4 medium potatoes
Olive oil (for frying, about 1-2 cups)

1/2 cup of homemade bravas sauce

Steps:

  • Peel the potatoes, rinse thoroughly, and dry with a paper towel.
  • Cut the potatoes into bite-size chunks.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the potatoes and adjust the heat to the lowest setting, allowing them to pre-cook for a few minutes.
  • Remove the potatoes and let them cool in the fridge for a few more minutes.
  • Turn the heat up to high and add the potatoes back into the pan.
  • Fry until crispy and golden.
  • Transfer the potatoes to a plate lined with paper towels to cool, and sprinkle with salt to taste.
  • To serve, drizzle the bravas sauce over the potatoes.
  • Dig in-no forks necessary!

Patatas Bravas - or Spanish Fried Potatoes - are the perfect tapas dish if you like spice. These easy-to-make fried potatoes are covered with a hot and smoky bravas sauce that takes dipping to a whole new level!

2 pounds all-purpose potatoes (e.g. Yukon gold or white potatoes)
1/4 cup olive oil
salt to taste
chopped parsley to garnish (optional)
1 medium-sized yellow onion
1 large garlic clove
1/4 cup olive oil
3 tablespoons Spanish smoked paprika
2 tablespoons hot paprika or red pepper flakes (more or less to taste)
2 tablespoons all-purpose flour
1 1/2 cups vegetable or chicken broth
salt to taste

Steps:

  • Boil the potatoes with their skin on in a pot of hot water on the stove until almost tender but not quite done. You should be able to pierce them with a fork but it shouldn't slide through the potato with ease.
  • Remove the potatoes from the pot and set them aside to cool.
  • In the meantime, prepare the bravas sauce. First, peel the onion and finely chop it. Also, peel the garlic clove and chop it or press it through a garlic press.
  • In a medium-sized frying pan, heat 1/4 cup of olive oil. When it is hot, add the onions and sauté them on medium-high heat for around 5-6 minutes until translucent. Add the crushed garlic and sauté for a couple more minutes. Be sure not to burn the garlic or else it will become bitter.
  • Turn down the heat to low and add the smoked paprika as well as the hot paprika and mix well using a wooden spoon. You can adjust the amount of hot paprika used according to your spice tolerance. Two tablespoons give it a kick, but it's not intolerable.
  • After the paprika has been mixed in, add the flour and mix it in well so that there are no flour lumps.
  • Let everything sit in the hot pan for a minute (so the flour can lose its "flour taste") and then little by little add the broth while constantly stirring with your wooden spoon. Keep stirring until the sauce has a well combined consistency.
  • Turn up the heat again slightly and bring the sauce to a simmer. Add salt to taste. Let the sauce simmer for around 4-5 minutes until it has thickened nicely. Stir regularly.
  • Once the sauce has a thick, creamy consistency, remove the pan from heat and let it cool for a few minutes. Then blend the sauce in a blender so it's smooth.
  • Now back to the potatoes - peel the cooled potatoes, then cut them into bite-sized cubes.
  • Heat 1/4 cup olive oil in a large frying pan. When it is hot enough (test this by dipping a wooden spoon into the oil - if there are small bubbles forming around it, the oil is hot enough), add approximately half of the potato cubes. Depending on the size of your pan you might be able to add more or less - just don't overcrowd the pan.
  • Fry the potato cubes on medium heat until they are fully cooked and lightly golden brown on the outside. Flip the potato pieces regularly. Don't have the temperature too high - you don't want the outsides to become very dark while the inside is not fully cooked.
  • Once the potatoes are done, remove them from the pan with a straining spoon and place them on a plate lined with paper towels to soak up excess oil. Then fry the second batch of potatoes the same way.
  • Add salt to taste, then serve the patatas bravas in a bowl and garnish with some of the bravas sauce as well as some chopped parsley. If you want to cut the spice of the sauce a bit, you can also serve aioli (garlic mayo) in addition - or even instead - of the bravas sauce.

