cooking spray
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3 bananas, mashed
¾ cup white sugar
⅓ cup melted butter
1 egg, beaten

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 2 mini muffin tins with cooking spray.
  • Combine flour, baking powder, and baking soda in a bowl.
  • Blend bananas, sugar, butter, and egg together in a separate bowl. Add to flour mixture; stir batter well to combine.
  • Scoop batter into prepared muffin tins, filling each cup 2/3 of the way full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 15 minutes.

Fruit Sweetened Banana Muffins image

Healthy banana muffins sweetened completely with fruit!

8 oz pitted dates
½ c butter/ghee
3 eggs
1 T vanilla
3 ripe bananas
2 c flour (gluten free see notes)
½ t baking soda
1 t baking powder
1 t salt

Steps:

  • In a large bowl, combine flour (xanthan gum if gluten free), baking powder, baking soda, and salt
  • Check dates for pits.
  • In a food processor or blender, add dates, butter/ghee, eggs, vanilla and banana. Process/blend until combined and date pieces are small
  • Transfer to large bowl with dry ingredients, mix until combined
  • Line muffin pan with muffin cups, spoon batter into cups
  • Bake at 350° for 23-28 minutes for large muffins, 20-25 minutes for mini-muffins or until golden brown on top

2 teaspoons baking powder
2 teaspoons baking soda

4 bananas, mashed
4 egg whites
1 (12 ounce) can white grape juice concentrate

Steps:

  • Preheat oven to 350°F
  • In a bowl, mix together the flour, bran, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, mix together the mashed banana, egg whites, and juice concentrate.
  • Add the dry mixture to the wet ingredients stirring as little as possible until just combined.
  • Spoon into greased muffins cups. (This recipe will make 18 standard muffins or 12 jumbo).
  • Bake for 25 minutes. (30 if making jumbo muffins).

2 cups milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, cream together butter and sugar.
  • Add eggs and beat.
