1/4 cup packed brown sugar
2 teaspoons chopped fresh mint leaves
2 teaspoons grated gingerroot
1/2 teaspoon grated lemon peel
12 bamboo skewers (6 inch)
1 cup fresh raspberries
2 cups melon cubes (cantaloupe and/or honeydew)

Steps:

  • In small bowl, mix dip ingredients with wire whisk until smooth. Cover; refrigerate at least 15 minutes to blend flavors.
  • On each skewer, alternately thread 3 raspberries and 2 melon cubes. Serve with dip.

Steps:

  • For the kebabs: Thread the blueberries, pineapple chunks and raspberries onto small 3 1/2-inch bamboo skewers in any order you like.
  • For the dip: Add the Greek yogurt, honey, blueberries and vanilla seeds to a blender. Blend until smooth.
