Easy Berry Salad Recipe with Arugula and Burrata image

Simple berry salad recipe with arugula, shallots, and creamy burrata cheese. The perfect summer salad recipe! You can omit the burrata, if you need to, or use a different cheese such as feta or baby mozzarella.

6 oz baby arugula
1 small shallot (halved and sliced)
6 oz fresh blackberries
6 oz fresh raspberries
6 oz fresh strawberries
4 oz Burrata cheese
3 tbsp extra virgin olive oil
1 large lemon, (juice of)
kosher salt and black pepper

Steps:

  • Make the dressing. Place extra virgin olive oil, lemon juice, salt and pepper in a small bowl. Whisk to combine.
  • In a large mixing bowl, add the arugula, shallots, and berries (all three berry varieties). Pour the dressing on top and gently toss.
  • Transfer the berry salad to a serving platter and arrange burrrata cheese on top. Enjoy!

SALAD:
1 (6-ounce) bag fresh baby arugula
1/2 cup blueberries
1/2 cup raspberries
1/2 cup sliced strawberries
4 ounces crumbled goat cheese
3/4 cup honey-roasted pecans or walnuts
HONEY VINAIGRETTE:
1/4 cup fresh orange juice
2 teaspoons raspberry vinegar
6 tablespoons extra virgin olive oil
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 teaspoon ground black pepper
1/4 teaspoon salt
Zest of 1 orange

Steps:

  • To prepare the dressing, fully combine all the ingredients in a blender or food processor. Refrigerate until needed. To make the salad, place the arugula and berries into a large bowl. Just before serving, pour the desired amount of dressing over the salad and lightly toss to coat. Top with the crumbled goat cheese and roasted nuts. Serve.

1 pint strawberries, hulled and cut in half
1 pint blueberries
1 pint raspberries
1 tablespoon good balsamic vinegar
1/4 cup sugar
Fresh mint, for garnish

Steps:

  • Place 6 glasses in the refrigerator.
  • In a large bowl, combine the berries, vinegar and sugar. Stir gently. Cover securely with plastic wrap and refrigerate for 30 minutes to 1 hour.
  • Spoon the berries into the chilled glasses. Garnish with a sprig of fresh mint.
