FROSTED ZUCCHINI BARS
"I grow tons of zucchini in my garden-and this is a wonderful way to share it," says green thumb Sandi Laskowski of Rapid City, South Dakota. "These moist tender bars are topped with a yummy caramel cream cheese frosting. When I bring a plateful of them to work, they're always a hit!"

- In a bowl, beat the eggs, sugar, oil, applesauce and vanilla. Combine the dry ingredients; add to the egg mixture and mix well. Stir in zucchini, dates and walnuts. Spread into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a saucepan, heat caramels and water over low heat until caramels are melted, stirring occasionally. In a bowl, beat cream cheese and confectioners' sugar until smooth. Add caramel mixture and salt; mix well. Spread over cooled bars.

- In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; gradually add to the creamed mixture. Stir in zucchini, coconut and nuts. Spread into a greased 15x10x1-in. baking pan. , Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. For frosting, combine confectioners' sugar and cinnamon in a bowl. Stir in butter, vanilla and enough milk to achieve spreading consistency. Frost bars before cutting.

CARAMEL-FROSTED ZUCCHINI BARS
What a delicious way to use up all that summer zucchini! The caramel frosting on these moist bars add so much to this recipe. My frosting set up fast, so I spread and frosted at the same time. You can cut your bars small or large size, I liked mine smaller. My kids really liked this, but I never mention they had zucchini in them! (hehe)!

- Cream 3/4 cup softened margarine, 1 cup brown sugar, sugar, vanilla and eggs in bowl.
- Sift in next 6 dry ingredients, mixing well.
- Fold in zucchini, chocolate chips and walnuts in that order.
- Spread in greased and floured 10x15-inch baking pan.
- Bake at 375° for 20 to 25 minutes.
- Bring 1/2 cup melted margarine, 1 cup brown sugar and milk to a boil in saucepan.
- Boil for 3 minutes.
- Stir in confectioners' sugar.
- Spread over cake; cut into bars.

- 1. Cream 3/4 cup butter, 1/2 cup sugar, and 1/2 cup brown sugar. Add eggs and 1 tsp. vanilla. Mix in flour, 1 tsp. cinnamon and baking powder. Blend in zucchini.
- 2. Pour into greased jelly roll pan and bake at 350 degrees for 25 - 30 minutes. While baking, prepare the frosting.
- 3. Frosting: Mix the 2 cups powdered sugar, cinnamon, melted butter, vanilla, and milk. Mix until creamy. Add additional milk, if necessary, to get desired consistency. Cool zucchini bars and frost. Cut into squares. ENJOY!!!

- 1. Heat oven to 350 degrees. Lightly grease and 13 x 9 inch baking pan Set aside. Grate your zucchini and orange peel and juice your orange. set them all aside.
- 2. In large mixing bowl combine 3/4 c butter, granulated sugar, brown sugar, eggs, 1 tsp peel and 1 tsp vanilla. Beat at medium speed until light and fluffy.
- 3. Add flour, baking powder and salt. Beat on low speed until well blended. Stir in zucchini, raisins and coconut.
- 4. Spread mixture evenly in prepared pan. Bake for 20 to 25 minutes or until slight impression remains when bars are lightly touched in center. Cool completely.
- 5. In medium mixing bowl, combine powdered sugar, butter, cream cheese, orange peel, orange juice and vanilla. Beat on low speed until smooth. Spread frosting evenly over bars OPTIONAL: Top with chopped walnuts (or nut of choice)
FROSTED BUTTERSCOTCH ZUCCHINI BARS
Fresh zucchini and butterscotch chips give these homemade oatmeal bars a fun summer twist.

- Beat the butter and brown sugar until creamy. Add the eggs and vanilla and beat again. Stir together the flour, oats, salt, cinnamon, and nutmeg. Slowly add it to the butter mixture until it is all mixed in.
- Stir in the zucchini and butterscotch chips by hand. Spread the mixture in a greased 9x13 glass baking dish. Bake at 350 degrees for 25 minutes. Remove from the oven and let cool completely.
- Beat the butter, vanilla, whipping cream, and salt until creamy. Slowly beat in the powdered sugar until mixed in. Beat on medium high for 1-2 minutes. Spread over the cooled bars. Cut into 24 bars. Store in a sealed container on the counter.
