CASHEW CRUSTED KEY LIME PIE WITH A WHIPPED CREAM FRUIT COULIS



Cashew Crusted Key Lime Pie with a Whipped Cream Fruit Coulis image

2 cups very finely chopped cashews
1 cup finely ground graham cracker crumbs
1/2 cup plus 2 ounces sugar
3/4 cup melted butter
3 cups sweetened condensed milk
9 egg yolks
1 1/2 cups Key lime juice
2 cups heavy cream
1 orange, zested

Steps:

  • Preheat the oven to 325 degrees F.
  • Grease a 9-inch pie pan and set aside. In a small bowl, mix together the cashews, graham cracker crumbs, 1/2 cup sugar, and the melted butter (you may choose to process the cashews and graham crackers in a food processor to finely grind them). Press crumb mixture into the bottom and sides or pie pan.
  • In a medium mixing bowl, combine the sweetened condensed milk and egg yolks until smooth, mixing either by hand or with an electric mixer. Slowly add the Key lime juice and mix to incorporate. Pour into the unbaked crust and bake for 50 minutes or until center is set. Cool pie to room temperature; then refrigerate for several hours.
  • When pie is cool, make the whipped topping. In the bowl of an electric mixer, whip the heavy cream, orange zest, and remaining 2 ounces of sugar until it has reached the consistency of whipped cream. Spread whipped topping evenly over the cooled pie. The pie can be served immediately or allowed to set before serving.

TROPICAL FRUIT BEIGNET WITH MANGO COULIS AND COCONUT ICE CREAM



Tropical Fruit Beignet with Mango Coulis and Coconut Ice Cream image

1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk, plus more if needed
1 egg
1 tablespoon sugar
3 tablespoons small diced papayas
3 tablespoons small diced mango
3 tablespoons small diced pineapple
3 tablespoons small diced quava
Oil for frying
2 whole mango, peeled, seeded, and chopped
Juice of one lemon
2/3 cup water
1/2 sugar
4 quenelle scoops of coconut ice cream (If coconut ice cream is not available, fold toasted coconut, 1 tablespoon Malabu Rum, with softened vanilla ice cream)
Powdered sugar in shaker
2 tablespoons chiffonade mint

Steps:

  • Preheat the fryer. In a mixing bowl, combine the flour, baking powder, salt and sugar together. Beat in the egg and milk, adjusting the amount of milk to make a thick batter. Fold in the small diced fruit. Refrigerate for 1 hour. In a saucepot, combine the chopped mango, lemon juice, water and sugar together. Bring the mixture up to a boil. Reduce to a simmer and cook for 5 minutes or until the fruit is very tender. Pour the mixture into a food processor and puree until smooth. Remove and allow to chill for 30 minutes. In the hot grease, drop a heaping tablespoon of the beignet. Fry 5 to 6 at a time and stir constantly for even browning. Fry the beignets for 2 to 3 minutes, or until golden brown. Remove from the fryer and drain on a paper-lined plate. Powder the beignets with powdered sugar. Spoon the coulis in the center of the plate. Place the quenelle of ice cream in the center of the coulis. Arrange the beignets around the ice cream. Garnish with powdered sugar and chiffonade of mint.

16 ounces fresh wild huckleberries or wild Maine blueberries or one 15- to 16-ounce package frozen wild blueberries
1/2 cup sugar
1 vanilla bean, split lengthwise
Coulis
3/4 cup frozen passion fruit puree,* thawed
1/2 cup sugar
1/2 vanilla bean, split lengthwise
Crust
1 1/4 cups graham cracker crumbs
3 tablespoons sugar
Pinch of salt
6 tablespoons (3/4 stick) unsalted butter, melted
Filling
1 14-ounce can sweetened condensed milk
4 large egg yolks
1/2 cup fresh Key lime juice or regular lime juice
Whipped cream
*Available at some specialty foods stores and online from lepicerie.com or amazon.com.

