FRESH BERRY CARDAMOM CREAM PIE

i was able to get fresh berries at a great price today, and had the day off to experiment- as you can see by the photo, this is incredible! you can use any liquer you want, or leave it out. you can also use any fruits you want, inclusing kiwi.. the fruit measurements are aproximate, as i just filled in the spaces.

1 pie crust, baked (your own recipe or frozen, etc)
1/2 cup sliced almonds, toasted
2/3 cup sugar
2 tablespoons flour
2 tablespoons arrowroot or 2 tablespoons cornstarch
1 pinch salt
2 eggs
2 cups whole milk or 2 cups cream
2 teaspoons vanilla extract
2 tablespoons butter
1/2 teaspoon cardamom
1 tablespoon triple sec (optional)
1/4 cup fresh strawberries, sliced
1/4 cup fresh blackberries
1/4 cup fresh blueberries
1/2 cup fresh raspberry
1/4 cup apricot preserves
1 tablespoon triple sec

Steps:

  • bake pie crust, cool.
  • add sugar, flour, arrowroot and salt to a saucepan.
  • whisk together eggs and milk, add to sugar mixture, stirring over medium heat.
  • cook stirring with a wooden spoon until thickened and bubbly.
  • remove from heat.
  • stir in vanilla and butter.
  • stir in cardamom and triple sec (if using).
  • let mixture cool for 10 minutes.
  • add almonds to pie crust.
  • top with cardamom cream filling.
  • top with fresh fruit.
  • microwave preserves and triple sec for 40 seconds, or until heated.
  • stir well.
  • brush onto pie as a glaze.
  • cover with plastic wrap and refrigerate until serving time.

1 pint heavy whipping cream
1 cup granulated sugar
2 teaspoons salt
2 teaspoons vanilla extract
1/2 teaspoon almond extract, if desired
1 cup fresh strawberries, sliced
1/2 cup fresh blueberries

Steps:

  • In large bowl whip cream cheese until smooth.
  • Slowly add whipping cream just until blended.
  • Add all other ingredients and whip on low speed until consistency is thick and mixture holds its form.
  • Pour into prepared pie shell and top with blueberries & strawberries or any other favorite berry.

1 (16 ounce) package fresh strawberries, hulled and large berries cut in half
1 pint fresh blueberries
1 (6 ounce) container fresh raspberries
1 (6 ounce) container fresh blackberries
1 cup water
½ cup white sugar
3 tablespoons cornstarch
¼ cup water
1 (9 inch) prepared shortbread pie crust (such as Keebler®)

Steps:

  • Thoroughly combine strawberries, blueberries, raspberries, and blackberries in a bowl. Scoop out 3/4 cup of mixed berries and place into a saucepan with 1 cup water and sugar; set remaining berries aside. Bring the mixture to a boil and reduce heat to medium-low.
  • Whisk cornstarch and 1/4 cup water in a bowl until smooth and stir the cornstarch mixture into the hot fruit syrup; stir until the mixture thickens, about 2 minutes. Let the mixture cool completely, stirring occasionally, about 20 minutes.
  • Pour the thickened berry mixture into fresh berries until thoroughly combined; pour berries and sauce into shortbread pie crust. Place in refrigerator until chilled, at least 1 hour.

3 cups blueberries (or any berries of your choice) or 3 cups raspberries (or any berries of your choice)
1 (9 inch) pie crusts
1 cup sugar
1/3 cup all-purpose flour
1/8 teaspoon salt
2 eggs, beaten
1/2 cup sour cream
1/2 cup sugar
1/2 cup all-purpose flour
1/4 cup butter

Steps:

  • Preheat oven to 350 degrees.
  • Place berries in unbaked pie crust; set aside.
  • Combine sugar, flour and salt.
  • In a separate bowl, beat eggs and sour cream together; add to flour mixture. Spoon over berries.
  • Combine all of the topping ingredients until crumbly.
  • Sprinkle topping over pie and bake for 50 to 55 minutes.

FILLING:
1/2 cup sugar
3 tablespoons cornstarch
3 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups 2% milk
1 large egg, lightly beaten
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract, optional
1/2 cup heavy whipping cream
1 pastry shell (9 inches), baked
GLAZE:
1/2 cup crushed strawberries
1/2 cup water
1/4 cup sugar
2 teaspoons cornstarch
1-1/2 cups quartered strawberries
1-1/2 cups fresh raspberries

Steps:

  • In a large saucepan, combine the sugar, cornstarch, flour and salt; gradually stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. , Remove from the heat and stir a small amount of hot filling into egg; return all to the saucepan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; gently stir in vanilla and almond extract if desired. Cool to room temperature. , In a small bowl, beat cream until stiff peaks form; fold into filling. Pour into pastry shell. Chill for at least 2 hours., About 2 hours before serving, prepare glaze. In a large saucepan, combine crushed strawberries and water; cook for 2 minutes. Combine sugar and cornstarch; gradually add to the pan. Cook and stir until thickened and clear; strain. Cool for 20 minutes. , Meanwhile, arrange quartered strawberries and raspberries over filling; pour glaze evenly over berries. Refrigerate for 1 hour.