3 pounds medium Yukon Gold potatoes, cut into 1-1/2-inch cubes (about 8 potatoes)
2 tablespoons olive oil

2 teaspoons garlic powder
1-1/2 teaspoons chili powder
1-1/2 teaspoons ground cumin
1/4 teaspoon salt

AIOLI:
1-1/2 cups mayonnaise
3 tablespoons lemon juice
3 garlic cloves, minced
1 tablespoon minced fresh chives plus additional for topping

1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 8-10 minutes or until just tender. Drain; pat dry with paper towels. Transfer potatoes to a mixing bowl. Toss potatoes in oil and minced garlic to coat evenly. , Combine the paprika, garlic powder, chili powder, cumin, salt, pepper flakes and pepper; sprinkle over potatoes. Gently toss to coat. Transfer potatoes to 2 greased 15x10x1-in. baking pans, spreading into a single layer. Bake until crispy, about 25 minutes, stirring potatoes and rotating pans halfway through cooking., For aioli, combine ingredients until blended. 2 pounds Yukon gold potatoes, scrubbed and diced into 3/4-inch cubes
2 tablespoons cornstarch
1/2 cup mayonnaise
1 tablespoon diced pimentos
2 teaspoons red wine vinegar
1 teaspoon grated garlic
1 chipotle pepper plus 1 teaspoon chipotle sauce (from a can of chipotle in adobo)
Pinch of smoked paprika

Steps:

  • For the fries: Fill a large Dutch oven or a heavy bottomed saucepan two-thirds of the way with the oil. Heat over medium-high heat to 350 degrees F. Line a baking sheet with a wire rack.
  • Add 2 quarts water with 2 tablespoons salt in a large pot and bring to a boil. Add the potatoes, bringing the water back to a boil, and cook, about 5 minutes. The potatoes will be soft on the outside while still firm in the center. Drain in a colander and add to a large bowl to toss with the cornstarch and a heavy pinch of salt.
  • Add the potatoes to the hot oil a few at a time, stirring and flipping constantly until they are golden brown on all sides, about 4 minutes. Remove to the wire rack, sprinkle with salt and repeat with the remaining potatoes.
  • For the pimento aioli: Add the mayonnaise, pimentos, red wine vinegar, garlic, chipotle and paprika to a food processor and blend until smooth.
  • Add potatoes to a serving bowl and serve with the aioli drizzled over the top and on the side for dipping.

1/4 teaspoon salt
1/2 cup mayonnaise
1 tablespoon lemon juice

2 tablespoons olive oil
1 small onion, chopped

POTATOES:
1-1/2 pounds russet potatoes, peeled

Steps:

  • Place garlic on a cutting board; sprinkle with salt. Mash garlic with flat side of knife blade, forming a smooth paste. Transfer to a small bowl. Whisk in mayonnaise, lemon juice and oil until smooth. Cover; refrigerate until serving. , For bravas sauce, in a small saucepan, heat oil over medium heat. Add onion; cook and stir until tender, 2-3 minutes. Add garlic; cook 1 minute longer. Stir in flour and paprika until smooth; gradually stir in broth. Add bay leaf. Bring to a boil, stirring constantly; cook and stir until thickened, 6-8 minutes. , Remove from heat; cool slightly. Remove and discard bay leaf. Puree sauce using an immersion blender. Or, cool slightly and puree sauce in a blender; return to pan and heat through. Keep warm., Cut potatoes into 1-1/2-in. cubes; soak in cold water for 30 minutes. Drain potatoes; pat dry with paper towels. In an electric skillet or deep-fat fryer, heat oil to 250°. Fry potatoes until tender, 8-10 minutes. Remove with a slotted spoon; drain on paper towels and cool completely., Increase heat of oil to 375°. Fry potatoes again until crisp and golden brown, 3-4 minutes, turning frequently. 1/2 small red onion, finely diced
2 cloves garlic, finely chopped
1 tablespoon smoked paprika
3/4 cup prepared mayonnaise
1 large plum tomato, halved, seeded and roasted until soft
Few dashes hot pepper sauce (recommended: Tabasco)
Splash aged sherry vinegar
Salt and freshly ground black pepper
4 large Russet potatoes, parboiled, peeled and cut into 1-inch cubes
Flat-leaf parsley leaves

