2 eggs
1/2 cup milk
2 cups butter-flavored cracker crumbs
1/2 teaspoon garlic salt
1/4 teaspoon dried oregano
1/4 teaspoon dried tarragon
1/4 teaspoon pepper
1 pound lake perch fillets
Vegetable oil

Steps:

  • In a shallow bowl, beat eggs and milk. In another shallow bowl, combine cracker crumbs, garlic salt, oregano, tarragon and pepper. Dip the perch in egg mixture, then coat with crumbs. Heat oil in a skillet over medium heat. Fry fish for several minutes on each side or until it flakes easily with a fork.

This is one of my favorite ways to prepare perch. Taco seasoning and cornmeal make the coating zesty and unique.

1 envelope taco seasoning
1 pound lake perch fillets
1 egg
1/2 cup yellow cornmeal
1/4 cup all-purpose flour
3 tablespoons canola oil

Steps:

  • Place taco seasoning in a large resealable bag; add perch fillets, one at a time, and shake to coat. In a shallow bowl, lightly beat the egg. Combine cornmeal and flour in another shallow bowl. Dip fillets in egg, then coat with cornmeal mixture. Place in a single layer on a plate; refrigerate for 15 minutes. , In a large skillet, heat oil over medium-high heat. Fry fillets for 2-3 minutes on each side or until fish flakes easily with a fork.

I fix this at least twice a month, when I can find it. I know Krogers didn't have it for over a month. It is my favorite to fix for my man.

Number Of Ingredients 7

12 oz ocean perch
2/3 c aunt jemima corn meal mix
2/3 c all purpose flour
1 egg
1/2 c milk
2 tsp each lawry's seasoning salt and black pepper
vegetable oil for frying

Steps:

  • 1. In colander, place fish and season with the spices, let rest 30 minutes
  • 2. in a bowl to dredge, mix egg and milk
  • 3. in another bowl to dredge, mix flour, and corn meal mix
  • 4. heat oil in fryer skillet or dutch oven, at least 3/4 " deep
  • 5. dip fish pieces in egg mixture, then in the flour mixture, shake off excess, lay each pirce carefully in hot oil ( burner on med heat )
  • 6. continue until all fish is in skillet. cook 10 minutes, turn each piece and fry another 10 minutes.
  • 7. when fish is dark as you want, remove from oil to paper towel lined plate.

1 cup cornmeal
16 ounces light beer
1 tablespoon salt
1 tablespoon pepper
2 tablespoons Old Bay Seasoning
1 cup oil

Steps:

  • Heat skillet fryer with hot oil.
  • Mix flour, cornmeal, beer, salt pepper and seasonings until a batter consistency.
  • Coat filets with batter.
  • Deep fry til golden brown. Approx 3 minutes per side.

Perch:
8 (4 oz.) skin-on fresh fillet of yellow perch
2 oz. oil
Salt and pepper to taste
1-1/2C Panko bread crumbs
1/2c yellow corn meal
Roasted Corn Risotto:
2T scallions white only, minced
1 tsp. garlic, minced
2 oz. olive oil
2c Arborio rice
4c chicken broth
2 oz. white wine
2 ears roasted fresh corn off the cob
1/4c diced red bell pepper
1T fresh thyme, rosemary, parsley minced
1/4c grated parmesan cheese
Salt and pepper to taste
Sauteed spinach/greens (optional for serving)

Steps:

  • Preparing the fish: Finely grind panko crumbs in food processor and combine with corn meal. Dredge both sides of perch fillets in crumb mixture. Salt and pepper to taste. Heat a heavy bottom pan or skillet over medium heat. Add oil and heat before adding fish. Place fish skin side up in pan. Turn fish over when edges begin to brown. Remove from heat when other side is done and fish is cooked through. Preparing the Risotto: Sweat scallions and garlic in oil. Add risotto, stir rice until translucent. Deglaze with white wine. Add broth in small amounts, cooking each time until broth is absorbed. Add the rest of the ingredients while stirring over low heat until incorporated. If done ahead of time, cool down the risotto on a shallow sheet pan and place in the refrigerator. Do not overcook. When ready to serve, reheat with broth, parmesan, and a little butter. If desired, serve with sauteed mixed greens (spinach and/or swiss chard, cooked with 2 oz. chicken broth, 1 tsp garlic, and 1 oz. olive oil).

3 qts. light cooking oil for frying
kosher salt
freshly ground black pepper
2 cups buttermilk
4 cups cornmeal

Steps:

  • Heat oil in electric fryer or heavy pot to 350 degrees F. Season perch evenly with kosher salt and freshly ground pepper. Place buttermilk and cornmeal separately into two shallow dishes. Dip perch first into buttermilk and immediately dredge in cornmeal. Shake off excess cornmeal. Flash-fry lake perch until crisp, golden and just cooked through.

1 1/2 cups milk
6 ounces andy's red fish seasoning (breading)
1 cup vegetable oil
1/4 cup butter

Steps:

  • Soak perch in milk about 10 minutes.
  • Heat oil and butter in 9 inch cast iron skillet over medium flame.
  • Dredge perch through Andy's breading ( or 2 parts flour to 1 part cornmeal, seasoned with salt & pepper).
  • Pan is ready when a drop of water sizzles in the oil.
  • Place perch in pan skin side UP.
  • Turn fish once when crisp and golden brown.
  • Cooking time about 12 minute total (depends on thickness) Check one to make sure fish is opaque and white in color.
  • Drain on paper towels.

1/2 cup margarine or butter
1 1/2 pound perch or cod or haddock fillets
1 egg -- well beaten
1 cup fine bread crumbs and/or flour
dash cayenne
1/4 cup parsley
salt -- to taste
pepper -- to taste
lemon wedges (for garnish)

Steps:

  • Melt margarine in baking dish in 325 F. oven (Do not allow margarine to brown). Dip fish first in melted margarine, then in egg, then in crumbs, coating well; season to taste with salt and pepper. Line baking sheet with tin foil and butter/grease lightly. Bake in preheated 325 F. oven 20 to 30 minutes, or until fish tests done. Garnish with lemon wedges.
