I often make a peanut butter version of this cake but wanted to switch things up by introducing a new flavor. I tinkered with the recipe and decided mint was my new go-to ingredient. 2 large eggs, room temperature
1-1/2 cups water
1 cup canola oil
1 cup sour cream
2 tablespoons white vinegar
1 teaspoon vanilla extract
2-1/2 cups sugar
2 cups all-purpose flour
3/4 cup baking cocoa
2 teaspoons baking soda
1 teaspoon salt
MINT FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
5 cups confectioners' sugar
3/4 teaspoon mint extract
2 to 3 drops green food coloring
24 mint Andes candies, chopped
CHOCOLATE GLAZE:
8 ounces semisweet chocolate, coarsely chopped
1/2 cup half-and-half cream
2 tablespoons light corn syrup
Additional mint Andes candies, chopped, optional

Steps:

  • Preheat oven to 350°. Line bottom of 3 greased 8-in. round baking pans with parchment; grease paper., In a large bowl, beat eggs, water, oil, sour cream, vinegar, and vanilla until well blended. In another bowl, whisk sugar, flour, cocoa, baking soda and salt; gradually beat into egg mixture., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 30-35 minutes. Cool in pans 10 minutes before removing to wire racks; remove parchment. Cool completely., In a large bowl, beat cream cheese and butter until blended. Gradually beat in confectioners' sugar until smooth. Beat in mint extract and food coloring., Place 1 cake layer on a serving plate; spread with 2/3 cup mint frosting. Sprinkle with half the mints. Repeat layers. Top with remaining cake layer. Frost top and sides of cake with remaining frosting. Refrigerate until set., Place chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate; let stand 5 minutes. Stir with a whisk until smooth. Stir in corn syrup. Cool slightly, stirring occasionally. Pour over cake and quickly spread to edges. If desired, top with additional mints. Refrigerate until serving.

3 ounces unsweetened chocolate
1 cup water
2 cups sugar
2 large eggs
1/2 cup whole milk
1 teaspoon vanilla extract

20 large marshmallows
CHOCOLATE ICING:
4 ounces unsweetened chocolate, chopped
1/4 cup butter, cubed
1/3 cup whole milk

3-3/4 cups confectioners' sugar

Steps:

  • In a small microwave-safe bowl, melt shortening and chocolate at 50% power; stir until smooth. Add water; cool slightly. Transfer to a large bowl. Add the sugar, eggs, milk and vanilla; beat well. Combine the flour, baking soda and salt; add to batter and mix until smooth., Pour into a greased 13-in. x 9-in. baking pan. Bake at 350° for 28-32 minutes or until a toothpick inserted in the center comes out clean., Arrange marshmallows over the top; bake 5 minutes longer or until marshmallows are softened. Spread marshmallows evenly over top of cake. Cool on a wire rack., For icing, in a large microwave-safe bowl, melt chocolate and butter; stir until smooth. Cool slightly. Beat in the milk, vanilla and confectioners' sugar until smooth. Frost cake.

1/2 cup baking cocoa
1/2 cup boiling water
1/2 cup butter, softened
1 cup packed brown sugar

FROSTING:

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. In a small bowl, mix cocoa and boiling water until smooth; cool slightly. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease parchment., Preheat oven to 375°. Cream butter, brown sugar and 3/4 cup sugar until light and fluffy. Beat in vanilla and 1 egg yolk at a time. In another bowl, whisk together flour, baking soda, cream of tartar and salt. Add to creamed mixture alternately with buttermilk, beating after each addition. Stir in cocoa mixture., With clean beaters, beat egg whites on medium speed until soft peaks form. This light and delicate square layer chocolate cake is loaded with an ultra creamy milk chocolate icing. Be sure to use cake flour, not all-purpose, to give your cake its delicate texture. Instead of slicing into squares, I prefer to slice vertically down the center, then cut slices horizontally about 1 inch apiece. I found this recipe in Food an Wine magazine. Cook time also reflects cooling time.

