BAKED BRIE WITH DRIED APRICOTS AND PISTACHIOS



Baked Brie with Dried Apricots and Pistachios image

Inspired by mincemeat, the dried fruit and nut mixture piled on the brie in this recipe includes warm spices like allspice and pepper, while a bit of vinegar keeps the sweetness in check. Prepared pie dough keeps it all wrapped together and bakes up golden brown and flaky. If you are feeling artistic, save your pie dough scraps and add some decorations to your wrapped brie using the egg wash to secure them.

1/3 cup dried apricots, finely chopped
1/2 cup apple juice
1 tablespoon apple cider vinegar
1 teaspoon packed light or dark brown sugar
1/4 teaspoon ground allspice
Kosher salt and freshly ground pepper
1/4 cup roasted salted pistachios, chopped
1 round refrigerated pie dough (half of a 14-ounce package)
1 7- to 8-ounce wheel brie cheese
1 large egg, lightly beaten
Sliced apples and/or pears, for serving

Steps:

  • Combine the dried apricots, apple juice, vinegar, brown sugar, allspice, a pinch of salt and a few grinds of pepper in a small saucepan and bring to a simmer over medium heat. Cook until the apricots are plump and all the liquid has been absorbed, about 8 minutes. Remove from the heat and let cool; stir in the pistachios.
  • Line a baking sheet with parchment paper. Unroll the pie dough on a clean surface; gently roll out the outer 2 inches of the dough to make the edges slightly thinner. Put the brie in the center of the dough and top with the fruit-and-nut mixture. Trim about 1 inch off the edge of the dough, all the way around. Brush the edge with some of the beaten egg. Pull the dough up and over the cheese to meet in the middle, folding and pleating as needed; pinch the dough at the top to seal. Transfer the wrapped cheese to the baking sheet and brush with the remaining beaten egg. Freeze until firm, about 30 minutes.
  • Preheat the oven to 375˚ F. Transfer the baking sheet to the oven and bake until the cheese is golden brown, 35 to 40 minutes. Let cool at least 20 minutes. Slice into wedges and serve with apple and/or pear slices.

1 (8-ounce) round Brie Cheese
1/3 cup walnuts (or pecans)
1/3 cup almonds
1/3 cup hazelnuts
2 tablespoons sesame seeds
2 large eggs
1/4 cup whipping cream
Peanut oil ((for frying))
Purchased jalape jelly
French bread (baguette, cut into 1/2-inch-thick slices)

Steps:

  • Remove and discard paper and plastic wrapping from cheese. Cut brie cheese round into 4 (2-ounce) wedges. Freeze Brie wedges for 30 minutes.
  • Finely chop all nuts and sesame seeds in food processor. Transfer to medium bowl; set aside.
  • In another medium bowl, whisk eggs and whipping cream to blend.
  • Remove cheese from freezer. Dip each wedge into egg mixture and then into nut mixture, turning to coat and pressing gently to adhere. Transfer to plate; cover with plastic and refrigerate until very cold, at least 45 minutes. Can be made 6 hours ahead - Keep refrigerated.
  • Pour enough peanut oil into heavy large frying pan to reach depth of 1 1/2 inches. Heat over medium-high heat to 350F.
  • Working in two (2) batches, fry the coated brie wedges until deep golden brown, turning occasionally with metal spatula, about 3 minutes. Using slotted spoon, transfer to paper towels to drain.
  • To Serve: Place a small bowl of jalape jelly on a platter, and surround it with fried Brie wedges and French bread slices for a lovely presentation.

This breaded version comes out crisp, golden and buttery, giving even the fanciest baked Brie a run for its money. Cross-hatching not only looks cool, it helps heat the cheese heat evenly. And if you opt for gluten-free breadcrumbs, everyone at your party can enjoy this crowd-pleasing molten beauty.

2 large eggs
1 cup panko
2 teaspoons thyme leaves, chopped
1 teaspoon kosher salt
One 8-ounce Brie wheel
2 tablespoons unsalted butter
2 tablespoons olive oil, plus more for brushing
12 ounces sliced bread, such as baguette, nut and fruit bread or sourdough (or a combination)
Honey, for serving

Steps:

  • Beat the eggs in a shallow bowl or pie plate. Combine the panko, thyme and salt on a plate. Dip the Brie in the eggs to coat then press firmly into the panko. Dip into the eggs then the panko once more. Place on a baking sheet and freeze until firm, about 30 minutes.
  • Remove the Brie from the freezer and use a sharp knife to cut parallel lines 1/4 inch deep and 1/2 inch apart across the top. Give the cheese a quarter turn and repeat cutting the lines to create a diamond pattern. Return to the freezer until solid, about 8 hours.
  • Preheat the oven to 350 degrees.
  • Remove the Brie from the freezer and rescore the lines to make sure they didn't seal back together from the eggs. Heat the butter with 2 tablespoons olive oil in a medium ovenproof skillet over medium-high heat until the butter is foamy and just starting to brown. Add the Brie cut-side down and cook until dark golden and crisp, 3 to 4 minutes. Carefully flip the Brie with tongs and transfer the skillet to the oven. Bake until the crust is golden all over and the Brie is hot throughout, 15 to 20 minutes.
  • Meanwhile, arrange the bread on a baking sheet and brush generously with olive oil. Bake until toasted and golden about 12 minutes.
  • Serve the baked brie with the bread and honey for drizzling.

I almost never order a nut-crusted entree in a restaurant, as they often feature a sugary glaze or a too-sweet nut, like pecan or macadamia. That's not an issue here since we're going with buttery, subtly bitter walnuts, held on with a very savory 'nut glue,' made with a garlic and mustard base. This protective layer of deliciousness makes boneless, skinless chicken breast taste like it was just carved off a freshly roasted carcass.

5 cloves garlic, crushed
3 tablespoons Dijon mustard, divided
2 teaspoons fresh thyme
2 (8 ounce) skinless, boneless chicken breast halves
salt and freshly ground black pepper to taste
cayenne pepper to taste
1 ½ cups finely chopped walnuts
1 tablespoon olive oil, or to taste
½ cup chicken broth
2 teaspoons honey

Steps:

  • Mix garlic, 2 tablespoons Dijon mustard, and thyme together in a bowl to make the "nut glue."
  • Season chicken breasts generously with salt, pepper, and cayenne. Spread nut glue all over the chicken. Refrigerate until ready to use.
  • Toss walnuts over the chicken, press down firmly, and repeat on the other side to coat thoroughly. Refrigerate for 1 1/2 to 3 hours.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Coat the bottom of an oven-proof skillet with some olive oil. Place chicken breasts on top, reserving excess nuts if desired. Season with a pinch of salt and drizzle more olive oil on top.
  • Bake in the center of the preheated oven until walnuts are lightly toasted and an instant-read thermometer inserted into the thickest part of a breast reads 150 degrees F (66 degrees C), about 25 minutes.
  • Quickly remove chicken to a plate to rest. Transfer skillet to the stovetop; stir in broth, 1 tablespoon Dijon mustard, and honey and bring to a boil over high heat; cook until reduced by about half, 3 to 4 minutes. Spoon pan sauce over and around the chicken to serve.

1 tablespoon flour
1 large egg, lightly beaten
1/2 cup macadamia nuts, finely chopped
1/2 cup fine dry breadcrumb (Panko)

thin crisp bread, such as lavash or toasted pita bread
thinly sliced apple

Steps:

  • In a shallow dish,combine bread crumbs and nuts.
