There is no point to making this soup unless you use fresh cilantro. This soup is usually pureed and served as a cream soup, but you can leave it chunky for a more rustic presentation. Adapted from Worldwide Recipes.

4 tablespoons olive oil
2 -3 onions, chopped
2 -4 garlic cloves, finely chopped
6 cups chicken stock
3 -4 medium potatoes, peeled and coarsely chopped
salt & freshly ground black pepper
cayenne pepper
1 cup chopped cilantro (coriander leaves)

Steps:

  • Heat the oil in a large pot over moderate heat and saute the onion and garlic until tender but not brown.
  • Add the stock, potatoes, salt, pepper, and cayenne and cook until the potatoes are tender, 20 to 30 minutes.
  • Puree in an electric blender or food processor or press through a fine-mesh strained if desired.
  • Serve hot or cold, adding the coriander immediately before serving.

I know there are those who say they don't like cilantro or coriander or Chinese parsley. I am not one of those people and this soup is so delicious and comforting when served hot in cold weather, and soothing when served cold in hot weather. It's another Portuguese recipe adapted from Jean Anderson's Foods of Portugal. This is very easy to make but it requires a good 24 hours in the fridge, so plan accordingly.

4 yellow onions, peeled and coarsely chopped
2 large garlic cloves, peeled and minced (or more)
4 tablespoons olive oil
4 potatoes, medium, peeled and coarsely chopped (I use Yukon gold)
6 cups chicken broth (preferably homemade and unsalted)
salt
cayenne pepper
3/4 cup fresh coriander leaves (cilantro, about one bunch(no stems)

Steps:

  • In a large heavy saucepan, sauté the onions and garlic in 3 tablespoons of olive oil for about five minutes.
  • Add the remaining tablespoon of oil and the potatoes and stir fry for another minute.
  • Add the broth, cover and simmer for about 45 minutes or until the potatoes are mushy.
  • Remove from the heat and puree the soup, using an immersion blender.
  • Now stir in salt and pepper and the coriander (cilantro), cover, and refrigerate for 24 hours.
  • After 24 hours, the soup is ready to be served cold, or, once you have gently heated it over moderate heat, it can be served hot.

CARROT CORIANDER SOUP

This soup uses six RSC #10 ingredients, so you can omit the cream (and not use butter) for a vegan version. Serve hot. Also nice at room temperature.

2 ounces vegetable oil or 2 ounces butter
2 lbs carrots, peeled and sliced
1 large red onion, peeled and chopped
1/2 teaspoon coriander seed, crushed
1/2 teaspoon coriander, ground
1/2 teaspoon mace
2 teaspoons brown sugar
1/2 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
4 teaspoons lemon juice
8 -10 cups vegetable stock (not all added at once)
3 tablespoons pearl barley
1 1/3 cups heavy cream (optional)
1/2 cup cilantro, chopped (to garnish)

Steps:

  • Heat oil or butter in a pan large enough to hold all the ingredients.
  • Add carrots and onion. Stir well. Cover and cook for about 5 minutes.
  • Add crushed coriander seeds, ground coriander and mace. Cook for 1 minute, stirring constantly.
  • Add 6 cups of vegetable stock, and all other ingredients except the additional stock, and the cream and cilantro. Bring to a boil, then simmer for 30-40 minutes or until carrots and barley are tender.
  • Whiz the soup in a food processor (you'll probably need to do this in at least two batches), and return to cooking pan.
  • Stir in the last 2-4 cups of vegetable stock (depending on how thin a soup you want) and the cream, if used.
  • Heat through, but do not boil.
  • Serve, garnished generously with chopped cilantro.

COLD CUCUMBER SOUP WITH FRESH CORIANDER



Cold Cucumber Soup With Fresh Coriander image

5 medium cucumbers, well chilled
4 fresh scallions
4 tablespoons coriander leaves
1 cup plain yogurt
1 tablespoon fresh lime juice
3/4 teaspoon ground cumin
Salt and freshly ground white pepper
Thin slices of cucumber and fresh coriander sprigs for garnish

Steps:

  • Peel the cucumbers and chop them coarsely. Chop the scallions.
  • Place the cucumbers, scallions and coriander leaves in a blender and process until finely pureed. You may need two shifts. The soup can also be prepared using a food processor but the texture will not be as fine.
  • Transfer to a bowl and stir in the yogurt. Add the lime juice. Season with cumin, just a dash of salt and pepper to taste. Chill until ready to serve and stir before serving. Garnish each serving with a thin slice of cucumber topped with a sprig of coriander.

Since moving to Scotland I've become addicted to this stuff...it has such a unique flavour the carrot and coriander (aka cilantro or chinese parsley) compliment each other incredibly well. This version of the recipe comes "fae a wifie in Edinbura" (from a lady in Edinburgh).

2 lbs carrots, chopped
4 cups chicken stock
2 onions, chopped
1/2 teaspoon garam masala
1/4 teaspoon cayenne pepper
1 -2 tablespoon fresh coriander, chopped

Steps:

  • Fry onions with pepper and garam masala.
  • Boil carrots separately until soft,drain carrots and return to pot.
  • Add stock and onion mixture, let it cool, then blend with a handmixer or blender.
  • Add fresh chopped coriander and serve with naan bread on the side.
