3/4 cup raisins
3 tablespoons orange juice or 3 tablespoons orange-flavored liqueur
1/2 cup butter, at room temperature
3/4 cup sugar
1 large egg
2 teaspoons orange zest
1 cup all-purpose flour
1 teaspoon baking soda
1 1/2 cups rolled oats
8 ounces white chocolate chips
1 teaspoon vegetable oil or 1 teaspoon shortening

Steps:

  • Combine orange juice (or liquor) and raisins in a small bowl and let stand overnight (or--if you are like me and want to make them right now--cover and microwave for 1 minute, cool covered).
  • Beat butter and sugar in a large bowl until fluffy.
  • Beat in egg and orange peel.
  • Combine flour and baking soda in another large bowl and stir into butter mixture.
  • Add raisins, any soaking liquid, and oats and mix well.
  • Drop dough by rounded teaspoonfuls onto greased baking sheets, spacing 2 inches apart and flattening slightly.
  • Bake at 350°F 10 to 12 minutes.
  • Transfer to racks and cool completely.
  • Microwave chocolate and oil 3 to 4 minutes on low power in a small deep bowl, stirring once.
  • Let stand 2 minutes, stir until smooth.
  • Dip one-third of cookie in chocolate and set on waxed paper.
  • Chill until chocolate is firm.
  • STRIP VERSION:.
  • Divide dough into 4 equal portions.
  • Place 2 portions, at least 6 inches apart, on baking sheet.
  • Pat each portion into a 12-inch-long log with well-floured hands (dough will be sticky) and flatten each log to 1 1/2 inches wide.
  • Bake until golden brown, 12 to 14 minutes.
  • Cool on baking sheets 2 minutes.
  • Cut logs diagonally into 1-inch-wide strips.
  • Follow directions for dipping cookies.

2 cups butter, softened
1-3/4 cups sugar
1 egg yolk
4 cups all-purpose flour
Prepared vanilla frosting
Food coloring and decorating sprinkles, optional

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolk. Gradually add flour and mix well. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Flatten with a glass dipped in flour.Bake at 375° for 8-10 minutes or until lightly browned. Remove to wire racks to cool., Tint frosting with food coloring if desired. Frost cookies. Decorate as desired.

1 cup butter, softened
¾ cup white sugar
1 egg
2 tablespoons whole milk
1 ½ teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup butter, softened
3 cups confectioners' sugar
1 ½ tablespoons vanilla extract
9 tablespoons evaporated milk, or more as needed
6 cups confectioners' sugar, or more as needed

Steps:

  • Beat 1 cup softened butter with white sugar in a large bowl until creamy. Beat egg, whole milk, and 1 1/2 teaspoons vanilla extract into butter mixture until smooth. Whisk flour, baking powder, and salt in a separate bowl and gradually stir dry ingredients into moist ingredients to make a smooth dough. Chill dough in refrigerator for 2 to 3 hours.
  • Preheat oven to 400 degrees F (200 degrees C). Dust a pastry cloth or kitchen towel generously with flour.
  • Divide dough into thirds and roll each third out 1/8-inch thick on the prepared pastry cloth. Cut shapes out of the rolled dough with cookie cutters. Place cookies onto ungreased baking sheets.
  • Bake in the preheated oven until cookies are barely browned, 5 to 8 minutes. Let cookies cool on baking sheets for 5 minutes before removing to finish cooling on a wire rack.
  • Beat 1 cup softened butter, 3 cups confectioners' sugar, 1 1/2 tablespoons vanilla extract, and evaporated milk in a bowl until smooth. Gradually stir 6 cups confectioners' sugar into mixture until combined. Beat frosting hard until fluffy; stir in additional evaporated milk or confectioners' sugar if needed to reach desired consistency. Frost cooled cookies.
