Caramel Frosting:
1/4 cup butter, softened
2/3 cup brown sugar
1 egg
1 cup applesauce
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon pumpkin pie spice
3/4 cup raisins
2 tablespoons butter
3 tablespoons milk
1/2 cup brown sugar
1 cup confectioner's sugar
1/2 teaspoon vanilla

Steps:

  • For bars, beat butter, brown sugar, and egg. Stir in applesauce. In a separate bowl, mix flour, baking soda, salt, and pumpkin pie spice. Gradually stir flour mixture into applesauce mixture until well combined. Stir in raisins. Spread batter into greased 8x8 pan and bake at 350 for about 20 minutes. Allow to cool. For frosting, melt butter in saucepan. Mix in milk and brown sugar. Increase heat to medium. When mixture starts to boil, continue cooking for one minute, stirring constantly. Remove from heat, cool slightly, and beat in confectioner's sugar and vanilla. Add additional milk 1/2 tablespoon at a time to reach desired consistency. Spread over cooled bars, slice, and serve.

  • Topping: Brown butter in a small pan.

¼ cup butter or margarine, softened
⅔ cup brown sugar
1 egg
1 cup applesauce
1 cup all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon pumpkin pie spice
1 ½ cups confectioners' sugar
3 tablespoons margarine, melted
1 tablespoon milk
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a medium bowl, mix together the butter, brown sugar and egg until smooth. Stir in applesauce. Combine the flour, baking soda, salt and pumpkin pie spice; stir into the applesauce mixture until well blended. Spread evenly into the prepared pan.
  • Bake for 25 minutes in the preheated oven, or until edges are golden. Cool in the pan over a wire rack.
  • In a small bowl, mix together the confectioners' sugar and margarine. Stir in vanilla and milk until smooth. Spread over cooled bars before cutting into squares.

1/4 cup water
6 tablespoons packed light-brown sugar
1 teaspoon fresh lemon juice
Pinch of coarse salt
2 tablespoons unsalted butter, cut into small pieces
3 pounds small assorted apples, such as Gala, McIntosh, or Fuji (about 10)
1/2 teaspoon ground cinnamon
Pinch of freshly grated nutmeg
Pinch of ground cloves

Steps:

  • Preheat oven to 425 degrees. Combine water, sugar, lemon juice, and salt in a 9-by-13-inch baking dish.
  • Scatter butter pieces over mixture, and top with apples. Roast until apples are very soft, 30 to 40 minutes.
  • Working in batches, pass apple mixture through the medium disk of a food mill and into a bowl. Stir in spices. Serve warm, at room temperature, or chilled.

1 cup raisins
1 cup coffee (weak or strong) or 1 cup water
1 cup sugar
1/3 cup shortening or 1/3 cup oleo
1 teaspoon cinnamon
1 teaspoon clove
1/2 teaspoon nutmeg
2 cups flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup confectioners' sugar
2 tablespoons butter or 2 tablespoons oleo
1/2 teaspoon vanilla
1 pinch salt
enough warm coffee to make frosting spreadable on warm cookie

Steps:

  • Combine the liquid ingredients in pot, Bring to boil, boil 5 minutes, then let cool.
  • Combine the dry ingredients.
  • Mix dry ingredients with cooled ingredients.
  • Spread in greased floured 11 x 15 pan.
  • If batter is too thick, thin with sherry or rum or water before spreading.
  • Bake in a 350 oven for 20 minutes approximately
  • Spread frosting on warm cake.
  • I think you could adjust any of the spices to your own taste, but we liked it as is.

2 large navel oranges, juice and zest of
1 lemon, juice and zest of
3 lbs granny smith apples (about 6-8 apples)
3 lbs sweet red apples (about 6-8 apples)
1/2 cup light brown sugar, packed
4 tablespoons unsalted butter
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice

Steps:

  • Preheat oven to 400 degrees.
  • Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice.
  • Pour the apples, reserved apple peel and juice into a nonreactive Dutch oven or enameled iron pot.
  • Add the brown sugar, butter, cinnamon and allspice and cover the pot. Bake for 1 hour or until all the apples are soft.
  • Remove and discard the red apple peel. Mix with a whisk until smooth and serve warm or at room temperature.
