Steps:
- Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with cooking spray. Line the pan with overhanging parchment and spray the parchment.
- Mash the banana in a medium bowl with a fork. Add the sugar, butter, yogurt, orange juice, vanilla and egg and whisk.
- Mix together the baking soda, salt and 1 1/2 cups of the flour in a bowl. Fold the dry mixture into the banana mixture with a spatula. Toss the peaches and blueberries with the remaining 2 tablespoons flour and fold into the batter. Pour the batter into the prepared pan.
- Bake until a toothpick inserted in the center comes out clean, about 50 minutes. Let cool in the pan for 10 minutes, then use the overhanging parchment to transfer the loaf to a rack to cool completely.
APRICOT CHEESE LOAF
A fruit-laden and slightly tart loaf. Excellent with tea or coffee.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x5x3 inch loaf pan.
- Pour boiling water over apricot pieces in a small bowl. Cool.
- In another bowl, combine flour, baking powder, soda, salt, and dates.
- In a large bowl, cream butter or margarine, cream cheese, and sugar. Beat in eggs, one at a time, until smooth. Stir in cooled apricots and water. Pour in flour mixture, and stir until moistened. Turn batter into greased 9x5x3 inch loaf pan.
- Bake at 350 degrees F (175 degrees C) for 1 hour, or until it tests done. Let stand 10 minutes. Remove from pan to rack. Cool.

APPLE LADDER LOAF
Steps:
- In a large mixing bowl dissolve yeast in warm water. Add milk, butter, sugar, salt, eggs, and 2 cups flour beat on low speed for 3 min. Stir in remaining flour to form a soft dough. Turn on a lightly floured surface. Knead until smooth and elastic. Place in a greased bowl. Cover and refrigerate for 1-2 hours. Punch down. Refrigerate overnight.
- Punch dough down. Separate into 2 portions. Roll on floured surface. Place on greased baking sheet. Spread with 1/4 cup of butter. For the filling combine brown sugar, flour, cinnamon, nutmeg, and allspice in large bowl. Add apples, toss to coat. Spoon down center third of each rectangle. On each long side, cut 1-in wide strips about 3-in into center on both sides. Start with one end and fold alternating strips at an angle across filling; seal engs. Cover and rise until nearly doubled about 50 min.
- Bake at 350°F for 30-40 min until golden brown. Remove pan to wire rack. Combine icing ingredients in a small bowl. Drizzle over the warm bread.

SPICED FRUIT LOAF
A treat when freshly baked and spread with butter, then try it toasted for breakfast the next day

- Soak the dried fruits in the orange juice for about 30 mins, then sieve, reserving the juice.
- Put the flour, yeast, caster sugar and 1 tsp salt into a large mixing bowl with the spices and soaked fruit and mix well. Make a well in the centre and pour in the warm milk, reserved orange juice, the beaten egg and the melted butter. Mix everything together to form a dough - start with a wooden spoon and finish with your hands. If the dough is too dry, add a little more warm water; if it's too wet, add more flour.
- Knead in the bowl or on a floured surface until the dough becomes smooth and springy. Transfer to a clean, lightly greased bowl and cover loosely with a clean, damp tea towel. Leave in a warm place to rise until roughly doubled in size - this will take about 1 hr depending on how warm the room is.
- Knock the dough back by kneading for a few secs. Dust 2 x 2lb loaf tins with flour. Halve the dough. Use a little flour to help you shape each half into a smooth oval, then pop them into the tins. Cover both loosely with a clean, damp tea towel and leave to prove in a warm place for about 20 mins. Meanwhile, heat oven to 180C/160C fan/gas 4.
- Bake for 20 mins, then cool in the tins before turning out and slicing.

EASY FRUIT LOAF
An easy to make fruit loaf using sultanas or a mixture of dried fruits. Serve buttered with tea or coffee for a change from cookies.

Steps:
- Heat gently together in a pot on stove top the water, sugar, dried fruit and butter until butter melts and sugar dissolves.
- Allow to cool for a few minutes then stir in flour and spices and baking soda.
- Pour into a large loaf pan which has been greased and floured or bottom lined with baking paper and bake at 350'F for 45 minutes or until a cake tester comes out clean.
- Remove from oven and leave to cool in tin for 10 minutes then tip out onto a wire rack to finish cooling.
- Serve cut in slices and buttered.
