1 (5/8 ounce) package Jello gelatin (sugar-free, any flavor)
1 cup boiling water
1 cup cold water
1 banana (chopped)
1 apple (diced or chopped)
1 cup grapes (or any other small fruit of your choice)

Steps:

  • Boil the one cup of water and add it to the Jello in a bowl or container.
  • Stir for about 2 minutes, until completely dissolved.
  • Add one cup cold water, stir.
  • Put 1 cup chopped banana into bottom of the bowl.
  • Chill in refrigerator for about 1-2 hours, or until a thick jelly-like consistency.
  • Add other fruit into Jello, spread evenly.
  • Place back into refrigerator for about 2-3 more hours.
  • Enjoy!

1 package miniature marshmallow

  • Press into the bottom of a 9 inch springform pan.

1 cup banana, sliced
1/2 cup apple, diced

  • Drain oranges, reserving the liquid.
  • In a large bowl, combine oranges, strawberries, bananas, and apples.
  • Add the liquid from the oranges. Toss.
  • Cover and chill for 1 hour.

2 cartons, (6 oz ea.) reduced fat vanilla yogurt
1 medium ripe banana cut in 1/4" slices and frozen
2 Tbsp sugar (or sweetner)

Steps:

  • 1. Microwave each bag of fruit seperately in a microwave safe dish, at 50% power for 1 minute
  • 2. In a blender or food processor, place 1/2 of the ingredients ( 1 bag fruit, 1 cont. yogurt, 1/2 of bananas and 1 tbs. sugar ) and process until smooth. Mixture will be thick. Repeat with second half of ingredients.
  • 3. Serve immediately, or freeze for up to 4 hours.

1/2 cup sweetened condensed milk
1 pint vanilla ice cream
3 cups mixed berries or chopped seasonal fruit
Vanilla cookies (recommended: Marias) for garnish, optional

  • Mix the coffee liqueur and condensed milk in a small bowl. Set aside.
  • Put 2 to 3 scoops of ice cream in each parfait glass. Scatter the berries or fruit evenly over the ice cream and drizzle with the coffee liqueur mixture. Garnish with a vanilla cookie, if desired, and serve immediately.

1 (3 ounce) package orange gelatin
1 1/2 cups boiling water, divided
1/2 cup mandarin orange, drained
2 (12 ounce) cans evaporated milk, chilled, divided
1 (3 ounce) package lemon gelatin
1/2 cup crushed pineapple, drained
1 (3 ounce) package strawberry gelatin
1/2 cup frozen strawberries, thawed and drained (about 8)

Steps:

  • Coat 9x5-inch loaf pan with non-stick cooking spray.
  • For mandarin orange layer: Dissolve orange gelatin in 1/2 cup boiling water in small bowl. Let stand for 10 minutes. Place dissolved gelatin, mandarin oranges and 1 cup evaporated milk in blender; cover. Puree for 10 seconds or until well blended. Pour into loaf pan. Refrigerate 30 minutes or until set.
  • For pineapple lemon layer: Follow process for mandarin orange layer substituting lemon gelatin for the orange and pineapple for the mandarin oranges. Pour mixture over mandarin orange layer. Refrigerate 30 minutes or until set.
  • For strawberry layer: Follow process for mandarin orange layer substituting strawberry gelatin and strawberries. Pour over pineapple lemon layer. Refrigerate at least 4 hours or overnight.
  • To unmold: Run point of knife around top of pan. Dip pan into a large bowl of warm water. Place serving platter on top of pan. Invert mold and platter together; shake gently to loosen. Gently remove mold. Cut into slices and serve.
