2 egg whites

⅛ teaspoon salt

Steps:

  • Preheat the oven to 300˚F (150˚C).
  • In a large bowl, combine the walnuts, egg whites, sugar, and salt and mix with a rubber spatula until the walnuts are well-coated.
  • Spread the walnut mixture evenly on a parchment paper-lined baking sheet.
  • Bake for 30-40 minutes, stirring every 10 minutes, until the walnuts are crystallized.
  • Cool completely.

Steps:

  • Put 250g granulated sugar and 50ml water in a pan and set over a medium heat. Cook until the sugar dissolves and is just beginning to colour. Add 200g toasted walnuts and stir until the sugar crystallises, covering the nuts. Pour onto a tray and leave to cool before breaking up to serve.

A friend gave me this recipe after I went crazy over them. I make them every Thanksgiving and Christmas. Everyone just loves them Last year my 13 year old grandson requested the recipe so that he could make them himself. (They look real nice sprinkled over a cookie platter.)

1 egg white
1 tsp cold water
1 lb pecan halves
1/3 c brown sugar, firmly packed
3 Tbsp sugar
1/4 tsp salt
1/2 tsp cinnamon (or a little more)

Steps:

  • 1. Beat egg white slightly. Add water and beat until frothy, but not thick. Add pecans and sir so they are all well coated.
  • 2. Mix remaining ingredients and add to nuts. Toss well to coat.
  • 3. Pour mixture onto a greased cookie sheet and bake in 250 oven for one hour. Stir occasionally while baking.
  • 4. Bet you can't eat just one!!

1 egg white
1 tablespoon cold water
1 lb pecans, halved (this is equivalent to 4-5 cups)
1 teaspoon salt
1 teaspoon cinnamon
1 cup sugar

Steps:

  • Heat oven to 300 degrees.
  • Liberally spray a baking sheet with cooking spray, such as Pam.
  • Beat egg white and water until foamy, not stiff.
  • Stir in pecans to coat.
  • Mix salt, sugar and cinnamon together and add to coated pecans.
  • Toss pecans until thoroughly coated.
  • Place coated pecans on cookie sheet.
  • Bake 30-35 minutes, TURNING EVERY 5-6 MINUTES (this is VERY important to the success of the recipe) Remove from oven and stir again before cooling.

3/4 cup Diamond of California® pecan halves
3/4 cup Diamond of California® shelled walnuts
1/2 cup raw (green) pumpkin seeds
2 cups rice pockets cereal
1/2 cup dried cranberries
1/4 cup packed golden brown sugar
2 tablespoons olive oil
1 tablespoon water
1 teaspoon chili powder
3/4 teaspoon salt

Steps:

  • Preheat oven to 300°F. Line a heavy large baking sheet with a silicone liner or foil. Combine the pecans, walnuts and pumpkin seeds in a medium bowl. Stir the brown sugar, oil, water, chili powder and salt to blend in a small bowl. Drizzle 2 tablespoons of the brown sugar mixture over the nut mixture and toss to coat. Spread the nut mixture out into a single layer on the prepared baking sheet. Bake the nut mixture until it's beginning to turn golden brown, about 10 minutes. Meanwhile: Toss the cereal and cranberries with the remaining brown sugar mixture in the same bowl (no need to wash). Add the cereal mixture to the nut mixture on the pan and spread out into a single layer. Roast in the oven until golden brown and glazed, about 12 minutes longer. Cool completely. Toss to combine. Transfer to jars and seal tightly. (Mix can be made up to 2 weeks ahead.)

1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds
1 cup unsalted, dry roasted cashews
1 teaspoon salt

¼ teaspoon cayenne pepper
½ cup white sugar
¼ cup water
1 tablespoon butter

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.

3/4 cup packed brown sugar
1/2 cup butter, cut into pieces
1/2 cup milk
2 tablespoons corn syrup
5 cups pecan halves, toasted

Steps:

  • Line 15x10-inch pan with sides with waxed paper. In heavy 3-quart saucepan, stir together granulated sugar, brown sugar, butter, milk and corn syrup. Heat to boiling over medium heat, stirring constantly. Boil 7 to 8 minutes, stirring constantly, to 234°F on candy thermometer or until small amount of mixture dropped into a cup of very cold water forms a ball that flattens when removed from water.

1 cup white sugar
1 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup water
2 cups pecan halves (8 oz) or 2 cups walnut halves (8 oz)

Steps:

  • Combine sugar, salt, cinnamon, nutmeg, cloves, and water in a medium saucepan over medium heat, stirring constantly until sugar is dissolved.
  • Continue cooking syrup, without stirring, to 238°F on candy thermometer, or until a little syrup dropped into cold water forms a soft ball.
  • Remove from heat and add nuts, stirring gently until the mixture becomes creamy.
  • Turn onto waxed paper (or a non-stick mat or jelly roll pan) and separate the nuts with a fork. Be careful because they will be hot. Let dry and store in an air-tight container.
