 1/2 cup sugar, cornstarch, pineapple and lemon juices. Stir and cook until sugar dissolves and mixture thickens. Pour over fruit. Refrigerate until serving.

This recipe is from the Pampered Chef. I make it anytime I am having company over and there is never any left when everyone leaves. It is easy and tastes great. You can experiment with different fruits too for some variety.

1 (18 ounce) package refrigerated chocolate chip cookie dough
2 ounces white chocolate baking squares (can be substituted) or 2 ounces white chocolate chips (can be substituted)
2 tablespoons milk
1 (8 ounce) package cream cheese, softened
1/4 cup powdered sugar
1 cup Cool Whip
12 -16 strawberries (chopped or cut in half)
1 (11 ounce) can mandarin oranges, drained
1/4 cup semi-sweet chocolate chips or 1/4 cup Hershey's syrup
1 teaspoon vegetable oil

Steps:

  • Preheat oven to 350°F.
  • Press cookie dough into a ball, flatten and then on a floured pan roll into a 12-inch circle (should be about 1/4 inch thick).
  • Bake for 12-15 minutes (cookie will be soft).
  • Cool for 10 minutes.
  • Using a bread knife or other long utensil, loosen cookie from pan then cool completely on the pan.
  • Put white chocolate and milk in a small bowl and microwave on high for 1 minute-stir until the mixture is smooth and all the chocolate is melted.
  • Cool slightly.
  • Combine cream cheese and powdered sugar, making sure it is mixed well.
  • Stir in white chocolate.
  • Fold in the Cool Whip.
  • Spread Cool Whip mixture over the cookie.
  • Sprinkle strawberries (if chopped) over the cool whip and arrange mandarin oranges.
  • Melt chocolate and oil together then drizzle over the fruit-I usually just use chocolate syrup as it is easier and still tastes wonderful.
  • Refrigerate for at least 30 minutes.
  • When ready to serve, cut like a pizza (for serving smaller groups) or into squares to make it stretch farther.

GLAZE:
5 teaspoons cornstarch

TOPPINGS:
1 package (8 ounces) reduced-fat cream cheese
1/3 cup sugar
1 teaspoon vanilla extract
2 cups halved fresh strawberries
1 cup fresh blueberries
1 can (11 ounces) mandarin oranges, drained

Steps:

  • Preheat oven to 350°. In a large bowl, mix flour and confectioners' sugar; cut in butter until crumbly. Press onto an ungreased 12-in. pizza pan. Bake until very lightly browned, 10-12 minutes. Cool completely on a wire rack., In a small saucepan, mix glaze ingredients until smooth; bring to a boil. Cook and stir until thickened, about 2 minutes. Cool slightly., In a bowl, beat cream cheese, sugar and vanilla until smooth. Spread over crust. Top with berries and mandarin oranges. Drizzle with glaze. Refrigerate until cold.
