FRIED GREEN TOMATO SANDWICH
My favorite way to eat fried green tomatoes! They're layered with red tomatoes and pepperjack cheese between 2 slices of bread, and then grilled to ooey-gooey, cheesy, crunchy perfection.

Steps:
- Dip slices of green tomato into beaten egg, then cover in cornmeal to coat, shaking off the excess. Heat the oil in a large skillet over medium heat. When the oil is hot, add the tomato slices. Cook until golden brown on each side, 2 to 3 minutes per side. Remove from the skillet and drain on paper towels.
- Wipe out the skillet with a paper towel and place it over medium heat. Spread butter onto one side of each slice of bread. Place half of the slices butter side down in the skillet. Stack 3 slices of green tomato, 3 slices of red tomato, a slice of pepperjack cheese and a few jalapeno slices onto each piece of bread in the skillet. Top with the remaining slices of bread with the butter on the outside. Cook until the bottom is golden. Flip the sandwiches and cook until golden brown on the other side.

FRIED MEATLOAF SANDWICH WITH GREEN TOMATO JAM

- You will need two 8-by-8-inch pans or similar. In the first, combine the flour, baking powder, pepper, salt and cumin. In the second, whisk together the egg and milk.
- Dip each meatloaf slice into the egg mixture; shake off any excess. Then coat in the flour mixture; again, shake off the excess. Place on a wire rack.
- Fill a large cast-iron skillet with 1/4 inch of coconut oil. Heat over medium heat until the oil reaches 325 degrees F. Add the dredged meatloaf; cook until golden brown on both sides, about 4 minutes per side. Drain on a wire rack and let cool.
- Build the sandwich in this order: bread, mayonnaise, meatloaf, lettuce, green tomato jam, bread, smile! Just kidding¿a smile isn't in the recipe; however, if you make it to this step, you will surely provide the smile!
- Add the green tomatoes and garlic to a food processor. Blend to a paste, then transfer to a medium saucepan along with the sugar, rice wine vinegar, soy sauce, cardamom and ginger. Stir to combine. Cook over medium-low heat until the mixture begins to look thick and glossy, about 35 minutes; stir frequently with a heat-resistant spatula to keep the jam from scorching on the bottom. Remove from the heat and let cool. Store, covered, in the refrigerator for up to 2 weeks.
FRIED GREEN TOMATO AND BACON SANDWICH
People beg me to make these sandwiches. It's a great way to use extra tomatoes from your garden. Some grocery stores carry green tomatoes year round. This is my very favorite sandwich ever. The fresh mozzarella cheese can be substituted with regular mozzarella but it won't be a yummy! You can also use Tempeh Bacon for a vegetarian version (not vegan).

- Mix cornmeal, salt and pepper.
- Coat green tomato slices with cornmeal mix. Heat oil in frying pan (or use counter top fryer).
- Fry green tomatoes until lightly browned and slightly soft.
- Coat bread slices with chipotle mayonnaise.
- Stack with bacon, cheese, fried green tomatoes and red tomato.
- Melt butter in frying pan.
- Grill at medium-low temperature until cheese is melted (this makes the sandwich so delicious).
- Eat hot or cold.

A terrific Southern twist on the classic BLT. The tang and crunch of the fried green tomato gives a wonderful balance to the bacon, lettuce, and mayo. For a crowd, increase the ingredients and put out the cooked bacon, lettuce leaves, and fried green tomatoes separately... and, let everyone build their own sandwiches. Great football fare!!

- Season slices of green tomato with salt and pepper. Dredge in the cornmeal. Heat the oil in a skillet. Fry the tomatoes until crisp and golden on both sides. Remove from pan and place on paper towel-lined plate to absorb any excess oil.
- Spread the mayonnaise on the toasted bread (both slices, if you like.) Add the lettuce, the fried green tomatoes and cooked bacon.
- Build your sandwich and cut in half.

GRILLED PIMIENTO CHEESE AND FRIED GREEN TOMATO SANDWICH (GPC)

- For pimiento cheese:
- Mix mozzarella, cheddar, mayonnaise, cream cheese, roasted pepper, hot sauce, and garlic powder in a medium bowl; season with salt.
- For fried green tomatoes and assembly:
- Place tomatoes on a large paper towel-lined baking sheet and season with salt and pepper. Whisk eggs and hot sauce in a shallow medium bowl. Whisk flour, garlic powder, and paprika in another shallow medium bowl. Place panko in a third shallow medium bowl.
- Using paper towels, pat tomatoes dry. Working in batches, dredge in flour mixture, shaking off excess. Coat with egg mixture, allowing excess to drip back into bowl. Coat with panko, pressing to adhere.
- Pour oil into a large deep skillet to a depth of 1" and heat over medium heat until thermometer registers 350°. Working in batches, fry tomatoes, turning halfway through, until golden brown and crisp, about 3 minutes per batch. Transfer to a paper towel-lined baking sheet to drain.
- Meanwhile, preheat broiler. Spread cut sides of each roll with pimiento cheese. Place rolls, pimiento cheese side up, on a baking sheet and broil until cheese is melted, about 2 minutes. Build sandwiches with rolls, cooked bacon, and fried green tomatoes.
- DO AHEAD: Pimiento cheese can be made 1 week ahead. Cover and chill.
FRIED GREEN TOMATO BLT SANDWICH
Fried green tomatoes are one of our all-time favorite summertime indulgences! This sandwich really shows off the tomatoes' flavor by using light panko bread crumbs as a coating. The roasted red pepper mayo is the perfect finishing touch.