1 1/4 cups cake flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 cup unsalted butter
1/2 cup whole milk
6 large eggs, separated
1 cup sugar (divided by 1/2 cups)
1 pinch salt
1 1/2 cups heavy cream
1 1/2 lbs milk chocolate, finely chopped
shaved milk chocolate, for garnish (optional)

Steps:

  • Preheat the oven to 325°.
  • Butter and flour two 9" -square cake pans; set aside.
  • In a medium bowl, whisk the cake flour, cocoa and baking powder; set aside.
  • In a medium saucepan, melt the butter in the milk over low heat.
  • Transfer to a large bowl and allow to cool slightly.
  • Whisk in the egg yolks and 1/2 cup of the sugar.
  • Add the dry ingredients and whisk until smooth; set aside.
  • In a clean bowl, beat the egg whites with the salt until soft peaks form. Gradually add the remaining 1/2 cup sugar and beat at medium-high speed until the whites are stiff and glossy.
  • Fold beaten egg whites into the batter until no streaks remain.
  • Divide the batter between the two cake pans and bake for 25 minutes, or until the cakes are springy and a toothpick inserted in the centers comes out clean.
  • Transfer the cakes to a rack and allow to cool completely.
  • While the cakes are cooling, in a medium saucepan, bring the heavy cream to a simmer.
  • Put the chocolate in a heatproof bowl and pour the hot cream on top.
  • Allow to stand for 3 minutes, then whisk melted chocolate until smooth.
  • Let the frosting stand at room temperature, stirring occasionally, until thick enough to spread, about 1 hour.
  • Turn the cakes out of the pans and put one layer on a plate.
  • Top with 1 cup of the frosting, spreading it to the edge.
  • Top with the second layer and spread the remaining frosting over the top and sides.
  • Let the cake stand at room temperature for about 30 minutes before cutting into squares.
  • Serve and enjoy.

3 tablespoons cocoa
1 teaspoon baking soda
1 tablespoon vinegar
1 cup sugar
1/2 teaspoon salt

4 tablespoons cocoa, sifted
1 pint cream, whipping cream
1/2 cup milk, 2 percent milk

Steps:

  • Sift ALL dry ingredients in an ungreased teflon 8X8 pan.
  • Make 3 holes, vanilla in one, vinegar in another, oil in another. Pour water overall, mix. Bake 350 degrees for 30-35 minutes. Toothpick in center should come out clean.
  • Frosting: 1 1/2 Cups sugar, 4 Tbls sifted cocoa, 1 pint whipping cream, 1/2 cup 2% milk. Slow boil until small soft ball forms in bottom of a cold glass of water, remove from heat, add a bit of vanilla and a bit of butter. Cool, beat, spread on cake.

1 box chocolate graham crackers
2 box sugar free/fat free instant vanilla pudding (1 oz each)
3 1/2 c fat free milk
1 8 oz container sugar free whipped topping defrosted
1 c creamy peanut butter
1 c mini chocolate chips
PB AND CHOCOLATE FROSTING
this is an adaptation of diane smith's frosting (jap member) and it is out of this world rich
1/4 c unsalted butter softened
1/4 c hershey's extra dark cocoa
1/4 c low fat evaporated milk
1-1/2 c confectioners' sugar- diane uses a bit more, it's up to you
1 dash(es) salt
2 Tbsp creamy peanut butter (my addition)
2 Tbsp dry roasted peanuts crushed (my addition also)

Steps:

  • 1. Spray a 9 x 13 inch pan with cooking spray. Set aside and make the pudding mixture. In large bowl combine the pudding mix, milk and peanut butter with a hand mixer. Mix about 2-3 minutes until all ingredients are combined. Fold in the whipped topping and chocolate chips.
  • 2. In the sprayed 9 x 13 inch baking dish, layer 7-12 graham grackers.
  • 3. Add half the pudding mixture on top of the crackers, smooth it out and layer another 7-1/2 graham crackers on top of that. We're getting there.
  • 4. Add the remaining pudding mixture to the top of the second layer of crackers and top with the final 7-1/2 graham crackers. Now it's time to make the frosting.
  • 5. In medium size bowl, combine softened butter, cocoa, peanut butter and milk. Now add the confectioner's sugar and salt. Spread over top layer of graham crakers and sprinkle with chopped peanuts. Cover well with plastic wrap and refrigerate for at least 12 hours.
  • 6. Carefully cut the cake into 16 pieces and serve. The hardest part about making this cake is the waiting time, and I must admit the slicing process is a bit tedious, but it's all worth it. Enjoy!