Steps:

  • For compote:
  • Combine huckleberries and sugar in medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer over medium heat, stirring until sugar dissolves. Simmer until reduced to 1 1/4 cups, about 15 minutes. Refrigerate until cold. DO AHEAD: Can be made 2 days ahead. Cover and refrigerate. Discard vanilla bean before serving.
  • For coulis:
  • Combine passion fruit puree and sugar in heavy small saucepan. Scrape in seeds from vanilla bean; add bean. Stir over medium heat until sugar dissolves. Simmer until mixture is reduced to 1/2 cup, stirring frequently, about 6 minutes. Transfer coulis to bowl and refrigerate until cold. DO AHEAD: Can be made 2 days ahead. Cover and keep refrigerated. Discard vanilla bean before using.
  • For crust:
  • Preheat oven to 350°F. Combine cracker crumbs, sugar, and salt in medium bowl. Add butter and stir until crumbs are moist. Press mixture onto bottom and up sides of 9-inch-diameter glass pie dish. Bake crust until set and lightly browned, about 10 minutes. Cool crust completely. Maintain oven temperature.
  • For filling:
  • Whisk sweetened condensed milk and egg yolks in medium bowl to blend. Add lime juice and whisk until blended. Pour filling into cooled crust. Bake pie until filling is set, about 18 minutes. Transfer to rack and cool to room temperature. Cover and refrigerate pie overnight.
  • Cut pie into wedges. Spoon huckleberry compote on top. Garnish with dollop of whipped cream. Drizzle passion fruit coulis around and serve.

1 pork tenderloin
1 pack dried mixed fruit, coarsely chopped
Olive oil
1 tablespoon coarsely chopped fresh rosemary leaves
1 tablespoon coarsely chopped fresh thyme leaves
4 garlic cloves, finely chopped
1 tablespoon kosher salt
1 tablespoon cracked peppercorns
Parsley, for garnish
Cheddar Fried Grits:
2 cups water
1 cup grits
1/4 stick butter
1 cup milk, divided
1/2 cup grated Cheddar, plus more if desired
Salt and freshly ground black pepper
1 cup all-purpose flour
4 eggs, for egg wash
2 cups panko (Japanese-style bread crumbs)
Oil, for frying
Blueberry Coulis:
1 pint fresh blueberries, plus extra for garnish
1 tablespoon sugar
1 teaspoon grated lemon peel
1 teaspoon grated orange peel
Preheat oven to 350 degrees F.

Steps:

  • Trim the tenderloin by cutting off all silverskin. In food processor, coarsely chop mixed dried fruit. Insert metal dowel or tool into the end of the meat to make a pocket through the center. Stuff the chopped fruit inside. Season the tenderloin with the olive oil, herbs, garlic, salt and pepper. Heat a large skillet over a high heat. Sear the tenderloin on all sides until caramel. Cover the meat with aluminum foil and finish cooking it in the oven until the center of the meat reaches 165 degrees F on an instant-read thermometer, about 30 minutes. Let rest for 15 minutes after cooking. Cut tenderloin into medallions. Keep warm until ready to plate. Cheddar Grits: Heat oil in a Dutch oven to 350 degrees F. In a medium pot, heat 2 cups of water until boiling. Add the grits and stir continuously until done, about 5 minutes. Add the butter, 1/2 cup of milk, Cheddar and salt and pepper to taste. Pour the grits into a square pan and chill until set, about 30 minutes. Once set, use a small biscuit cutter to cut out rounds. Crack 4 eggs into a bowl and beat gently with a fork. Carefully dip each round in flour, then egg wash, then breadcrumbs. Fry in hot oil until golden and set aside until ready to serve. Blueberry Coulis: Add the blueberries to a small saucepan with water to cover. Add sugar; cook over medium heat until blueberries are completely cooked, about 7 minutes. Strain, reserving cooked blueberries, and add the lemon and orange peel. Let steep until cool. Plating: Put some of the coulis in the middle of the plate. Place 1 of the round pieces of fried grits in the middle of the coulis. Place 1 pork medallion on top of the grits. Continue the process until satisfied with the look. Place the additional blueberries around as garnish along with the parsley. Plate presentation is up to the discretion of the chef.
