1/4 cup packed brown sugar
2 teaspoons chopped fresh mint leaves

12 bamboo skewers (6 inch)
1 cup fresh raspberries
2 cups melon cubes (cantaloupe and/or honeydew)

Steps:

  • In small bowl, mix dip ingredients with wire whisk until smooth. Cover; refrigerate at least 15 minutes to blend flavors.
  • On each skewer, alternately thread 3 raspberries and 2 melon cubes. Serve with dip.

3/4 cup sugar
1/2 cup water
2 inches fresh ginger root, peeled
4 to 6 cups fresh fruit chunks

Steps:

  • Bring sugar and water to a boil in a small saucepan over moderate heat. Add ginger and reduce heat to simmer. Stir until sugar dissolves and ginger infuses syrup, about 2 minutes. Remove from heat and take out ginger. Cool and pour over chunks of pineapple, sliced kiwi, sliced bananas, or any of your favorite fruit combinations.

1/4 cup sugar
2 tablespoons water
1/2 teaspoon grated lime peel
2 tablespoons lime juice
2 cups bite-size pieces honeydew melon
2 tablespoons finely chopped crystallized ginger
2 cups halved fresh strawberries
Additional grated lime peel, if desired

Steps:

  • In 1-quart saucepan, heat sugar and water to boiling. Remove from heat; stir in 1/2 teaspoon lime peel and the lime juice. Cool 10 minutes.
  • In medium bowl, place melon and ginger. Pour sugar mixture over melon mixture. Cover; refrigerate about 1 hour to blend flavors.
  • Just before serving, stir strawberries into melon mixture. Serve garnished with additional lime peel.
