Given kids affinity for sugar, you might as well temper it with some of the "good stuff", in this case, oats with their soluble fiber and whole wheat, with its extra vitamins, minerals and bran. Number Of Ingredients 12

1/2 cup butter, softened
1/2 cup shortening
1 cup packed brown sugar
1/3 cup sugar
2 teaspoons vanilla extract
3/4 teaspoon salt
1 tablespoon white vinegar
1 egg
1 teaspoon baking soda
1-3/4 cups King Arthur White Whole Wheat Flour
1 cup quick-cooking oats
3 cups chocolate chips, chunks, dried fruit bits and/or chopped nuts

Steps:

  • In a large bowl, cream butter, shortening, sugars, vanilla, salt and vinegar. Beat in egg. Combine flour, baking soda and oats; gradually add to creamed mixture. Stir in chips, fruits and/or nuts. Drop by tablespoonfuls 2-in. apart onto lightly greased baking sheets. , Bake at 350° for 12-14 minutes or until golden brown. Remove to wire racks to cool.

Tropical Dried Fruit Choc Chip Cookies With a Crunch image

After spotting dried pineapple pieces at the grocery store, I had the idea of baking cookies which were different than the ordinary oatmeal raisin cookie. The rice krispies give them a nice crunch, but they are still chewy and soft with the coconut. Any type of dried fruit can be substituted for the pineapple pieces that I suggest. These cookies are sweet, so you may reduce the amount of sugar used, although I have not tried it. This batter is easily doubled.

1/2 cup butter or 1/2 cup margarine, softened
1 cup brown sugar
1 large egg
1/2 teaspoon vanilla
1 cup flour
1/4 teaspoon baking powder
1 cup Rice Krispies
1/2 cup chocolate chips (more if desired)
1/2 cup shredded coconut
3/4 cup dried pineapple, cut to size

Steps:

  • Preheat oven to 350°F and lightly spray cookie sheet with cooking spray.
  • Combine butter and brown sugar until light and fluffy.
  • Beat in egg and vanilla; mix well.
  • Sift together flower and baking powder, gradually incorporate into wet mixture.
  • Fold in remaining ingredients.
  • Drop heaping spoonfuls or roll 1 inch balls of batter onto cookie sheet; bake 15 minutes until tops are golden brown.

1 cup butter, softened
3/4 cup packed brown sugar
1/2 cup granulated sugar
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
1 1/3 cups all-purpose flour
2 cups granola cereal
1 6-0z pkg mixed dried fruit bits
1 cup chopped hazelnuts (filberts) or walnuts
1 cup white baking pieces

Steps:

  • Preheat oven to 325°. In a mixing bowl beat butter with electric mixer on medium speed for 30 seconds. Add brown sugar, granulated sugar and baking soda; beat until combined. Beat in eggs and vanilla until combined. On low speed, beat in as much of the flour as you can with the mixer. By hand, stir in remaining flour and granola. Stir in remaining ingredients. Drop dough by slightly rounded tablespoonfuls 2 inches apart on ungreased baking sheet. Flatten slightly. Bake 11 to 13 minutes or until edges are browned. Cool on baking sheet for 1 minute. Transfer to wire racks. Cool. Nutrition facts per cookie: 137 cal., 7 g total fat (4 g sat fat), 21 mg chol., 86 mg sodium, 17 g carbo., 1 g fiber, 2 g pro. Daily Values: 6% vit A, 1% vit C, 2% calcium, 3% iron.

Really rich and elegant cookie. Can also make as bar cookies. This originally was a plain cake mix cookie recipe that I tweaked a lot.

18 1/4 ounces yellow cake mix, i use duncan hines
2 eggs
1/4 cup water
1/4 cup butter, softened
1/4 cup brown sugar, packed
1 cup white chocolate chips
1 cup fruit, morsels
1/2 cup macadamia nuts, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients well in a large bowl.
  • Drop by rounded teaspoonfuls onto cookie sheet sprayed with cooking spray.
  • Bake 10-12 minutes.