- 1. Slice green tomatoes. Put in a colander and set in the sink. Sprinkle salt over them and let the excess liquid be drawn out. This should take about 30 minutes. Pour the buttermilk in one bowl. In another bowl, mix together the panko bread crumbs, flour, salt to taste, and red pepper. Heat approximately 1/2 cup vegetable oil in a skillet. Place the tomatoes in the buttermilk, then dredge through the panko mixture. Pan-fry until crispy. Drain on a cooling rack (so they won't get soggy).
- 2. Meanwhile, mix together roasted red pepper vinaigrette and mayo. Toast bread slices. Assemble sandwich with red pepper mayo, lettuce, bacon (2 slices per sandwich) and tomatoes.
FRIED GREEN TOMATO SANDWICH
Steps:
- Preheat a deep fryer with canola oil to 375 degrees F. You can also use a cast-iron skillet filled halfway with canola oil.
- In a skillet set over medium heat, cook the bacon until crispy, about 10 minutes.
- In a shallow dish, add the flour and season with some salt and pepper. In a second shallow dish, add the eggs and lightly beat. Dredge the tomato slices in the flour then in the eggs and again in the flour.
- Fry the battered green tomato slices until golden brown, 2 to 3 minutes.
- In a large skillet set over medium heat, add a tablespoon of the canola oil. Add the fried green tomatoes to the skillet, stacked 2 high. Cover the stack with 2 pieces of the cheese and let melt, about a minute. Repeat with the remaining stacks of tomatoes and cheese, adding another tablespoon of oil halfway through.
- Spread some mayonnaise onto both sides of a bun and layer with a stack of fried green tomatoes covered with melted cheese, 2 slices of crispy bacon, lettuce and top with top of the bun. Repeat for the remaining buns and tomato stacks, and then serve hot.

- Slice tomato so that you have three nice slices. Dip in cornmeal.(add s&p, if using, to the cornmeal before dipping).
- Heat a non-stick skillet with just enough oil to fry tomatoes. Fry until brown on both sides. Remove and set aside.
- Wipe skillet clean and return to heat.
- Butter one side of each piece of bread.
- Place one slice, buttered side down in skillet and immediately top with cheese and fried tomato slices.
- Top with second piece of bread, buttered side up. Press down with spatula. Turn when underside is golden brown.
- Cook on second side until golden brown and cheese has melted.
- I like using Munster cheese and seven-grain bread.

FRIED GREEN TOMATO, CRAB AND HAM SANDWICH

- Trim and discard the ends of the tomatoes, and halve tomatoes horizontally. In a medium mixing bowl combine 4 of the eggs, heavy cream and salt and pepper to taste. Mix until well blended. Dip tomato halves in egg mixture, turning to coat completely, then dust well with corn meal.
- In a large heavy skillet over medium-high heat, heat 1/2 cup of the oil until sizzling. Add tomato halves, and fry until golden brown on each side, about 1 minute a side. Remove from heat, and drain on paper towels.
- In a large bowl combine the remaining 2 eggs, Old Bay seasoning, mayonnaise, mustard, lemon juice, parsley, red pepper and baking powder. Stir until well blended. Gently fold in the crab meat without breaking up the lumps of meat. Sprinkle with 1/3 cup of flour, and fold until just blended.
- In a clean skillet over medium-high heat, heat the remaining 1/2 cup of oil until sizzling. Divide crab meat mixture into 16 cakes about the same diameter as the tomato halves (about 2 1/2 tablespoons each). Lightly dust each cake with flour, and drop into hot oil. Fry until golden brown on each side, about 1 minute a side.
- To assemble, pour a small pool of Basil Sauce on each of eight serving plates. Place two fried green tomato halves in each pool. Top each tomato half with a crab cake, then with another fried tomato half. Garnish with a sprinkling of diced ham, and serve immediately.

FRIED GREEN TOMATO SANDWICH WITH SMOKED MOZZERELL

- Slice tomatoes into 1/2 inch slices. Dip each slice in flour then dip in beaten egg, then dip into corn meal and shake off excess. Heat a 8 or 9 inch cast iron skillet with 1/2 inch of canola oil on medium heat. Fry each tomato slice until golden brown and then flip to brown the other side. Lay flat on paper towels to drain excess oil. In a mortar and pestle grind garlic clove with pinch of salt and then add chopped parsley to grind. Mix with mayonaise and whisk in lime juice. Slice baguette into 6 inch-long pieces and then slice those lenthwise. Open bread, lay one layer of smoked cheese on one side of bread and place both halves under a broiler to toast. Once cheese has melted, spread mayonaise on bread, layer with fried green tomatoes, baby arugula or mizuna, and more mayonaise. Place other half of bread on top and secure with toothpick.