250g butter , plus a little extra for greasing
140g white chocolate , broken into pieces
250ml milk
1 tsp vanilla extract
250g self-raising flour
¼ tsp bicarbonate of soda
300g caster sugar
2 large eggs , lightly beaten
300g tub Philadelphia cheese
85g butter , softened
100g icing sugar , sifted
mini eggs , to decorate (or use 50g/2oz chopped hazelnuts)

Steps:

  • Heat oven to 160C/fan 140C/gas 3. Grease a deep 23cm cake tin and line the base with greaseproof paper. Place the butter, white chocolate, milk and vanilla extract in a small saucepan, then heat gently, stirring, until melted. Combine the flour, bicarb and sugar in a large bowl with a pinch of salt, then stir in the melted ingredients and eggs until smooth. Pour the batter into the tin, then bake for 1 hr, or until the cake is golden and a skewer inserted into the centre comes out clean. Cool in the tin. Once cool, the cake can be wrapped in cling film and foil, then frozen for up to 1 month.
  • To make the frosting, beat together the Philadelphia, butter and icing sugar until smooth. Spread over the cake, then decorate with mini eggs.

This cake was featured at a recent community event, and was quite popular. I made 2 chocolate cakes, one was chocolate inside & out. This one had a yellow cake batter, but I frosted it with a combination of cream Cheese & chocolate frosting combined. Then I garnished it with fresh raspberries & miniature marshmallows. Needless to say every one loved it, & there was none left when the event was over. The sour cream gives it the moistness it needs, & the combo frosting gave it a very unique flavor. One of the few frostings that I did not make from scratch. But the cake still tasted great.

3 cup(s) all purpose white lily flour + 6 tablespoons

1 can(s) chocolate frosting ( i used pillsbury)

Steps:

  • Preheat oven to 325 degrees F. Cream the butter with the sugar and sour cream and beat for at least 12-15 minutes till no granules remain.
  • Then add eggs one at a time, and beat well after each has been added.
  • Then add flour in 3 increments, and beat well after each third has been added. Add almond extract and beat till blended into cake batter.
  • Prepare cake pan by spraying with Bakers Joy, or grease cake pan with butter and dust lightly with flour, then remove any excess flour, before adding cake batter to pan. I used a 16 cup square Bundt Pan, but your standard 12 cup bundt pan will also work. Pour batter into pan and bake in preheated 325 degree oven for1 1/2 hours or until toothpick inserted into center comes out clean. Remove from oven, and let sit for about 10 minutes until cake pulls away from sides of pan. Then invert onto cooling rack to cool completely.
  • Prepare frosting by combining the 2 cans into a medium size bowl, and stirring until it is completely blended. Then frost cake as desired, and garnish according to your preference. I used fresh raspberries and mini marshmallows. Serve and enjoy.

1 teaspoon xanthan gum
1/2 cup unsweetened cocoa powder

1 cup cold unsweetened soymilk (or other dairy free milk, cold coffee, or water)
2 tablespoons rice vinegar

1/2 cup milk (or diary free milk of choice, or water)

Steps:

  • Preheat oven to 350 degrees F. Spray an 8" square or 9" round cake pan with nonstick spray or line a dozen muffin cups with cupcake liners.
  • In a medium size bowl, stir together the brown rice flour, xanthan gum, cocoa, brown sugar, chocolate chips (if using), nuts (if using), baking soda, and salt.
  • In a two cup glass measuring cup, measure the 1/2 cup oil, add the 1 cup of liquid, then add the vinegar and vanilla extract. Stir to combine.
  • Stir the liquid ingredients into the dry ingredients until just moistened.
  • Pour the batter into the prepared pan and bake for 30-35 minutes for cake or 25 minutes for cupcakes, or until the cake tests done. Set aside to cool.
