FRESH FRUIT WITH HONEY VANILLA YOGURT



Fresh Fruit with Honey Vanilla Yogurt image

2 cups plain yogurt
2 tablespoons good honey
1/2 teaspoon pure vanilla extract
Seeds scraped from 1/2 vanilla bean (optional)
1 pint fresh strawberries, hulled and cut in half
1/2 pint fresh blueberries
1/2 pint fresh raspberries
1 golden papaya, peeled, cut in half, seeds removed and diced
Sprig of mint, for garnish

Steps:

  • Combine the yogurt, honey, vanilla extract, and vanilla bean seeds in a bowl and set aside. Combine the berries and papaya and gently mix the fruit together. Place in a serving bowl and garnish with the mint. For serving, spoon the yogurt mixture over the fruit.

Mascarpone gives a tangy contrast to the sweetness of pears that have been poached in vanilla-scented white wine.

2 firm but ripe large Bosc pears, peeled, halved, cored
2 tablespoons fresh lemon juice
1 cup water
1/2 cup dry white wine
6 tablespoons honey
1/2 vanilla bean, split lengthwise
1/2 cup mascarpone cheese*
2 teaspoons sugar
2 teaspoons brandy or dark rum

Steps:

  • Toss pears with lemon juice in large bowl. Set aside. Combine 1 cup water, wine and honey in medium saucepan. Scrape in seeds from vanilla bean; add bean. Stir over medium heat until honey dissolves. Add pears. Cover mixture with round piece of parchment paper. Reduce heat to medium-low. Simmer until pears are just tender when pierced, turning when half-way through cooking, about 15 minutes.
  • Using slotted spoon, transfer pears to large bowl. Boil poaching liquid until reduced to 3/4 cup, about 2 minutes. Cool syrup. Pour syrup over pears. Cover and refrigerate until cold, at least 8 hours or overnight. Remove vanilla bean.
  • Whisk mascarpone cheese, sugar and brandy in large bowl until smooth. Add 1/4 cup chilled poaching syrup and whisk until soft peaks form.
  • Thinly slice each pear half lengthwise, leaving slices attached at stem end. Using metal spatula, transfer pears to plates. Gently press on pears to fan slightly. Spoon some syrup over pears. Spoon mascarpone cream alongside each pear half and serve.

2 cups all-purpose flour
1 cup butter, softened
½ cup white sugar
1 (8 ounce) package cream cheese, softened
1 (8 ounce) container mascarpone cheese
1 cup white sugar
2 teaspoons vanilla extract
½ teaspoon ground nutmeg
½ teaspoon ground cinnamon
2 cups sliced fresh strawberries, or as needed
2 cups fresh blackberries, or as needed
3 kiwis, peeled and sliced, or as needed
½ cup white sugar
1 tablespoon cornstarch
¼ cup water
½ tablespoon lemon juice

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease 2 tart pans.
  • Blend flour, butter, and sugar together in a bowl using an electric mixer until combined. Divide mixture evenly and press into the bottoms of the prepared tart pans.
  • Bake in the preheated oven until golden brown, 12 to 15 minutes. Let cool completely.
  • While crusts are cooling, beat cream cheese, mascarpone cheese, sugar, vanilla extract, nutmeg, and cinnamon together in a bowl using an electric mixer until light and fluffy. Spread mixture over cooled crusts. Arrange strawberries, blackberries, and kiwis on tart in desired design.
  • Mix sugar and cornstarch together in a small saucepan. Pour in water and lemon juice. Cook over medium heat until clear and thick, about 2 minutes. Let glaze cool completely.
  • Glaze the entire top of each tart gently using a pastry brush.

32 ounces fromage blanc
1/4 cup heavy cream
1/2 cup good honey
4 teaspoons pure vanilla extract
1/2 teaspoon freshly grated lemon zest
Vanilla seeds scraped from 1 vanilla bean
Ripe stone fruit such as peaches, nectarines, plums
Berries such as raspberries and strawberries
Citrus fruit such as oranges, cut in segments
Raspberry Sauce

Steps:

  • Stir the fromage blanc, cream, honey, vanilla extract, lemon zest, and vanilla seeds together in a medium bowl. Refrigerate until ready to use.
  • To assemble, spoon the fromage blanc mixture into shallow bowls. Place the fruit artfully on top and drizzle the dessert with raspberry sauce. Serve with extra raspberry sauce on the side. I find that some people like it less sweet with just a drizzle of sauce while others prefer more sauce.

2 navel oranges
2 cups small strawberries, trimmed, hulled and halved
2 cups green and/or red seedless grapes, halved if large
1/4 cup honey
Half vanilla bean, split lengthwise

Steps:

  • Trim off all the peel and white pith from the oranges. Halve lengthwise and then slice crosswise into half-moons (remove any seeds). Transfer to a large bowl and add the strawberries and grapes.
  • Combine the honey and vanilla bean in a small saucepan and warm, stirring, over low heat until the honey is warm and pourable and speckled with vanilla beans, about 3 minutes. Remove the vanilla bean and scrape out any remaining seeds and stir them back into the honey; discard the bean pod. Pour over the fruit and toss well. Set aside to cool. Serve at room temperature or refrigerate until cold.
