SPINACH AND CITRUS SALAD



Spinach and Citrus Salad image

1/4 cup reserved citrus juice
1 tablespoon Champagne vinegar
2 tablespoons orange olive oil (recommended: O Olive Oil)
1 tablespoon chopped fresh tarragon leaves
1 tablespoon chopped fresh chives
Salt and pepper
9 ounces baby spinach
1 jar (24-ounce) sun fresh citrus salad, drain and liquid reserved
4 ounces goat cheese

Steps:

  • In a medium bowl, whisk together all ingredients for dressing and 1/4 cup reserved citrus liquid. Add spinach and toss. Divide dressed spinach onto chilled salad plates. Divide citrus salad among plates and garnish with crumbled goat cheese.

Mushroom Spinach Salad with Tarragon Egg Dressing image

For dressing
2 hard-boiled large eggs, yolks mashed and whites chopped fine
3 tablespoons tarragon white-wine vinegar
1 tablespoon Dijon mustard
6 tablespoons extra-virgin olive oil
3 tablespoons minced shallots (about 2)
2 tablespoons finely chopped fresh tarragon leaves
1/2 pound fresh spinach, coarse stems discarded and leaves washed well and spun dry
10 ounces fresh white mushrooms

Steps:

  • Make dressing:
  • In a small bowl whisk together yolks, vinegar, and mustard and add oil in a stream, whisking constantly until dressing is emulsified. Stir in whites, shallots, tarragon, and salt and pepper to taste.
  • Thinly slice spinach leaves and spread on a platter. Cut mushrooms into very thin slices and mound on spinster. Spoon dressing over salad.

1 cup(s) chopped tomato
1 cup(s) sliced cucumber
1/3 cup(s) sliced red onion
1/4 cup(s) non-fat salad dressing or mayo
1/4 cup(s) low-fat sour cream
1/4 cup(s) chopped fresh parsley
2 tablespoon(s) skim milk
2 teaspoon(s) chopped fresh tarragon or 1/2 tsp. dried tarragon leaves
1 - clove garlic, minced
1/4 teaspoon(s) hot pepper sauce
8 cup(s) torn, washed, stemmed spinach leaves

Steps:

  • Combine crab meat, tomato, cucumber and onion in medium bowl.
  • Combine salad dressing (or mayo), sour cream, parsley, milk, tarragon, garlic and hot pepper sauce in small bowl.
  • Line four salad plates with spinach. Place crabmeat mixture on spinach; drizzle with dressing.

1/2 lb fresh spinach leaves (washed and spun dry, stems discarded)
1/2 lb fresh white button mushrooms, sliced
1 red onion, sliced
parmesan cheese
crouton (optional)
2 hard-boiled eggs (yolks mashed and whites finely chopped)
3 tablespoons tarragon white wine vinegar
1 tablespoon Dijon mustard
7 tablespoons olive oil
2 shallots, minced (about 3 tablespoons)
2 tablespoons finely chopped fresh tarragon leaves
salt and pepper

Steps:

  • For the dressing, in a blender or food processor blend the yolks, vinegar, Dijon and olive oil until smooth and emulsified.
  • Stir in the finely chopped egg whites, shallots and finely chopped tarragon leaves; mix to combine.
  • Season with salt and pepper to taste.
  • Spread the spinach leaves on a platter.
  • Top with onion slices and sliced mushrooms.
  • Spoon the prepared dressing over salad.
  • Sprinkle lightly with parmesan cheese.

A wonderful salad with a homemade dressing to pour over at time of serving. Everybody likes this!

½ cup white sugar
½ cup white vinegar
1 cup vegetable oil
2 tablespoons Worcestershire sauce
⅓ cup ketchup
1 small onion, chopped
5 slices bacon
3 eggs
1 pound fresh spinach - rinsed, dried and torn into bite size pieces
1 (4 ounce) can sliced water chestnuts, drained

Steps:

  • In a blender or food processor, combine sugar, vinegar, oil, Worcestershire sauce, ketchup and onion, and process until smooth. Set aside.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
  • In a large bowl, toss together the spinach, water chestnuts, bacon and eggs. Serve with the dressing.
