1 cup whole-berry cranberry sauce
3/4 teaspoon grated orange zest
5 cups reduced-fat vanilla ice cream, softened
4 to 5 drops red food coloring, optional
1/2 cup crushed chocolate wafers (about 9 wafers)
16 fresh or frozen cranberries, thawed
8 orange peel strips
2 tablespoons sugar

Steps:

  • In a bowl, whisk cranberry sauce and orange zest until blended. Fold in ice cream and food coloring if desired. Cover and freeze for 15 minutes., Meanwhile, sprinkle crushed wafers in a 9-in. pie plate coated with cooking spray. Freeze for 10 minutes. Spoon ice cream mixture into pie plate. Cover and freeze 4 hours or until firm. Toss cranberries and orange peel in sugar. Remove pie from freezer 10-15 minutes before cutting. Garnish with sugared cranberries and orange peel.

While some recipes rely on tangy buttermilk to offset the rich custard, this version uses lemon juice and barely cooked cranberries instead.

Yield Makes one 9" pie

Number Of Ingredients 13

1 (9") store-bought or homemade prebaked pie crust
12 oz. fresh or frozen cranberries
1½ cups (300 g) sugar
¾ tsp. kosher salt
1 Tbsp. finely grated lemon zest (from 1 lemon)
1 Tbsp. plus 1½ tsp. fine-ground cornmeal
1 Tbsp. all-purpose flour
4 large eggs, room temperature
½ cup heavy cream
4 Tbsp. unsalted butter, melted, slightly cooled
1 tsp. vanilla extract
¼ cup fresh lemon juice
Powdered sugar (for serving; optional)

Steps:

  • Place a rack in middle of oven; preheat to 325°F. Place pie crust on a rimmed baking sheet. Cook cranberries in a medium saucepan over medium heat, shaking pan occasionally, until some have begun to split and burst, 6-8 minutes. Drain off any excess liquid. Remove from heat and let cool (if you're in a rush, transferring to a baking sheet or medium bowl will help them cool faster).
  • Combine sugar and salt in a large bowl, then add lemon zest. Use your fingers to rub zest into sugar until moist and fragrant. Whisk in cornmeal and flour, then add eggs and vigorously whisk until well combined, about 30 seconds, Whisk in cream, butter, and vanilla, then add lemon juice and whisk again. Set a few cranberries aside for the top. Gently fold in remaining cranberries with a rubber spatula, breaking up any clumps.
  • Gently pour mixture into pie crust and dot reserved cranberries over top of custard (this makes for the most photo-worthy dessert). Bake pie until top is golden brown and set but custard still jiggles in the center (about a 3" radius), 60-70 minutes. If your pie isn't as brown as you'd like it, you can increase oven temperature to 350°F for the last 5-10 minutes. Transfer pie to a wire rack and let cool (custard will fall as it cools). Transfer pie to the fridge and chill at least 1 hour.
  • Just before serving, dust with powdered sugar if using. For the cleanest slices, cut with a hot dry knife (just like if you were cutting cheesecake).
  • Do ahead: Pie can be made 3 days ahead. Keep chilled. Return to room temperature to serve if you'd like.

1/2 cup packed light brown sugar
1 tablespoon maple syrup
1 teaspoon ground cinnamon
2 teaspoons pumpkin pie spice
2 cups dried cranberries
3 cups almonds
1/2 cup unsweetened coconut flakes

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter, brown sugar, and maple syrup in large pot over medium heat. Stir in cinnamon and pumpkin pie spice. Add cranberries, almonds, and coconut flakes and stir to combine.
  • Spread mixture on greased cookie sheet. Bake 20 minutes or until mixture is crunchy and lightly browned. Transfer to a bowl when cooled and serve.

1 1/2 cups (5 1/4 ounces) fresh cranberries
1/2 cup plus 1/3 cup granulated sugar, plus more for sprinkling
1 tablespoon water
All-purpose flour, for dusting

1 large egg white, lightly beaten
8 ounces cranberry jam or preserves
10 tablespoons unsalted butter, room temperature
3 large eggs
1/2 teaspoon pure vanilla extract
6 ounces (about 1 1/4 cups) whole almonds, finely ground in a food processor
1 teaspoon ground cinnamon
1/4 teaspoon salt

Steps:

  • Put fresh cranberries, 1/3 cup sugar, and the water into a saucepan over medium heat and cook, stirring to dissolve sugar, until cranberries have just softened, about 3 minutes. Remove from heat, and let cool completely.
  • On a lightly floured work surface, roll out dough to a 12-inch circle, 1/8 to 1/4 inch thick. Transfer to an 8-by-2-inch springform pan, pressing crust into bottom and up sides. Trim excess flush with rim. Refrigerate for 30 minutes.
  • Preheat oven to 350 degrees. Prick tart crust all over with a fork. Cut a 12-inch round of parchment, and place on top of chilled crust. Fill with pie weights or dried beans. Bake for 10 minutes. Remove weights and parchment, and brush crust lightly with egg white. Return to oven, and bake until pale golden, about 25 minutes. Refrigerate remaining egg white. Let crust cool in pan on a wire rack for 10 minutes.
  • Raise oven temperature to 375 degrees. Spread jam over bottom of tart crust.
  • Beat butter and remaining 1/2 cup sugar with a mixer on medium-high speed until pale and fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Reduce speed to medium. Slowly add ground almonds, cinnamon, and salt, and beat until just combined. Spread mixture over jam-covered crust.
  • Bake tart until filling is set and has darkened slightly, 45 to 50 minutes. (If top darkens too quickly, cover loosely with foil.) Remove tart from oven, brush top with egg white, and sprinkle with sugar. Return to oven, and bake for 5 minutes more. Let cool on a wire rack for 15 minutes. Remove from pan, and top with candied cranberries. Serve warm.

1/3 cup sliced almonds, toasted

  • In a bowl, combine the sugar, flour, butter, nutmeg and salt. Add apples and cranberries; stir gently. Pour into pastry shell. , In a small bowl, combine the brown sugar, flour and cinnamon; cut in butter until crumbly. Stir in almonds; sprinkle over filling. This fluffy pink pie with red flecks is festive looking for the holidays and easy to make ahead of time. Top it just before serving with a cranberry glaze star(see recipe.)

1 pie crust
2 cups fresh or frozen cranberries, coarsely chopped
1 cup sugar
2 egg whites
1 tablespoon frozen orange juice concentrate
1 teaspoon vanilla
1/8 teaspoon salt
1 cup whipping cream
1/4 cup sugar
1 tablespoon cornstarch
1/2 cup fresh or frozen cranberries
1/3 cup water

Steps:

  • Spread the pie crust in a 9 inch pie plate and bake at 450 degrees for 9- 11 minutes until light golden brown; cool completely.
  • For the filling combine the 2 C of cranberries and 1 C of sugar and let stand for 5 minutes.
  • Add the egg whites, orange juice concentrate, vanilla and salt and beat on a low speed until blended and frothy.
  • Beat on high speed until stiff peaks form.
  • Fold into the cranberry mixture.
  • Pour into the cooled crust and freeze until firm and ready to serve.
  • At serving time make the glaze by combining the 1/4 C sugar and cornstarch, in a small pan, then the 1/2 C cranberries and 1/3 C water.
  • Cook and stir until the mixture becomes thick and bubbly.
  • Cool.
  • Spoon over the pie right before serving, spreading and shaping the glaze into a star shape on top of the pie.
  • Cooking and preparation time are divided between the filling and glaze.