Steps:

  • Preheat the oven to 375 degrees F. Place a baking sheet in the oven.
  • Heat a tablespoon of oil in a small saute pan over medium heat. Add the onion and garlic and cook until soft, about 5 minutes. Add the paprika and cook for 30 seconds. Let cool slightly.
  • Combine the onion mixture, mayonnaise, tomato, hot pepper sauce, and vinegar in a food processor and process until smooth, season with salt and pepper. Scrape the mixture into a bowl, cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  • Heat 2-inches pure olive oil or canola oil in a large high-sided, heavy-bottomed skillet until it begins to shimmer. Add the potatoes, season with salt and pepper and cook until golden brown on all sides. Remove the potatoes to a paper towel-lined plate for a moment to drain the excess oil. Carefully remove the hot baking sheet from the oven, put the potatoes on the pan in an even layer and bake until crisp, about 10 minutes. Remove the pan and season the potatoes with a bit more salt. Transfer to a platter and drizzle with some of the aioli and garnish with parsley leaves. Serve hot.

5 large red or yellow potatoes, scrubbed
Salt
2 plum tomatoes
1/4 cup olive oil
Freshly ground black pepper
1 cup prepared mayonnaise
3 cloves garlic, chopped
2 teaspoons Spanish paprika
2 teaspoons pureed chipotle in adobo
2 tablespoons finely chopped fresh flat-leaf parsley

Steps:

  • Place the potatoes in a large pot of cold water, add 2 tablespoons of salt and cook until potatoes are tender, but still firm, about 12 to 15 minutes. Drain, let cool and cut each potato into 3/4-inch thick slices.
  • Heat the grill to high.
  • Brush the tomatoes with the some of the oil and season with salt and pepper. While the potatoes are cooking, place the tomatoes on the grill and grill until charred on all sides and soft, about 10 minutes. Remove from the grill when charred.
  • Place the tomatoes, mayonnaise, garlic, paprika and chipotle in a food processor and process until smooth, season with salt and pepper. Can be made 1 day in advance and refrigerated.
  • Brush the potato slices on both sides with some of the oil and season with salt and pepper. Place the potatoes on the grill, close the cover and grill until lightly golden brown and just cooked through, about 2 minutes per side. Carefully transfer the potatoes to a platter and garnish with the parsley. Serve the aioli drizzled over the potatoes or on the side.

SPICY FRIED POTATOES

This recipe is a favorite in the house. Surprising considering the amount of spice in it. Overall if you like "Very Spicy" potatoes then you will love this. If you decide to tackle this job, make sure that you are not going to splatter, or if you do that you are wearing an apron. **The turmeric stains everything it touches. Keep that in mind. Even when serving.**

5 -6 medium potatoes
1/2 medium onion
1/4 cup margarine or 1/4 cup olive oil, if you wish
1 teaspoon cayenne pepper
2 tablespoons ground turmeric
2 tablespoons ground cumin

Steps:

  • Peel and slice potatoes thin about 1/4" thick.
  • Melt butter or olive oil in deep dish fry pan.
  • Mix all the spices together in a "disposable" container and keep to the side.
  • Add the potatoes and sliced onions to the hot oil.
  • Cover and let cook for about 5-7 minutes.
  • Add the mixed spices with a table spoon by sprinkling over the top and mixing in real good. Try to cover as much of the potatoes as possible with the spice.
  • Cook uncovered, while turning periodically until potatoes are as crispy or as done as you like them.
