This fabulous fruit bar recipe is from Esther Brody's "The 250 Best Brownies Bars & Squares" cookbook. Posted for Zaar World Tour 2005.

Number Of Ingredients 11

1 3/4 cups all-purpose flour
1 1/2 cups old fashioned oats
1/2 teaspoon ground cinnamon
3/4 cup butter or 3/4 cup margarine, softened
1 cup packed brown sugar
10 ounces canned mandarin oranges, drained
1 banana, sliced
1 apple, cubed and peeled
1/2 cup raisins
1/4 cup orange juice
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees.
  • Base: In a bowl mix together flour, rolled oats and cinnamon.
  • In another bowl, beat butter and sugar until smooth and creamy. Blend in flour mixture. Set aside 1 ¼ cups of mixture. Press remainder evenly into 13 by 9 inch, ungreased, cake pan. Bake in preheated oven for 15 minutes.
  • Topping: In a bowl mix together oranges, banana, apples, raisins, orange juice and cinnamon. Spread topping evenly over warm base, leaving a space about a ¼ inch from the edges. Sprinkle reserved base mixture over top, patting down gently. Bake 15 to 20 minutes longer or until golden brown. Place pan on a rack to cool completely, then cut into bars.

Number Of Ingredients 11

1 (11 ounce) can mandarin oranges, drained
1 1/2 teaspoons ground cinnamon
1 banana
1/2 cup margarine or 1/2 cup butter, softened
1/4 cup unsweetened applesauce
1 cup apple, peeled, diced 1/2 inch
1 cup brown sugar, firmly packed
1/2 cup raisins or 1/2 cup currants
1 3/4 cups all-purpose flour
1/4 cup orange juice
1 1/2 cups oatmeal, any variety, uncooked

Steps:

  • Heat oven to 375 degrees.
  • In a medium bowl, combine oranges, banana, apples, raisins, orange juice, and 1 tsp of the ground cinnamon; set aside.
  • Beat together margarine, applesauce and brown sugar until creamy. Add flour, oatmeal and remaining 1/2 teaspoon of ground cinnamon, to the sugar mixture; mix well.
  • Measure out 1 1/4 cups of the batter and reserve for topping. Lightly press the remaining oat mixture onto bottom of ungreased 9" x 13" baking pan. Bake 15 minutes.
  • Remove from oven; spread fruit mixture evenly over crust to within 1/4" of the edges. Sprinkle oat mixture evenly over fruit, patting gently. Bake 16-20 minutes or until golden brown.
  • Cool completely; cut into bars.
  • Store loosely covered.

1 roll refrigerated sugar cookie dough
8 oz pkg cream cheese
1/3 c. sugar
1/2 tsp. vanilla
2 c. sliced peaches
2 c. fresh berries (blueberries and/or raspberries)
1/4 c. apricot preserves
1 Tbsp. water

Steps:

  • Arrange cookie dough slices on cookie sheet with overlapping edges, pressing together to form a roughly rectangular crust. Bake according to package directions--takes a little longer to be done than individual cookies. Beat together cream cheese, vanilla, and sugar. Spread on cooled crust. Arrange peach slices and berries on top. Combine apricot preserves and water; remove any large apricot chunks (may need a little more preserves if there are a lot of chunks). Drizzle over fruit. Chill, then cut into bars.
