FRESH CHERRY PECAN MUFFINS

These are really good! The juices from the fresh Cherries gives this muffin a nice flavor and the pecans give it a nice crunchy texture.

Number Of Ingredients 11

1/2 c butter
1 c sugar
2 eggs
2 c all-purpose flour
1/2 tsp salt
1/2 Tbsp baking powder
3 Tbsp buttermilk
1/4 c milk
1 3/4 c fresh cherries, halved and pitted
3/4 c chopped pecans
2 tsp almond extract

Steps:

  • 1. In a large bowl cream together the butter and sugar. Beat until light and lemon colored. Beat in the eggs.
  • 2. Sift together the dry ingredients and add to the butter mixture beginning with the butter milk and ending with the regular milk.
  • 3. Stir in the cherry halves, pecans and and almond extract.
  • 4. Bake in muffin tins at 375 for 15-20 minutes. * If making mini loaves adjust the time accordingly, about 25-30 minutes.

1/4 cup butter, room temperature, plus more for greasing tin
1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs yolks, well beaten
1 cup all-purpose flour
1/4 teaspoon baking powder
One 10-ounce jar maraschino cherries, drained, juices reserved
2 eggs whites, stiffly beaten
1/2 cup chopped pecans
Powdered sugar, for dusting

Steps:

  • Preheat the oven to 400 degrees F.
  • Grease the cups of 2 mini-muffin tins and set aside.
  • Cream the butter and brown and granulated sugars. Add the beaten egg yolks, flour, baking powder and 3 tablespoons of the cherry juice, blending well. Fold in the egg whites. Sprinkle 1/4 teaspoon of chopped pecans in the bottom of each muffin cup. Spoon in 2 teaspoons of batter, then place half a cherry in the center of the batter. Sprinkle a few pieces of chopped pecan on top of each muffin. Bake for 10 minutes, then remove from the tins and dust the muffins with powdered sugar while hot, so the sugar melts in.

1 ½ cups all-purpose flour
¾ cup white sugar
2 teaspoons baking powder
½ teaspoon salt
⅓ cup vegetable oil
⅓ cup milk
1 egg
½ teaspoon almond extract
1 cup fresh pitted and quartered sweet cherries
1 tablespoon white sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  • Mix flour, 3/4 cup sugar, baking powder, and salt together in a bowl.
  • Whisk oil, milk, egg, and almond extract together in a small bowl. Pour into flour mixture; stir gently until incorporated. Fold cherries into the batter.
  • Spoon batter into the muffin cups, filling each 2/3 of the way full. Sprinkle 1 tablespoon sugar on top.
  • Bake muffins in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes. Transfer to a wire rack to cool.

1 (6.5-ounce) package cornbread and muffin mix (recommended: Betty Crocker)
1 egg
1/3 cup milk
2 tablespoons butter, melted
1/2 cup frozen whole corn kernels, thawed
1 (8-ounce) container strawberry cream cheese (recommended: Philadelphia)
1/4 cup mascarpone cheese
1/4 cup chopped dried cherries
1/4 cup chopped pecans, toasted
2 teaspoons lemon zest

Steps:

  • Preheat oven to 400 degrees F. Spray a 6-cup muffin pan with butter-flavored cooking spray; set aside.
  • In a medium bowl, combine corn muffin mix, egg, milk, butter, and corn kernels. Stir until just combined.
  • Pour equal amounts of mixture into each muffin cup.
  • Bake in preheated oven for 16 to 18 minutes.
  • In a medium bowl, combine all spread ingredients. Mix thoroughly. Refrigerate until ready to use.

1 cup flour
3 tablespoons light brown sugar
2 tablespoons granulated sugar
1 teaspoon baking powder
1 pinch salt
6 tablespoons butter, melted
1 3/4 cups flour
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 cup granulated sugar
2 large eggs
1/2 cup canola oil
3/4 cup whole milk
1 teaspoon vanilla
1 1/2 cups pitted sweet cherries

Steps:

  • 1. Preheat oven to 375. Line muffin tins with liners or spray with cooking spray.
  • 2. Make the crumb topping: In medium bowl, combine all dry ingredients. Stir in butter then pinch mixture until it forms pea size chunks.
  • 3. Make the muffins: In a small bowl whisk the flour, baking powder and salt. In a large bowl, combine the sugar, eggs and oil and beat with a hand mixer until well combined. Beat in the milk and vanilla. Add the flour mix and beat on low speed until the batter is smooth. Stir in the cherries.
  • 4. Spoon the batter into muffin tins filling about 3/4 full. Sprinkle crumb topping on each muffin and bake for about 30 minutes until a toothpick inserted in center comes out with a few moist crumbs attached.
  • 5. Let cool for 10 minutes before removing from pan.
