BACON SQUASH SAUTE

6 bacon strips, diced
2 small zucchini, cut into 1/4-inch slices
2 small yellow summer squash, cut into 1/4-inch slices
1 medium onion, thinly sliced

Steps:

  • In a large skillet, cook bacon over medium heat until crisp; remove to paper towels. Drain, reserving 2 tablespoons drippings. , In the drippings, saute the zucchini, yellow squash and onion for 6-8 minutes or until crisp-tender. Sprinkle with bacon.

When fresh squash is in season I love cooking this recipe up with some Baked Pork Chops and Fried Sweet Potatoe Patties..........yum. Enjoy!

12 - 20 squash (sliced)
1 pkg bacon
2 onions, diced
salt and pepper to taste
1 tsp sugar
2 Tbsp olive oil

Steps:

  • 1. Clean and slice squash, dice up your onions and chop up bacon into bitesize squares.
  • 2. Fry up bacon, first, using a large skillet, pot or on a cookie sheet in the oven. Save bacon grease to add into the pot.
  • 3. Put saved bacon grease in heated pot (your not frying in deep bacon grease, just enough drippings from the bacon you cooked to use for sauteing and browning, even browning your squash some when you put them in to cook), add in onions and let them saute'. You want them good and brown.
  • 4. Once the onions are done, add in the sliced squash, along with 2 tbsp of EVOO (Extra Virgin Olive Oil). Add 1 tsp of sugar, some salt and pepper to taste. Cook on Medium heat.
  • 5. Let cook until they start to tenderize and turn a slight golden brown, then add in bacon and let cook until squash is completely tender, browned and done. Serve with Baked Pork Chops or any of your favorite meats. Enjoy!!!

My boyfriend suggested I add some squash to the fried potatoes as a way to use up the extra squash. It tastes really good as a side dish to pork or chicken.

1 cup vegetable oil
½ yellow onion, diced
4 potatoes, peeled and sliced
3 yellow squash, sliced
¼ cup butter
1 teaspoon paprika
1 teaspoon ground black pepper
1 teaspoon minced garlic
1 teaspoon salt
½ teaspoon red pepper flakes

Steps:

  • Heat vegetable oil in a large skillet over high heat until oil is hot; decrease heat to medium. Cook and stir onion and potatoes in the hot oil until potatoes are lightly browned and partially cooked, 15 to 20 minutes. Add squash, butter, paprika, black pepper, garlic powder, salt, and red pepper flakes; cook until potatoes are golden brown, 15 to 20 more minutes, turning occasionally. Remove from skillet with a slotted spoon.

3 small yellow squash, sliced
1 medium onion, chopped
1/4 teaspoon garlic powder
2 tablespoons olive oil
2 tablespoons vegetable oil
salt

Steps:

  • Prepare squash and place slices on a paper towel. Sprinkle with salt and allow to stand 10 minutes.
  • Heat olive oil in a medium size skillet and saute chopped onions. Dip out and set aside.
  • Pat squash slices with a paper towel to soak up beaded water drops.
  • Add vegetable oil to skillet and heat to medium temperature. Add squash slices and saute. Sprinkle with garlic powder.
  • Lift squash to serving dish and top with onion pieces.
  • Enjoy!

I thought I would try creating something I hadn't seen before. I combined an element of stir fry with some ingredients I had seen popping up in other squash recipes. Squash, onion and jalapeno are fried with bacon for a tasty summer side dish.

2 medium yellow squash, thinly sliced
½ medium onion, thinly sliced
1 jalapeno pepper, chopped
1 dash soy sauce
salt and pepper to taste

Steps:

  • Place bacon in a large skillet over medium-high heat. Cook until crisp. Remove bacon from pan, and set aside. Add the squash, onion, and jalapeno to the skillet. Fry in the bacon drippings until tender, but still firm, stirring frequently. Crumble bacon into the skillet, and season with soy sauce, salt and pepper. Stir, to blend in seasonings, and serve.

1 small onion, chopped
3 -4 tomatoes, quartered
garlic, minced, to taste

  • Cut bacon into approximately 1-inch size pieces and fry until crisp. Add chopped onion and sauté for a few minutes to lightly brown.
  • Add sliced zucchini, minced garlic, salt, pepper and stir.

The good old-fashioned country way. This is definitely NOT diet food. You don't drain the bacon fat off after you brown it. If you really have to, you can substitute butter, but it won't be the same. You can also use this recipe with a combination of yellow and pattypan squash.

This recipe is based upon my MIL's (she never measures anything). It is my family's favorite way to eat squash and I always make a double batch of it.

Steps:

  • Fry bacon until crisp, remove from skillet.
  • Add chopped onion, cook until translucent.
  • Add sliced squash fry stirring frequently until squash is tender.
  • Season with salt and pepper.
  • Crush bacon and add back to pan.
  • Either yellow zucchini or crookneck squash work well in this dish.
