Enjoy this pineapple mixture filled cream pie with meringue topping - a wonderful dessert baked using Pillsbury™ refrigerated pie crusts.

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
2 cups milk
1/4 cup cornstarch
3 egg yolks
3/4 cup sugar
1 can (20 oz) crushed pineapple, drained
1 tablespoon butter
1 teaspoon vanilla
3 egg whites
1/4 cup sugar
1/3 cup flaked coconut

Steps:

  • Heat oven to 450°F. Bake pie crust as directed on box for One-Crust Baked Shell, using 9-inch glass pie plate. Cool completely on cooling rack, about 15 minutes. Reduce oven temperature to 350°F.
  • Meanwhile, in 2-quart saucepan, beat milk and cornstarch with whisk until dissolved. Beat in egg yolks and 3/4 cup sugar until blended. Cook over medium-low heat, stirring constantly, until mixture boils. Boil 1 minute, stirring constantly. Remove from heat. Stir in pineapple, butter and vanilla. Pour into cooled baked shell.
  • To make meringue topping, in medium bowl, beat egg whites with electric mixer on medium speed until soft peaks form. Slowly add 1/4 cup sugar, 1 tablespoon at a time, beating on high speed until mixture forms stiff glossy peaks. Immediately spread meringue onto hot filling, spreading to edge. Sprinkle coconut over meringue. Bake at 350°F 10 to 12 minutes or until golden brown. Refrigerate until set, about 2 hours. Cover and refrigerate any remaining pie.

14 oz sweetened condensed milk
8 oz frozen limeade concentrate
1 c pineapple chunks
1 c heavy whipping cream
1 graham cracker pie crust

Steps:

  • 1. Blend Pineapple chunks until juicy with pulp.
  • 2. Place Pineapple juice (with pulp), sweetened condensed milk,frozen limeade concentrate, and heavy whipping cream in to a bowl of an electric mixer. Make sure you have the whisk attachment connected.
  • 3. Mix until contents are mixed and fluffy.
  • 4. Pour filling into the graham cracker crust. Smooth out the top.
  • 5. Refrigerate at LEAST 4 hours. I generally keep it in the refrigerator over night.
  • 6. Hide it from the kids and enjoy!

My Dad's mom would make this for him every time we visited Illinois. As a child, I could hardly wait for the filling to cool enough to eat. The secret is to stir constantly for a rich, velvety smooth pudding-like melt-in-your-mouth experience. These instructions are per my grandmother, written down by my mother not too long before Grandma passed away. Grandma wouldn't give the recipe away until her last years. It's a family treasure now! Top the pie with meringue, whipped cream, or whipped topping.

1 cup sugar
3 tablespoons all-purpose flour
½ teaspoon salt
1 cup milk
1 (15 ounce) can crushed pineapple, drained
2 egg yolks
3 tablespoons butter
1 (9 inch) baked pie crust

This was posted on the back of a store brand can of sweetened condensed milk. It sounds so good. Unfortunately, my daughter's allergic to pineapple, but it gives options for lime, lemon, cranberry, orange or tangerine juice. I think the combination of orange and chocolate could be delicious. The prep time is a guess and does not include freeze time. I have not tried this, but I hope you like it!

1 (8 ounce) carton frozen whipped topping
food coloring (optional)

  • Combine sweetened condensed milk and fruit juice concentrate.
  • Fold in topping and food coloring. Pour into pie shell.
