1 cup butter, softened
1-1/2 cups packed brown sugar
2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1 cup quick-cooking oats
1 cup chopped salted peanuts
FROSTING:
1/2 cup peanut butter
3 cups confectioners' sugar
1/3 to 1/2 cup 2% milk

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour and baking powder; gradually add to creamed mixture and mix well. Stir in oats and peanuts. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks to cool. , For frosting, in a bowl, beat peanut butter, confectioners' sugar and 1/3 cup milk; add additional milk if necessary. Frost cookies.

This delicious recipe came from a friend at Church...She is always requested to make them, and for good reason...they are great! I put my own touch on them...hers only have the chocolate topping, I added the peanut butter, at my sons request. Kids love these...even the big ones...lol! The oat meal gives them a somewhat healthy...

Number Of Ingredients 15

1/2 c butter, softened
1/2 c sugar
1/2 c packed, brown sugar
1 egg
1/2 tsp vanilla extract
1/4 tsp salt
1/2 tsp baking soda
1/3 c peanut butter
1 c flour
1 c oatmeal, quick cook
1 - 12 oz package milk chocolate or semi sweet chips
PEANUTBUTTER GLAZE - OPTIONAL
1/2 c confectioners' sugar
1/3 c peanut butter
5 - 6 Tbsp cream

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking pan with non stick cooking spray.
  • 2. In a medium bowl; mix the butter, sugar and brown sugar together with a mixer until creamy.
  • 3. Add the egg, peanut butter, baking soda, salt, vanilla, and flour. Mix until all ingredients are evenly blended.
  • 4. Stir in the oatmeal by hand, just until evenly blended
  • 5. Scrape the mixture into the greased pan and pat the batter with fingertips, until it is spread evenly onto the bottom of the pan.
  • 6. Place in the oven and bake for 20 to 25 minutes. ( mine took 20 minutes )
  • 7. Remove from the oven and sprinkle chocolate chips over the bars while they are still hot.
  • 8. Allow the chips to sit for 5 minutes, or until soft enough to spread evenly over the top of the bars. If using peanut butter glaze, make it now.
  • 9. I mix frosting ingredients together until smooth. Fold down the top of a baggie, add the frosting. Cut a hole on one corner of the bag, and pipe it onto the bars.
  • 10. Enjoy!!

1 cup sugar
2 1/2 cups creamy peanut butter, divided
1 egg
1 1/2 teaspoons vanilla extract
2 1/2 cups quick-cooking oats
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons butter or 6 tablespoons margarine, softened
4 cups confectioners' sugar
1/2 cup baking cocoa
1 teaspoon vanilla extract
6 -8 tablespoons milk

Steps:

  • In a mixing bowl, cream butter and sugars. Add 1 cup peanut butter, egg and vanilla; mix well. Combine oats, flour, baking soda and salt; add to the creamed mixture. Spread into a greased 15 x 10 x 1 inch baking pan.
  • Bake at 350 degrees for 13-17 minutes or until golden brown. Cool slightly on a wire rack, about 12 minutes. Spread with remaining peanut butter. Cool completely.
  • In a mixing bowl, combine the butter, confectioner's suagr, cocoa, vanilla and enough milk to achieve spreading consisitnecy. Spoon over peanut butter layer, then spread. Cut into bars.

½ cup white sugar
½ cup packed brown sugar
1 egg
⅓ cup peanut butter
½ teaspoon vanilla extract
1 cup all-purpose flour

1 cup semisweet chocolate chips
½ cup confectioners' sugar
¼ cup peanut butter

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking pan.

1 cup brown sugar
1/2 cup peanut butter
1 cup granulated sugar
2 eggs
2 cups flour
1 teaspoon baking soda
